So, we planned a secular wedding on a Friday evening. Three days before the wedding, Great Aunt Ester found out that we were not having any religious elements to our wedding ceremony and were not even doing Kiddush and Hamotzi at our Friday night wedding. She was scandalized and my mom spent the whole day fielding disapproving calls from my relatives. Two days before the wedding, my mom called and said that she understood why we don't want to have a religious ceremony, but could we at least observe Shabbat. I relented, which meant that I had to figure out how to come up with enough challah for 130 wedding guests in two days. I called Vulcan Mine Bakery. The owner, Gregor, was super amazing in every way. He not only made the 20lbs of challah that we needed with absolutely no notice, but he was able to use my grandmother's fancy challah recipe that she used to make for special occasions. Gregor even volunteered to deliver the challah to our venue on the day of the wedding. Vulcan Mine Bakery saved the day. Also, their herb boule is amazing.

I tried Mexican chocolate, red velvet, peanut butter chocolate chip, and Funfetti. The cookies are baked fresh, and it was about a 10 minute wait. The wait was so worth it! The cookies come out piping hot. They were crispy on the outside and deliciously chewy in the middle, and each cookie had a distinct flavor. My favorite was the Mexican chocolate chip, which was cinnamon sugar, dark chocolate chunks, and a little bit of spicy cayenne. My second favorite was the peanut butter cookie with peanut butter and chocolate chips- just a really good peanut butter cookie! The Red Velvet and the Funfetti were a tie for me. In addition to made to order cookies, Boulder Bakes has cupcakes, cake slices, ice cream, coffee, cookies cakes, and tomato soup/grilled cheese. I'm happy to say Boulder Baked is open until 9:30 Sunday-Wednesday and until 10 Thursday-Saturday making it a great spot to grab a treat late at night. They specialize in offering gluten-free and vegan cakes and cookies. The interior is a little small and there's not much seating inside so ambience is why I would give a 4/5 star rating- otherwise the treats are delicious. I know they had a vegetarian curry bun when I was there too but I have yet to try it. I also tried the passionfruit mochi donut and thought it was the best mochi donut I have had. The fruit flavor was perfectly sweet and tart and the mochi was chewy without being unyielding. I have not gone back to try their drinks but I know they have a menu for coffees and teas. They also have a punch card system so make sure you save that when you go and make purchases. It is a small location and they might be a bit busy but they always are going fast. Not only were they able to do the half dozen, but they also moved up the order a few days early because I couldn't wait. The staff went above and beyond with customer service and were so friendly.
