I'd been in before for a beer and loved it inside (good beer selection too!), and this time we had coffee and a little breakfast snack. The waffles are corn dog style on a stick! So unique and fun. It was delicious. The coffee... oh my. Under the flavour options I saw both lavender and rose, so I asked the barista if he could do both. He did. It was one of the best coffees I've ever had! Next time I'm going for the big size. It got very busy after we ordered and even though we had a bit of a wait for our drinks and food, the barista was such an apologetic sweetheart. He was the only one behind the bar and was kicking ass. He even brought us our stuff directly to our table when it was ready. Highly recommend it here for a drink of any kind on the menu! read more

The place was less than half full of guests but I unfortunately waited 25 minutes for the drink, with only two guests who ordered regular lattes ahead of me. When I got the drink, it was refreshing and cold brew-forward, but I didn't get much ginger beer even after shaking up the drink. Pretty cool place, cool atmosphere and good service. Mocha latte was sub-par especially for the money. Good quality machine, good quality beans, decent execution (they need to whisk their syrups to make it better) and pretty generic syrup. I needed a place to hang out for a while and I got lucky and found this coffee shop/brewery/pub/cafe. This is the sort of place where you become a regular patron because the coffee is really really good. I had a latte made with soy and it was divine. We stopped by after my daughter had her ears pierced for a coffee to celebrate. She ordered the Chaibacca and I got the Thanos. The cashier was super nice and was happy to help with suggestions. The drinks were good and the coffee was a little stronger than I'm used to because it perked me right up. We stayed for a while and played a few of the many games they have for customers to use. We had a really great time playing a few card games. The place had several customers and was busy, but it wasn't too loud, but felt really cozy with all the chatting and laughing. Trilogy is certainly a hodgepodge of ideas, themes, and genres- and I ain't mad at it! If I'm honest, I've avoided stopping in in the past, mistakenly pinning the spot as a "bar", which is somewhat fitting, but last week, in need of a hefty caffeine kick, I came upon recommendation after visiting the museum and I was not disappointed. The single barista worked the room like magic, tending to everyone, answering questions, checking in etc. in addition to beer on tap, mocktails, and traditional espresso based brews, they offer a variety of espresso based creations, and although I forgot to ask about alternative milk options, my drink (a modified Cortado) was fabulous, flavorful, and smooth. I came here on Wednesday 3/8/23 and would definitely recommend this coffee shop. I'm fairly new to the area and had been looking for a coffee shop that resembles some back in my hometown in Austin & ran across this gem downtown Spring! So happy after finding Triology Brew. I came pretty early and was the only person there for a while, but as the day went on, you can tell they have a lot of regulars that come here. The service was great and the barista I had was Nate - he was super cool & informed me about "Workday Wednesdays" (I think is what he said) but it's the days where you get free coffee refills if working hours on end at the shop. I also ordered a caramel vanilla latte and a banana nut muffin (warmed) - 10/10. The ambiance has a cool vibe, spacious, a stage (they do Open Mic Night), a piano, old school arcade machine games, light music & a fairly quiet place to get work done or meet up over coffee. They also have some patio seating as well outside. This will definitely be my new coffee shop that I regularly visit. read more

I should have stuck with what I normally know that I like, but I tried something different and did not like it at all. I tried a dirty chai and I did not like it because it had a strong card strong cardamom flavor and I went through a period in my life where I would put cardamom in everything and now I cannot stand it- but that's a story for another day. So I did not like the drink that I got and I kind of felt embarrassed to ask for a different one for a different one which is not common for me, but I feel like I couldn't have at that point for some reason. Trilogy Brew is a quiet little coffee shop in Spring, Texas. When I did a search for coffee place in Spring it showed up. The place looks cozy on the inside. When I went to order the server was overwhelmed with multiple orders. I went to order a flat white and she said "what's that?". After a quick tutorial she made it and it was actually decent given she never heard of it. The woman working was doing her best given she was the only one there but didn't seem experienced. The flat white was overall decent but nothing amazing. I think I would prefer Starbucks over this place. read more

I initially heard of this brewery while watching YouTube videos about places to visit around Houston and decided to stop in while exploring. It's a historic building that has been redecorated to be a hip coffee shop, brewery, and CBD shop. The seating is small and intimate and it's a stage for live music but is definitely the kind of place you'd study and drink coffee at all day with the comfortable seating and accessible power outlets. It was initially quiet when I arrived, which was nice for it being Sunday and the day of the Super Bowl. I came in a group of five and we ordered four of the blended drinks and one iced latte. Unfortunately, two drinks were finished after about five minutes of waiting, then another party of multiple people arrived and it was over 25 minutes until we received the other three drinks. We watched the party that arrived after us all receive their drinks while waiting. We had been there so long that the dining area had become busier and there was a long line. We were sitting at a table near the counter, so we had view of the staff/cashier. After 20 minutes, we asked where the three remaining drinks were and told that they were working on them. Two more drinks were brought out and we were still missing one. After another 5-10 minutes, I decided to go up to the counter and ask where our final drink was since my group wanted to visit the other tourist shops. I was told that there was only a single barista, they were short staffed, and that if I would like to apply, they are hiring. Stopped by here while doing some shopping in Old Town Spring. 21$ for 2 coffees and a small kids got chocolate. I don't mind paying 7-8$ for a coffee, but it was the tiniest little cup of coffee, maybe 8 ounces. I fully expected a much larger cup for that price. Absolutely not worth the price.
