I've been eating meat from Kasper's since I was in my momma's belly over forty years ago! I am not even joking. My mother said that the only time she craved their beef jerky was when she was pregnant with me. I moved away a long time ago, but I still stop by once or twice a year to stock up on their beef jerky. I know everyone loves their sausage because it is especially good, but it's the beef jerky I miss when I'm away for too long. So, I buy 5-7 lbs. of it and seal it up in vacuum bags for the freezer, just to last me until the next time I can buy more beef jerky, pulling out and defrosting one stick at a time. I have eaten Kasper's beef jerky in Washington State, Quebec, Colorado, Oklahoma, Texas, Florida, all along the I-10 corridor, in fact, on one road trip or another. I've also eaten it over the Atlantic Ocean while in a plane and eaten it when I lived in Germany. I've never had anything from there that disappointed. The first time we went to Casper's it was by mistake just stumbled across it. And boy what a gem it was to find it's old school in the best way. This establishment will transport you back to a simpler time when service and product was priority and a score of pride. The sausage was insanely good! We purchase cooked and some to grill later on. It smelled so good we got some good ole red rind cheddar cheese and crackers and ate it on the road!! What a treat! Everything is definitely quality and friendly service a cute old world decor and feeling! Our daughter told us about Kasper Meat Market in Weimar, so we decided to check it out. First of all, this is an old time Texas meat market. Folks are friendly and know what they're talking about when it comes to meat. We were there around Noon on Saturday and there were lots of customers. The gentleman helping us was patient and helpful and had our sausage and jerky order ready in a jiffy. My husband loved the turkey jerky. The sausage was fabulous. Try the jalapeño sausage. I've been making special trips out to Kasper's for years to pick up their jalapeño sausage. The drive from Houston is well worth it and I haven't found a place locally to duplicate the quality of meats, especially the sausage. Awesome small town meat market! Since 1917. Get to mingle with local folks while waiting for sausage to be wrapped/sealed cry-o-vac style for transport and freezing. Full service with all cuts of beef, some pork and chicken but the "Weimar Sausage" is the star of the show. They sell pork, pork/jalapeno, pork/beef and sometimes pork/beef/deer sausage at very fair prices. Bring your cooler because you will want to buy more than you think you need. I ended up with about 30 pounds and even went ahead and bought one of their coolers for the extra sausage. This "old timey" meat market gets customers from as far away as Austin, San Antonio and Houston and there's a good reason for that. Great meat market in Weimar, about half way between San Antonio and Houston on I-10. The jerky is fantastic and different from other markets selling jerky. Sold in chunky strips. The smoked bacon with the rind still on it is another unique item. There meats are fresh cut and most of it from the surrounding farms and ranches. They no longer serve BBQ. read more

We took a 990 lb steer to Kasper Slaughter house for processing. Wrapping instructions were not followed as we wanted the meat double wrapped. Most importantly we only received the tail ends of our tenderloins when we requested filet mignon and we didn't get the checks as requested. In an effort an to resolve the issue, we contacted Maurice Kasper. He responded that the calf was small and "we got what we brought" before rudely hangin up on us. After years of using Kasper's services with no issues, this was very disappointing. read more
