I'll let the photos from other reviews do the talking, but if you enjoy a good backstory, ask about the history of the space. My mission for the night was simple: end the evening with a great gin cocktail. I started with the Donna Bella from the menu. It was well made, but I thought the bitters were a little too forward for my taste. Next, I asked for an off-menu modification: a Water Lily for Teresa, but made with Roku Gin. It was a strong contender--aromatic, balanced, and beautifully floral. If you're a fan of a French 75, this is a fun cocktail to explore. It's less citrus-forward and leans into a floral profile with a character that's hard to compare to anything else. For the final round, I went with bartender's choice. Mick asked a few questions about my flavor preferences and absolutely nailed it. They crafted a cocktail with Roku gin, snap pea cordial, aloe liqueur, egg white, lemon simple, mint, and citrus that was easily the highlight of the night. Fresh, layered, and memorable, it's a drink that deserves a permanent spot on the menu....Mission accomplished. If you're willing to wander beyond the barbershop business front and you consider yourself a spirit explorer, Volstead is well worth the visit. Go for a round...or two. If you're local, this could easily become your staple spot. For what it is, strong craft cocktail bar option. Bartenders choice is the way to go.

Even getting inside was part of the fun since you enter through a hidden bookcase. One of my favorite parts was the drinks. There isn't a cocktail menu in the speakeasy. Instead, the mixologist comes over, asks you a few questions about what you like and don't like, and then makes something specifically for you. We had four drinks between us and every one was completely different. It actually became a little game trying to guess what was in each drink before they told us. The food was great too. They brought out pork rinds to start and those were AMAZING. For tapas we ordered the tequeños, tuna tostada, wings, and Media Noches Bites. Calling the Media Noches "bites" is almost funny because they were HUGE! We definitely ordered more food than we needed and couldn't even finish everything, but we enjoyed all of it. Between the hidden entrance, quiet atmosphere, food, and having drinks made specifically around our tastes, this ended up being one of our favorite experiences in St. Augustine. It wasn't just going somewhere for dinner and drinks. The whole experience was fun from beginning to end and I'd absolutely do it again.

Long waits are common for this spot. The interior is the old Ice Plant so it has great character. Not super large so limited dining spots within. Very high ceilings and though there were plenty of diners, it was overly loud. Great spot to enjoy the company you are with! Our server was top notch, knowledgeable, helpful, friendly but not trying to monopolize our table talk. We started with Cocktails which were all great. I went classic Old Fashioned, presentation AND taste were on point. We split the Crab Beignets order of 4. The breading on them was light and fluffy, the Crab tasty and they were cooked appropriately, no burns or underdone spots. For our main course, we elected to split 2 of the specials of the day so they may not be there when you go, but judging by the quality of the specials, any dish would be great. We had the Caesar Salad (which is like calling the Queen Mary2 a "boat"!). It is next level, 7 minute eggs, homemade croutons, Anchovie forward, all good! The Ice Plant location was historically St. Augustine's first power and ice complex. Now the building has been revitalized and has The Ice Plant and The St. Augustine Distillery. The St. Augustine Distillery is connected to The Ice Plant and is a great tour to check out right before heading to grab food at the restaurant. There are a variety of guided and self-guided tours. My spouse and I checked out the self-guided tour right before we grabbed dinner at The Ice Plant. The tour isn't particularly long but was filled with information. After the tour, we headed upstairs to the restaurant. The restaurant feels really spacious with its super tall ceilings. There was lots to look at reminding us of the previous use of the building. We ordered the hand cut fries, strawberry and beet salad, and the gochujang marinated pork chop. I also ordered a few of their drinks, each one featuring different types of ice to fit the drink. Honestly all the food and the drinks were so good, but the easy standout of the night for both my spouse and I were the pork chops. These might have been the best pork chops I've ever had in my life. The pork chops were incredibly tender and juicy, not dry at all. I was expecting it to be a little dry, as I feel like pork chop can sometimes get overcooked, but no. These were so juicy and tender. I asked our server how the pork chop was cooked. Our server said that the pork chops were cooked sous vide, which makes a lot of sense as to how they were so tender. I've already told my spouse if we are in the St. Augustine area again, I would make a special trip just to get these pork chops again, they were that good. I really enjoyed this restaurant. This was my favorite spot we checked out in the St. Augustine area, if you are ever passing by the area, check The Ice Plant out!
