    We happened to be in Frederick doing some shopping and took some time to check out Uncle Cheng's Noodles. Using the ordering kiosk at the front was simple. They had some. Ice lo-fi music playing in the background. The staff there got a table ready for us and served up a carafe of cucumber infused water which was perfect for such a warm day. As a starter we tried the scallion pancake. The pancake was so light and crispy with each one maintaining the texture consistently allowing me to enjoy each crispy bite accompanied by the dipping sauce. Next was the steamed pork bun which were served fresh in the steamer tray. The bao was soft and the filling was savory making for a good combination. Next were the soup dumplings combo which allowed me to sample the whole range of dumplings on offer. The soup dumplings are good enough to scratch that itch for xiao long bao, it contained the piping hot broth which was delicious. The wrapper is a little bit thicker than what I'm used to but it's still delicious. Finally the star of the show for me was the stir-fried beef noodles. You could taste the wok hei right from the start with its smoky, charred, caramelized flavor along with the sauce that enrobed the noodles perfectly. If you have a moment as you're eating your meal, watch the kitchen as they expertly prepare the meals. I enjoyed watching them pull the noodles and then prepare the soups. Next time I'm back I'll be trying their hand-cut noodle soup and maybe some of the other dumplings I spied on their menu. If you're in the area, this is a must-go-to place for such delicious food.

    Late Review: Family and I went for lunch at Uncle Cheng's couple weeks ago. We got seated right away which is surprising since it was crazy busy few days before. They are a great addition to town though a little ways for us since we live on the other side of town. Plenty of parking and easy access. Space is a little small but clean. Owner is super friendly, service was very good, and fast. Now for the food - we started with a super crispy scallion pancake - YUM. We also ordered spicy wonton and cucumber salad. Both were good but that pancake was the star as an appetizer. For the mains, hubs got the stir fry beef combo knife cut noodles, kiddo had the beef brisket soup with hand pulled noodles, and I had the stir fried shrimp hand pulled. Everything was so good, fresh, great taste, and love the chew of the noodles. We will have to come back again and try the other noodles. Thank you for coming to Frederick.

    Very clean atmosphere. Self serve. Order in the back or at the kiosk near the door. We ordered vegetable & tofu sliced noodles, pork soup dumplings, duck hand pulled noodles and Thai tea. All were delicious. Quite big portions! The duck might be on the salty side. And if you order apps, you might want to tell them to wait on the entree. Or else, it is whatever is cooked fast comes out first. I definitely will come back for the other dishes.

Described as one-pepper spicy on the menu, it had less heat than the Kung Pao, but the curry sauce had layers of flavor. It featured shrimp, scallops, and calmari plus a wonderful mix of peppers, onions, and other veg. All were nicely (crisply) cooked, even taking into account the Door Dash delivery time. I really enjoyed it. Next time I may ask for a bit more heat, but as it is, I hoovered up every morsel. Try it - you'll like it!
