    If you've been following my reviews, you'll see I'm on a massive bbq kick this month. Before starting a keto diet, I was pretty indifferent to meat. I ate it as protein before getting to the star of the show - the sides. However, I'm finding a newfound appreciation for meat. We keep going back to True Texas bbq for casual meals out, because they simply give you the best bang for the buck, and it's actually better than quite a few well-known bbq establishments. Last night, I had the juiciest turkey I've ever tasted. I think I got some slices from near the end, that contributed to that, because as I worked my way inwards through the slices, they returned to normal juiciness. However, normal for True Texas bbq is still very moist. It was better than the last 3 or 4 bbq turkeys I've tried. I usually order a quarter pound of turkey, but I was hungry and ordered a half pound. I'm glad I did! A pound of meat split between the two of us was the right amount, because we were quite hungry. My husband ordered the lean brisket, which we kind of regretted. Fatty brisket is too fatty for us, but we realized we could have ordered a quarter pound of lean and a quarter pound of fatty, and had the perfect balance. Next time! And, there will be a next time! My only complaint was we specified "no bread" and they gave us bread anyways. I hate to see food wasted!

    I love this place! Affordable yummy bbq and conveniently located inside H-E-B or drive thru. I highly recommend the baked potato with chopped beef it's so delicious. Very good value and don't be scared even the spicy bbq sauce is not spicy,

    This is what you get for $13?  The brisket was dry.  The coleslaw was gross.  Ate half the brisket and threw out the rest.

    Quality and quantity has gone down hill. This is what passes for a $13+ 1 meat plate now? The meat was dry. The coleslaw tasted off and wasn't edible. I ate half the brisket and tossed the rest of the "meal" in the garbage. Not sure what changed, but whatever it was, it wasn't for the better.

    My favorite bbq. Both ribs and brisket great. Chicken and turkey, too. Moist and smokey. It is too slow but the food is on point. Respect.

The server recommended the serrano pepper spinach (like a creamed spinach) and onion rings, and I took those recs. The best of the three meats was the turkey. Not a good sign. It was moist and tender, though not particularly smokey. Even so, I enjoyed it more than the brisket and sausage, which I would have guessed the reverse when ordering. The brisket was on the dry side and kind of bland, it did not smack of being freshly carved. The Stubbs BBQ sauce helped me eat some of it... now I see why they are famous for their sauce. I had a couple bites of the sausage and pushed it aside, I didn't enjoy their recipe on that at all. It was cooked seemingly well, but the blend of spices and meat they use wasn't pleasant to me. The sides, the onion rings were very crispy which I like, but again... something in the batter. Maybe even the oil they were cooked in, I did not enjoy as much. The spinach was actually quite enjoyable, maybe even a little rich. I think if it were warmer, if might help milden out some of that. It was really thick. The cornbread wasn't worth the add-on. No sweetness or anything to make it memorable. Vessel for butter. The portion was massive, and I had leftover food, but did not take it... and that would have been the case even if I wasn't headed to the airport. I wouldn't recommend this spot.

I also tried the chopped brisket (brisket and burnt ends sitting in a soup of BBQ sauce). That was also delicious (and more reasonably priced), but I could have done with slightly less sauce. It really was like a soup and while the sauce was tasty, there was too much of it. I went later in the afternoon (around 2/2:30pm) and got their last two beef ribs so going earlier is better. You order at the open kitchen and then pay at the counter when your food is ready. The staff is friendly and knowledgeable, you can take your food and sit at any of their tables of which they have many (this place is pretty big). The hue on the chicken was beautiful --- it's not just a crust, that's some batter on Gus's chicken! The okra and the collards passed the test (DELICIOUS), and I was hoping for the chicken to be as "world famous" as I've heard. THE CHICKEN DID NOT DISAPPOINT. The crunch was undeniable, the slight heat from the marinade was present, and overall flavor was simply...pleasurable. My rule for chicken? Always get the dark meat. I took my souvenir cup with me, but I can finally say I tried Gus's World Famous Fried Chicken --- and it is world famous for good reason!
