There was also a sheet with two columns that did not have headers but had their own numbers listed. I would love to stop by this bakery if I were in Seattle, but I think there are opportunities to refine the instructions (especially since this business already offers classes). The only time I heard about this place was when social media briefly blew it up during the World Cup tournaments, when Pioneer Square near Occidental Ave became one of many places for the watch parties that are literally making Seattle come to life again. Note on a regular day, Pioneer Square doesn't get as much foot traction on weekdays, though this visit was during a Sunday around 12:50pm and that World Cup crowd came in like a wrecking ball... I definitely jumped the gun on what I decided to get - the purple vanilla soft serve with sticky toffee sauce all in a cup. The purple vanilla ice cream by itself is sweet, delectable and extremely cold for the sultry weather for the watch party... add the toffee sauce and the whole thing is overly sweet. Never mind that the toffee got stuck in between my teeth as I ate it, but it negatively interferes with the sweetness provided by the purple vanilla. Normally they're actually supposed to go with each other but my friend and I would have preferred our ice cream without the toffee. This isn't to say that I won't be back for another round of their ice cream especially during our dog days, but I'm giving something else here a try when I come across Pioneer Square again! I went two days in a row to check out their bakery (open Tue-Sat) and soft serve (open Wed-Sun). It is a walk-up window that is just minutes away from the Pioneer Square light rail station. Both times I went a little more than an hour before closing, so some of the options were limited. Bakery - I tried a chocolate chip cookie, butter croissant, and chocolate croissant. Each item was excellent. The cookie had the perfect amount of chocolate and it wasn't too gooey (or messy) to eat. The butter croissant had a nice crispy exterior, but light interior. Finally, the chocolate croissant was very tasty. The amount of filling was perfect and it was evenly distributed throughout. Soft serve - Unfortunately, they were sold out of the ice cream cake. I opted for a twist (chocolate milk + purple vanilla) with a strawberry passionfruit dip. It was quite pricey. The strawberry definitely overpowered the soft serve flavors, which were quite muted in comparison. Overall, I'd recommend this spot for their pastries. Love this place and how they also work with the community and do trainings/classes. I've had several items from their pastry counter and soft serve in the summer! The classics like the chocolate croissant, chocolate chip cookie, chocolate cake, and cinnamon roll are excellent, but by far my favorite has been the breakfast bread - which is a molasses bran bread with a citrus zest whip. It's kinda weird how there's granules of sugar in the whip, but I really love eating the bread part. The soft serve flavors are creamy and love the interesting toppings too. Such a wonderful spot with an amazing mission too. We stopped at 10:30 am on a sleepy Saturday (construction havoc on the road) and it was a quick stop. We tried three croissants---ham and cheese, mushroom and cheese, and cardamom. I've never met a cardamom croissant that I didn't like but this had to be one of the best I've had. In the words of my son, the mushroom one was mushroomy and creamy goodness. My husband thought it was one of his best croissants too. The Pastry Project has been a presence in Seattle's Pioneer Square neighborhood since 2019. I've been aware of their existence, however, did not really experience their baked goods until 12/5/25. Totally late to the game, but not for a lack of trying many times after being foiled due to timing, parking, or having to be elsewhere. I attended a cake pop up at their location for Lady Grey for birthday slices on 6/11/23. That's a plus supporting other businesses. I've also picked up a jar of their passionfruit curd back on 2/8/25. I've never been able to stop by during the seasonal Soft Serve Summer either. The photos on Yelp and IG sure looked enticing! After striking out trying to visit another site on that blustery, rainy Saturday, I found myself in Pioneer Square. I decided to try my luck by turning right onto South Main Street, past Occidental Square. Cue the aria, there was an actual parking spot right out front, ten minutes before closing time! I was lucky to have such a variety displayed to the right of the pastry sales window. I received patient and helpful pastry window service. I had to exercise great restraint. I ended up buying one each of their ham & cheese croissant, pain