I really want to like this place and wish I could rate it better, but I think the owners/managers need honest feedback. This review is for them. My hope is that they consider some of the issues and suggestions and make some changes so I can revise the current 2-star rating. As someone who ran their own coffee-roasting business for several years before moving to Texas, I've seen a lot of what works and what doesn't in coffee shops and businesses in general. First, the good stuff. You've got a great location in old town spring, with very little competition within a 2-3 mile radius. You also have a good building - a two story converted house with ample room on the first floor, with a lot of rustic/industrial character. The staff is friendly and the shop is clean. The investment in a beer/wine license was wise, and sets you up as a northern suburb alternative to Agora. Making the decision to stay open late of Friday/Saturday - which fits with the coffee/wine bar motif. However, Trilogy Brew is making a number of mistakes common to new coffee house owners. First and probably most severe of which is that of identity/experience. As customers we have numerous places to go for coffee. What causes people to return is the EXPERIENCE. And the experience you're creating is akin to a personality disorder. Sorry, that sounds a lot harsher than I'd like, but there's no other way to put it. Pulling into the parking lot for the first time and walking to the door, one is presented with several signs and chalk boards advertising multiple businesses - recording/music studio upstairs along with microblading, tattoos, and piercings. Totally confusing. And having the piercing business use the coffee shop as their reception area only makes it worse. Still on the subject of identity/experience is the mash-up of live music venue (two stage consumes a full 1/3rd of the lounge), coffee shop, and country general store (vi sa vi the coolers of sodas and arcade games). PICK ONE BUSINESS and go with it - a coffee/wine house, a music venue or a general store- and get rid of (or at least HIDE) everything else. My personal preference would be you run with the coffee/wine house thing, cause I think ya'll could crush it. Get rid of the stages and add more seating. The seating in the lounge is another mixed bag. You're heading in the right direction with the couches and piano, and the checkers table/bar seating, but folding chairs.... seriously? They aren't even comfortable. And what's with the fans blowing cold air on HOT coffee drinks? Onto the menu. Decent coffee - but it could be a lot better. You are competing with places like starbucks, barbarossa, and common bond. Your coffee should be great. Work with your roaster to step up your game or get a new roaster - houston is FULL of skilled roasters. The large TV behind your counter is great, but it only lists your beers, which unless you're focusing on morning alcoholics, is useless. Switch it to COFFEE/FOOD in the AM, and switch to include alcohol later in the day. And for the love of all that's good, find a good baker and get a pastry case. Tossing out an assortment of shipley's donuts, prewrapped cookies, and a bagel or two won't cut it. If you can't afford to add pastry's the right way, wait until you can. You're not doing yourselves any favors otherwise. And regarding the hours.... You need to extend your hours during the week. Maybe not as late as the weekend, but having a beer/wine bar close at 5 makes zero sense. To sum it up - focus on the experience you want people to have - on the experience you would want to have. Go sit in common bond by 99/45. Visit barbarossa on 2920 and agora on westheimer.... Antidote. Catalina. Boomtown, Siphon. They all present unique experiences and identities. Again, I want this place to succeed. I love small businesses and entrepreneurs. I really hope this place develops into its potential. read more

Grabbed a quick iced vanilla latte while in the area from here. The inside is really cool and has a neat vibe to it. My only complaint is it seems a little overpriced. I paid $5 for a pretty small size compared to what I can get for $5 at other places. The drink itself was pretty good and the girl working was very friendly. read more

Went here for coffee on a beautiful evening and ordered a simple coffee to go. Waited 25 mins for the drip coffee to be done and it was cold. Asked for cream and sugar and was seemingly admonished. Did not find what I was expecting. Looks like a college flop house for people with no direction. Seemed like the gal behind the bar was high. She had absolutely no personality. Just loud and dirty. Not impressed at all.. sad waste of a great old building in Old Town Spring. Friend I went with said it reminded him of his days living in his dads basement while he struggled through school. Just gross and trashy and the plastic signs outside are a mess. No appreciation for the history of Old Town Spring or the history of the building. OTS needs to have stricter guidelines for young business people just trying to make a buck off of alcohol. Sad. read more

Really want to like this place but seems like every time I come, something is off. First time we came for lunch, after checking out the menu online and looking forward to our choices, they weren't serving food. I can't remember what the reason was, it was about two months ago. I figured since maybe they were new? Things weren't ready? But I noticed the name change back in April before we moved into the area. Then just recently, we thought we'd make it in time for happy hour (which we did) but there wasn't anyone over 21 to serve us. My review seems to continue to disappear. I have recently gotten coffee from the HEB location and neither me or my partner could finish the drinks. Very very burnt taste. It's a very slow shop compared to other coffee shops in a store and when we entered the employee was sitting at a customer table on her phone waiting for people to come in. A couple years back I moved into the area from Los Angeles and I was on the hunt for a good local coffee shop (my writing environ of choice) when I stumbled onto this place. It was love at first sip. Aesthetics are far from cookie cutter, all warm and funky and laid back. There's a sticker wall, a dart board, plenty of board games, and an arcade unit. In regards to their menu, I started out with their Nutella frappe but have switched over to the Almond Joy frappe and have been unable to depart from that option since. As other reviewers have mentioned, their offerings may be a little pricey, but I consider it worthwhile to come for a few hours, suck down a frappe, and write my next chapter. If you're looking for something not-Starbucks-again with a welcoming vibe, Old Town Spring's Trilogy Brew is just the ticket. I'll be in the corner, clacking away on a laptop. Went for Geeks That Drink trivia. Crazy to host this type of event when you have 6 selections of canned beer with 2 of them being domesticated beer. Website published a food menu so planned on ordering food as well, yet no food. This place is a coffee house not craft beer place. Trivia was good. Food and alcohol selection was bad.
