    Three Sons Pizza is a New Haven-style pizza pop-up that opened at the Old Heidelberg cocktail bar in New Haven, Connecticut in May 2024. It was founded by pizzaiolo Joe Pangia. Although he is a long-time employee for Travelers Insurance, Pangia is also an avid home cook. An eclectic chef, he enjoys cooking everything from pizza to barbecue to Israeli couscous salad with lamb kebabs. Beginning in 2022, he began experimenting heavily with homemade pizzas that he cooked with his home oven and baking steel products. For his new home pizza kitchen operation, he came up with the name "Three Sons Pizza" in reference to the fact that he has three sons. By 2024, he had partnered with Old Heidelberg: one of the oldest bars in New Haven that also happens to be located on the basement level of the New Haven Graduate Hotel. Throughout the summer of 2024, you can taste Pangia's delicious pizza pies every Saturday at 7PM at Old Heidelberg. I recently was invited to an exclusive influencer tasting event at Old Heidelberg to sample some Three Sons Pizza. I have been following Pangia's culinary experiments on Instagram for some time, and I was very excited to finally sample his delicious pies. I've visited Old Heidelberg before and they have excellent cocktails. They also serve light food dishes such as Bavarian pretzels, bratwurst on a roll, and plant-based chili. The thought of bringing New Haven-style pizza here sounded amazing to me. I spoke to Pangia for a little while and he explained to me that he had to practice with Old Heidelberg's oven for a bit before starting the pop-up because their oven distributed heat differently from his home oven. It's also worth mentioning that he's a really friendly guy. For the group, he prepared an eclectic pizza menu that featured "Tomato" (seasoned tomatoes, pecorino romano, basil), "Cheese" (seasoned tomatoes, pecorino romano, whole milk mozzarella, basil), "Pepperoni", "Pepperoni, Jalapeño, Mike's Hot Honey", "Cremini & Shallot", "Fratelli's Cheese & Parsley Sausage", and "White Kale" (whole milk mozzarella, kale, garlic, Calabrian chili, lemon, olive oil, pecorino romano). All of the pies were so flavorful and delicious, but it was the latter pie that really impressed me. It's not a topping combination that you see often on pizza. Overall I had an excellent time tasting Pangia's delicious pies. I'm not sure what will happen once the summer ends, but I'm optimistic that big things are in store for Three Sons Pizza!

    Seriously, one of New Haven's best pies! The crust, sauce, cheese, and toppings are all perfection. You're going to want to order a couple to be sure you have plenty to bring home!

LOCATION: This Popup Bagels is located in a shopping plaza in suburban Newtown, Connecticut. CONCEPT: Compared to other bagel shops, Popup Bagels a limited number of bagel flavors (plain, salt, everything, poppy, sesame) and tubs of weekly-changing flavors of butter and cream cheese (such as martini cream cheese and lemon butter) in addition to those regularly available (such as scallion cream cheese). Sandwiches are not prepared for customers -- they are encouraged to "grip, rip, and dip" bagels into their chosen Schmear. ATMOSPHERE: The interior is crisply designed with a modern feel. SERVICE: From an investment perspective, the concept is brilliantly efficient. Limited hours (7-noon Wednesday and Thursday, 7-1 Friday, Saturday, and Sunday), limited choices, no sandwich/beverage prep, and online ordering encouraged, make the service efficient from both effort and material perspective. FOOD: Compared to other bagel shops the bagels are attractively packaged with open totes, inviting the aroma of the bagels to greet the customer. The exterior is covered by the topping, rather than sprinkled. The bagel is crisp and chewy on the exterior, but fluffy in the interior. In addition, tubs of smoked fish-based spreads are available. TIPS: The chain is expanding into Southern California. On Thursdays Schmear flavors change. The flavors are announced on Popup Bagels website. Although pre-orders are welcomed to ensure your pick, the online system does demand a minimum of a dozen are purchased. Ordering in person allows a three bagel minimum. The company recommends running water over the bagels, and placing in a preheated 350 degree oven for six minutes to crisp the exterior. Note the shop closes at noon on weekdays, 1 o'clock on weekends.

So if you are just stopping in on your way to work it should be a pass. The bagels are also super expensive and incredibly soft, does not appear to have much crust. And I would know because I have 3 bagels all to myself to critique . Super disappointed.

One of the 23 vendors was the Traveling Sisters Roasters, and we stopped by to chit-chat and learn a little about the business. They are a Connecticut licensed cottage business out of Colchester, and they roast and sell a few custom blends in bags or K-Cup style Pods. Their coffees are available at Farmer's Markets and special events around Connecticut, and on their website. Connecticut customers can get free delivery. Their seven blends include beans from Peru, Columbia, Brazil, Sumatra, Guatemala, Java Indonesia, Mexico, Ethiopia, the Dominican Republic, and Costa Rica, so there is a big variety of undertones for your sipping pleasure. The blends also vary in acidity for those with a sensitivity to that. I love dark coffee so there was no way I was going home empty handed. K-Cup pods were $2 each, so I picked up one of three different blends. Here are their web descriptions: Daring Flight - Dark Roast "Featuring dark roasted coffees from Mexico, Guatemala, and Ethiopia. Blended together they make a bold full-bodied cup of coffee with chocolate and citric notes and just a hint of spice. The perfect coffee for those who like a dark rich cup of coffee to start their day." It was a very good cup of coffee, smooth, no aftertaste and no bitterness. Soby's Journey. Dark Roast "Featuring the dark roasted coffees of the Dominican Republic, Guatemala and Costa Rica. A smooth creamy blend with undertones of vanilla, chocolate and orange with low acidity." I definitely picked up a vanilla undertone on the Soby, but the overall flavor was lighter than I expected for a dark coffee. Global Adventure - Dark Roast "Featuring dark roasted coffees of Ethiopia and Colombia. A smooth blend with undertones of sweet chocolate and red fruit with some sweet nuttiness with low acidity." I knew this was going to be my favorite before I even had a sip because the brewed aroma was fantastic - a deep dark flavor profile. Traveling Sisters also sell medium and espresso roasts, and a decaf. Go check them out and see for yourself.
