The Pastry Project has been a presence in Seattle's Pioneer Square neighborhood since 2019.
I've been aware of their existence, however, did not really experience their baked goods until 12/5/25. Totally late to the game, but not for a lack of trying many times after being foiled due to timing, parking, or having to be elsewhere.
I attended a cake pop up at their location for Lady Grey for birthday slices on 6/11/23. That's a plus supporting other businesses.
I've also picked up a jar of their passionfruit curd back on 2/8/25.
I've never been able to stop by during the seasonal Soft Serve Summer either. The photos on Yelp and IG sure looked enticing!
After striking out trying to visit another site on that blustery, rainy Saturday, I found myself in Pioneer Square. I decided to try my luck by turning right onto South Main Street, past Occidental Square. Cue the aria, there was an actual parking spot right out front, ten minutes before closing time!
I was lucky to have such a variety displayed to the right of the pastry sales window. I received patient and helpful pastry window service. I had to exercise great restraint. I ended up buying one each of their ham & cheese croissant, pain au chocolat, chocolate chip cookie, and oatmeal creme cookie. These were all packaged nicely in a lined pastry box. As I wrapped up my transaction, several others had queued up already behind me.
Back at home, both me and The Homie deemed all of these items as extremely superior. Amazing lamination, quality ingredients, and execution. Looked great, fantastic flavors. Seriously, this ranks ten stars out of five!
The business hours for their pastry sales window are Thursdays through Saturday 9am to 1pm. Thank you Yelp HQ for updating this information.
Other notable things to know about The Pastry Project: they provide pastry training (20 week sessions per cohort) and industry placement, sell subscription and gift kits, participate in professional collaborations, provide corporate event opportunities, residencies for startups, community resource for cookbooks and pastry tools, and one of the owners recently launched a print magazine, Crumb.
