I appreciate that they separated the broth from the noodles. Who wants to eat soggy noodles?

I am loyal to their brisket soup noodle and get that on repeat. Another great dish is their classic beef scallion flying noodles. It's a dry noodle with tasty ground beef, some (little bit of) veggies, with an abundance of noodles. If you're feeling fancy you can get the picture friendly one where the noodles look like it's flying on the chopstick. If you order the dry noodles dishes and choose to add on tendon or veggies, you don't get the cool flying chopsticks. The fried appetizers are okay. The clay pot lamb dish was a pleasant surprise. It's not too gamey and pairs well with white rice. I think it's meant to be shared, but my husband can polish it off by himself. The service is quick. You can scan the QR code on the wall and place your order or the friendly staff will take your order. The technology of the future is arriving folks. As it goes without saying, when you're in Hawaii you're as close to eating the freshest seafood as you can without being in Japan. We both ended up getting their Signature Negitoro Bowl but the Tokujo version which has Salmon Roe + Snow Crab + Uni and added a fresh Yolk Soy Sauce. Because why not have the Lamborghini of Negitoro bowls while you're visiting here. Along with that I ended up with a half sized udon miso soup and my wife a crab miso soup. As you can see in the pictures the food came out looking just like it did on the menu, no false advertising there. The egg soy sauce was a perfect creaminess that complimented the saltiness of the Uni and Salmon Roe. Once you mix everything together there's even added house made soy sauce on the side of your want more saltiness back but add some yuzu ginger with each bite and you get that perfect blend of flavor. There's fish was insanely fresh and had zero fishy smell or taste. The rice underneath was cooked well and the side squares of nori was perfect to make our own hand rolls. There's no alcohol served but they allow you walk 15 steps outside to the nearby convenience store where they have the cutest little dog and bring in your own beer or sake. There's miso soup was good and warms you up, but will say the corner we sat on had the AC blasting (which we're not complaining) but it did cool down our soups a little faster than we could enjoy so in the end my wife's crab miso did get a little salty. But overall the food was amazing, service was friendly and vibes were warm. Absolutely will come back the next time we're in Oahu.

I arrived at noon and was very lucky to find a metered parking spot across from the restaurant on the very first try - As I entered I noticed that the room was very crowded and that here was only ONE open table so I sat down immediately and ordered the "Won Ton Mein" as the waitress approached me with a menu - I have to note that although this restaurant was located inside of a very old building the interior was a very sharp contrast - Everything appeared fresh and modern with very basic hand built picnic type bench seating and dining tables constructed of varnished raw wood (very spartan but practical and comfortable) - The bowl of soup was of average size and appeared very sparse with not much color - There was "NO" Pork Char Sui slices, only steaming hot clear chicken broth, a clump of thin Vermicelli white opaque noodles accompanied with a few small pieces of both chopped Mustard, Napa Cabbages and slivers of Green Onions - Extremely simple and basic. There were exactly "4" individual Won Ton that were filled with a tiny chunk of SHRIMP mixed into minced PORK HASH and regular spices (basic Soy sauce and Sesame Oil) - The "won ton PI" was very thin and light and the saimin noodles were made of the same Rice Flour mixture also - The broth was hot and savory but nothing special only because it was so "bland" to the taste. Although the restaurant was crowded to its Maximum Capacity within 15 minutes of my arrival it had practically "emptied itself out" with only myself a one other table of 6-dinners getting their food too. I will probably return to eat at this restaurant if and when I get another pressing urge to satisfy one of my insatiable cravings to drive all across Oahu from EWA Beach to Chinatown in the city of Honolulu .
