The fat was rendered out perfectly and the chop had a smoky char, the tomato and onion sauce over the top cut through the fattiness and balanced the dish perfectly. The pork chop itself is worth traveling out of your way for, and the squid ink pasta and salmon smoked on a wood board are also highlights.
