Breeding good tasting meat is their business. I got to taste the sirloin and hamburger meat and it was top notch. No marination required just salt and maybe pepper. Also it was very interesting to go on a hayride with the head honcho handling the beef. He was impressively educated an Aggie and knew so much about the life and health of the cows. He seemed to care a great deal about the treatment and lifestyle of the cows. Akaushi is the type of beef and cow and if you taste the quality you will know why people fly from all over the world to get their hands on Akaushi semen and eggs. Yes Heartland breeds these animals 100% pure and shares the hot stuff semen and eggs with the rest of the world. For a pretty penny I imagine. Looked for their beef and try it for yourself.

Down a narrow aisle towards the back you see a line of folks ordering to-go food, but there is no recognizable way to determine how to order out of the meatcase. I finally got a clerk to notice that I wanted something out of the case, ... he gathered my selected items and said, "meet me at the register." I purchased the beef links, hot chubbys, and the homemade weiners. That night, I had it all on the smoker. Everything was delicious. I found the weiners very dense and meaty, but heavy on salt content. I tried marinating them, to tone the salt down a bit, but to no avail. I'll be boiling the next batch to see if that helps. Overall, City Market is a place to visit if you're flying down I10 past Schulenburg, Texas. I'll be back.

Trying Bar 3 Ranch meat had been on our family's bucket list for years, and finally, this past…read moreOctober, we managed to snag a half cow for this spring. When our date got closer, Jeff sent over the final weight for our share, and it caught me off guard because it was so much bigger than the past shares we've gotten through other local farms. As it turns out, there's a reason. When we picked up our meat, we found Jeff excited to share how he raises and feeds his cows and why, ultimately, his meat is far superior. (He didn't say as much, but as you can see by the photo, it's incredibly clear that there's no comparison.) We learned more about the care and feeding of cows that afternoon than we thought possible but we loved every minute. He was also great with our kids, taking them to see and pet his horses. Afterwards, he even called me to share his favorite recipe for flanken ribs. But how does it TASTE, you ask? As a reformed 25+ year vegetarian, I can't stand the smell of most grassfed beef that has come into this house. (We've done multiple cow shares before through other ranches, all the same - the smell is nauseating.) Bar 3 Ranch, though... totally different. There is NO gamey smell, no gamey taste and my husband gives me the side eye now because he has to share his steaks with me. It's GOOD. Like, REALLY GOOD. Words are probably not going to do this justice, so I'm attaching a photo of the difference between Jeff's meat and our last half cow from another/local ranch. There is just no comparison.
