What arrived at the table looked more like a soupy, broken sauce with noodles swimming underneath and a barely cooked egg collapsing into the bowl than anything resembling Carbonara. The photo says it all: a runny, unsettled mixture that never came together as a cohesive dish. To their credit, the manager removed it from the bill and apologized, explaining that a new chef is still learning the recipes and that the dish should never have been served that way. The issue, of course, is that it was served that way. Cozy's seems to be experimenting with "deconstructed" presentations, but it isn't working. The shaved lettuce Caesar came topped with a deviled egg, and the Carbonara featured that nearly raw egg sitting on top of a watery sauce. Sometimes sticking with what you know is the better choice. Despite this visit, we'll likely return--Cozy's can be charming, and when they get it right, the food can be quite good. But consistency remains their biggest challenge.
