    Dark & Stormy

Stopped by for an afternoon pick me up and was curious about the dark & stormy, as a fan of the cocktail version. The place was less than half full of guests but I unfortunately waited 25 minutes for the drink, with only two guests who ordered regular lattes ahead of me. When I got the drink, it was refreshing and cold brew-forward, but I didn't get much ginger beer even after shaking up the drink. It did give me the pick me up I was looking for and I'm willing to try another drink on their menu again, since I clearly missed something the other rave reviews mentioned!

Instantly fell in love with this coffee shop, the flavored coffees are insanely delectable for example the cold brew is a vanilla hazelnut graham cracker & cinnamon notes on nitro, r u kidding me?! So good. And they have a whiskey coffee bourbon barrel aged 45 days, must try next! For sure would drive far to come here! Love that they have nootropic drinks even THC ones, great idea get nervous & anxious on caffeine then just take a nootropic drink to mellow u out man...

I used to live in the area and came to Trilogy Brew often, it was always one of my favorite spots. I'm so happy I got to stop by again while visiting. The atmosphere is still great, the coffee just as good as I remember, and the staff as friendly as ever! Usual go to is the Morpheus, but today since we were blessed by a seasonal menu I got the Cookie Butter Latte! 100/10!! Please make this your go to!

Neon signs. Table games. Beer on tap. Coffee (espresso based drinks). CBD. Old school piano. Giant claw game. Pastries. Plenty of stickers. Spray paint decor. Tufted sofas and redbull in a can with Mexican street corn Cheetos. What in the name of old town spring did I stumble upon?! Trilogy is certainly a hodgepodge of ideas, themes, and genres- and I ain't mad at it! If I'm honest, I've avoided stopping in in the past, mistakenly pinning the spot as a "bar", which is somewhat fitting, but last week, in need of a hefty caffeine kick, I came upon recommendation after visiting the museum and I was not disappointed. The single barista worked the room like magic, tending to everyone, answering questions, checking in etc. in addition to beer on tap, mocktails, and traditional espresso based brews, they offer a variety of espresso based creations, and although I forgot to ask about alternative milk options, my drink (a modified Cortado) was fabulous, flavorful, and smooth. For a first timer, this was s five star experience. I'll be back for open mic night!

I came here on Wednesday 3/8/23 and would definitely recommend this coffee shop. I'm fairly new to the area and had been looking for a coffee shop that resembles some back in my hometown in Austin & ran across this gem downtown Spring! So happy after finding Triology Brew. I came pretty early and was the only person there for a while, but as the day went on, you can tell they have a lot of regulars that come here. The service was great and the barista I had was Nate - he was super cool & informed me about "Workday Wednesdays" (I think is what he said) but it's the days where you get free coffee refills if working hours on end at the shop. I also ordered a caramel vanilla latte and a banana nut muffin (warmed) - 10/10. The ambiance has a cool vibe, spacious, a stage (they do Open Mic Night), a piano, old school arcade machine games, light music & a fairly quiet place to get work done or meet up over coffee. They also have some patio seating as well outside. This will definitely be my new coffee shop that I regularly visit.

    Dirty chai

Pretty cool interior in this coffee shop. Cute chairs, couches and games to play with while waiting. I should have stuck with what I normally know that I like, but I tried something different and did not like it at all. I tried a dirty chai and I did not like it because it had a strong card strong cardamom flavor and I went through a period in my life where I would put cardamom in everything and now I cannot stand it- but that's a story for another day. So I did not like the drink that I got and I kind of felt embarrassed to ask for a different one for a different one which is not common for me, but I feel like I couldn't have at that point for some reason. Would I go here again? Yes, but I'll stick with what I know. Most drinks were around $6 to $7. I'm not docking off stars because i didn't like the drink, that's not on them.

This place has a cool rugged ambiance! The staff was lovely. The coffee was ok, it had a little too much flavoring/sweetner.

That's right. Adding fried cheese to the menu is important to me. Because beer + fried cheese = happiness. It is known. Forgot what apps we DID enjoy, but they were good. Even if they weren't fried cheese. Love good stout and porter selection, and they have it! Love to see a bar that hasn't turned all of their craft taps to IPA. Good to have variety, folks. Especially in winter. It WOULD be amazing to have dark beers served just a *wee bit* closer to cellar temp... not true cellar (too much for Americans), but at least in the 40's F. And let me tell you--that shift made all the difference. It gave us the relaxed, low-pressure vibe we needed to actually talk and enjoy each other's company without feeling rushed or crowded. We ordered a round of drinks and a few appetizers: Three pepper queso (definitely a win) Cheeseburger egg rolls (yes... and yes again) Crab egg rolls (...we'll just say these didn't make the highlight reel) Everything hit except the crab egg rolls--they just weren't giving what they were supposed to give. What I really liked about this spot is that it's not just a sit-and-eat place--it's an experience. They've got pool tables, basketball hoop games, cornhole, and even karaoke studios. We didn't tap into that this time, but trust--we already said next visit is game night. There's also outdoor seating if you want to switch up the vibe. Overall, this was a great place to close out a first date. Good energy, plenty to do, and enough flexibility to make the night what you want it to be.
