The classics like the chocolate croissant, chocolate chip cookie, chocolate cake, and cinnamon roll are excellent, but by far my favorite has been the breakfast bread - which is a molasses bran bread with a citrus zest whip. It's kinda weird how there's granules of sugar in the whip, but I really love eating the bread part. The soft serve flavors are creamy and love the interesting toppings too. Such a wonderful spot with an amazing mission too. We stopped at 10:30 am on a sleepy Saturday (construction havoc on the road) and it was a quick stop. We tried three croissants---ham and cheese, mushroom and cheese, and cardamom. I've never met a cardamom croissant that I didn't like but this had to be one of the best I've had. In the words of my son, the mushroom one was mushroomy and creamy goodness. My husband thought it was one of his best croissants too. This is my first time buying pastries from them and was pretty excited as I love their soft serve. The first time I went, everything was basically sold out, so I decided to try again but earlier. Everything was still available when I arrived :) I got the following: Ham and cheese croissant 5/5 this was soooooo good, perfection Focaccia 3.5/5 --- a little too tough for me and it was bland considering the toppings it had Cream puff 5/5 --- super yummy, crunchy and flavorful Cinnamon roll 4.5/5 -- love the frosting, texture was good. They just keep spoiling us more and more as time passes. We can order pastries ahead (which is sometimes my only opportunity to get pastries due to my work schedule) from the bakery of my dreams now! Stopped by around 8:30am when they opened. They have a walk up counter only, there is no seating at all. I ordered a cinnamon roll. It was easily one of the best cinnamon rolls I've ever had. Great spot for soft serve! The peanut crunch with swirl soft serve was very nostalgic and hit the spot! It was pretty expensive, so this won't be a regularly occurring treat, but I do want to come back to try their pastries. Their mission is fantastic, so definitely come out to support! read more

Hands down my favorite bakery around Seattle, this place boasts consistent noticeable top-tier croissants, cinnamon rolls, and a whole host of rotating baked goods all weekend long at the elusive window in Pioneer Square. The Pastry Project has been a presence in Seattle's Pioneer Square neighborhood since 2019. I've been aware of their existence, however, did not really experience their baked goods until 12/5/25. Totally late to the game, but not for a lack of trying many times after being foiled due to timing, parking, or having to be elsewhere. I attended a cake pop up at their location for Lady Grey for birthday slices on 6/11/23. That's a plus supporting other businesses. I've also picked up a jar of their passionfruit curd back on 2/8/25. I've never been able to stop by during the seasonal Soft Serve Summer either. The photos on Yelp and IG sure looked enticing! After striking out trying to visit another site on that blustery, rainy Saturday, I found myself in Pioneer Square. I decided to try my luck by turning right onto South Main Street, past Occidental Square. Cue the aria, there was an actual parking spot right out front, ten minutes before closing time! I was lucky to have such a variety displayed to the right of the pastry sales window. I received patient and helpful pastry window service. I had to exercise great restraint. I ended up buying one each of their ham & cheese croissant, pain au chocolat, chocolate chip cookie, and oatmeal creme cookie. These were all packaged nicely in a lined pastry box. As I wrapped up my transaction, several others had queued up already behind me. Back at home, both me and The Homie deemed all of these items as extremely superior. Amazing lamination, quality ingredients, and execution. Looked great, fantastic flavors. Seriously, this ranks ten stars out of five! Came here during the summer when the soft serve window was open. I was super excited that they were doing a chicken supply collab - they'd been doing exciting sounding collabs all summer and this one sounded super cool (actually they all did). I was a little taken aback at the window looking at the price tag. Over $10 for soft serve is kinda a lot but given the pastry project's mission, it does feel like supporting them. The salesperson in the window was friendly and very knowledgeable about the ingredients and pastries. There are some savory options available. The display window is enticing. Unusual items and flavor profiles, and each pastry is executed with great care and love. I took a maple pancake croissant home. Crispy exterior with a lovely chew, reminiscent of pudding somehow. I really admire the dedication and mission of the Pastry Project to help train individuals who may not have a lot of resources for employment. We took a scones and biscuit making class here, and it was such an amazing experience. Easily the best croissants in the city. There used to be Besalu and then came Puff Town (which was alright to me) however the pastries here are easily some of the best. Definitely top 5 in Seattle. We were visiting from Vegas and came upon this little shop. OMG so delicious. Everything was so good. We got the pumpkin peacan cake, oatmeal cream pie cookie and chocolate chip cookie. We stopped by Monday before our flight left because we wanted to take some goodies back home but sadly they were closed. The ice cream was tasty and they have lots of topping options too. It's been really hot lately so we decided to try it to cool off. Our ice creams were already trying to melt pretty quickly when they handed them to us fresh from the window, which made for messy eating. I'd recommend to take a cup and spoon (and lots of napkins) if you get a cone on a hot day! Always happy to support a great cause and the server was very sweet, even though I put a sizable dent in their napkins. The window is also on the south side of the street but the map will sometimes show it on the north as a heads up. Wow wow wow! My friends surprised me and another friend with the birthday cake from Lady Grey through the Pastry Project. First, it's the loveliest birthday cake I've ever received. The hand painted flowers, the tiny touch of gilding, this cake is gorgeous. I posted it in my Instagram and instantly had friends asking about where we got this gorgeous cake. Pickup was super simple and they were very kind. Last but not least, it's delicious. Cake is so moist without being doughy or falling, I'm not even a frosting girl and I could eat the buttercream from a bowl. There wasn't a huge line (maybe 5-6 people in front of us), and it moved pretty quickly! The quake was HUGE so definitely recommend sharing that one. Overall the soft serve was pretty good! The vanilla was a bit too sweet for me, so I only ate about half of my soft serve before it became too overly sweet, but the chocolate milk was really good!