au chocolat, chocolate chip cookie, and oatmeal creme cookie. These were all packaged nicely in a lined pastry box. As I wrapped up my transaction, several others had queued up already behind me. Back at home, both me and The Homie deemed all of these items as extremely superior. Amazing lamination, quality ingredients, and execution. Looked great, fantastic flavors. Seriously, this ranks ten stars out of five! In a sea of artisanal bakeries, The Pastry Project truly stands at the pinnacle of a saturated and talented crowd of yeast wizards. Hands down my favorite bakery around Seattle, this place boasts consistent noticeable top-tier croissants, cinnamon rolls, and a whole host of rotating baked goods all weekend long at the elusive window in Pioneer Square. Everything they're whipping out is masterfully crafted and even the items that aren't my jam I can still respect the quality. Service is always friendly and if you're a dog lover there always seems to be at least one lurking around attached to a pastry-eager human. Come here for the perfectly cooked, soft but not doughy, out-of-this-world cream cheese frosting cinnamon rolls and dare I say the best croissants in a city full of great croissants. As much as I love getting my money's worth when it comes to toppings, a wider cup would make it much easier to enjoy both the soft serve and the toppings together. I was super excited that they were doing a chicken supply collab - they'd been doing exciting sounding collabs all summer and this one sounded super cool (actually they all did). Unusual items and flavor profiles, and each pastry is executed with great care and love. I took a maple pancake croissant home. Crispy exterior with a lovely chew, reminiscent of pudding somehow. While working in the area, I heard about this place so I decided to come by to grab a treat and take some home for later. When I came by just before noon, there were only a couple of people in line. Friendly greetings with a little chit-chat. I made my decision based on attractiveness and decided to get the Creme Brulee Croissant, Cinnamon Bun and Chocolate Chip Cookie. The Creme Brulee Croissant was my fave, nice custard in a croissant, delicious! Cinnamon Bun and Chocolate Chip Cookie was very good, but I could do without the flake salt on top, but we still enjoyed it very much in the next day or so. Prices were just over $20 for all three items, for a pastry its on the higher price end. Staff was friendly, helpful and quick to get everything bagged up for you. I think it's worth standing in line with everyone else. They don't skimp on the soft serve either. It's easily shareable or you can eat what you can and save it in the freezer for later and hope none of your co-workers finds it and eats it. Yup, I've known people who've eaten other people's food and taken other people's drinks. I'm no snitch though! The staff are so friendly. Even though the line can look daunting, it moves pretty fast since they have a good system. [[HIGHLIGHT]]You can eat your soft serve at the Waterfall Garden across the street or the Pioneer Square Habitat Beach at the waterfront.[[ENDHIGHLIGHT]] If you're taking public transportation you can use the free Waterfront Shuttle or the First Hill Streetcar. As for the light rail, get off at the International District-Chinatown Station and walk west on Jackson St. towards the shop. We were visiting from Vegas and came upon this little shop. OMG so delicious. Everything was so good. We got the pumpkin peacan cake, oatmeal cream pie cookie and chocolate chip cookie. We stopped by Monday before our flight left because we wanted to take some goodies back home but sadly they were closed. The ice cream was tasty and they have lots of topping options too. It's been really hot lately so we decided to try it to cool off. Our ice creams were already trying to melt pretty quickly when they handed them to us fresh from the window, which made for messy eating. I'd recommend to take a cup and spoon (and lots of napkins) if you get a cone on a hot day! Always happy to support a great cause and the server was very sweet, even though I put a sizable dent in their napkins. Wow wow wow! My friends surprised me and another friend with the birthday cake from Lady Grey through the Pastry Project. First, it's the loveliest birthday cake I've ever received. The hand painted flowers, the tiny touch of gilding, this cake is gorgeous. I posted it in my Instagram and instantly had friends asking about where we got this gorgeous cake. Pickup was super simple and they were very kind. Last but not least, it's delicious. Cake is so moist without being doughy or falling, I'm not even a frosting girl and I could eat the buttercream from a bowl.
