For anyone unfamiliar, this is pork belly rolled into a log and roasted until the skin becomes shatteringly crisp and bubbly while the meat stays incredibly tender and juicy. The is seasoned with salt, pepper, garlic, and aromatic herbs. The crackling skin was the real prize. It was at its best right when a fresh plate came out of the kitchen.
