We hadn't been back to Sybil's in two years, so I was curious to see whether the food and service were still as good as I remembered. I'm happy to say they are. My #107 omelet was just as good as before, with no noticeable changes in quality or preparation. My wife ordered one of the senior breakfasts and left completely satisfied without needing one of the restaurant's famous sweet rolls. A heads-up if you're planning to order a sweet roll: the current price is $8.50, although the printed menu still reflects the older price. Our waitress explained they switched suppliers to Swells Sweets, which increased the cost, but the menus are only updated annually. I appreciated the explanation. As for the sweet roll itself, it was a little dry for my taste, but the generous icing helped balance it out. One detail I appreciated was the coffee service. My wife ordered the medium roast, and I ordered the dark roast. The waitress placed a paper coaster under my cup so anyone refilling coffee would know which blend to pour. It's a simple system, but it shows attention to detail that many restaurants overlook. Check out the photos of the different sugar and sweetener selections available for coffee and tea, along with the variety of jam choices served with toast. Those small touches help create a welcoming breakfast experience. At 9:00 a.m. on a Saturday, the restaurant was packed, yet we still managed to find a parking space and a booth. Even with a full dining room, the service remained friendly, attentive, and efficient. Two years later, Sybil's continues to deliver a consistently good breakfast experience. Everything from the place being awesomely decorated and loving the fact that most of all the customers were veterans (I come from a military family) and the locals support what is yummy and decently priced. Their omelet selection is amazing and they asked you to order the omelets by numbers because they have a ton. I loved the fact that they have gluten free pancakes as well to go with your omelets if you don't want traditional hash browns. There are very few breakfast type places in Salem, Or that I would recommend and this is definitely one of them! This establishment has been here for as long as I can remember and possesses a PNW, Twin Peak-ish feel to it. Quite homey and inviting. The staff was very friendly and helpful, service was stellar! I've only had a couple of their dishes but all of them have been tasty and delicious. I don't think there is any dish that you could go wrong....well, not sure about their lunch menu but I'm sure the items offered are above average. Would definitely recommend at least one visit, if on the fence of trying. Happy eating! read more

This place rocks! The food was great and the service was excellent. I loved the decor, it felt so cozy and was the perfect way to start my day while away from home. I still give this place 5 stars. Whether early on the weekends or mid week they are typically hopping busy but the service is still fantastic. The food is quick and tasty. I went to Sybil's Omelets on May 12th, 2026 for breakfast with five longtime friends. I was severely disappointed! I ordered the Chicken Fried Steak for $19.00 and saw little value along with some strange takes on an old school breakfast. A chicken fried steak is made from a thin, tenderized beef cutlet which is fried up like a piece of chicken. What I was served was closer to a bad tasting Salisbury steak that had an unpleasant 'chemical' taste and was not made from a beef cutlet, but by something mixed in a bowl and formed into a mushy patty shape. I've had the good, the bad, and the ugly in chicken fried steaks over the last 50 years plus, but this was by far, the least enjoyable CFS of my life. I'm not grinding them needlessly, I mean this was HORRIBLE! I would have refused it, but was trying to share a nice meal with friends, one of which was flying home to Texas the next morning, and I didn't want to put a negative spin on our time together. As for the rest of the plate, it came with the strangest 'sausage' gravy that must have been made from a Dollar Tree gravy mix or something just as bad. No real sausage flavor, kind of translucent, no richness to it at all. Disappointing! The biscuit was also strange. It was more like a lump of dough that didn't look, taste or behave like a regular biscuit. It was as if it was made by someone who had never actually seen or tasted a biscuit. The hash browns were passable, but unremarkable. I liked the restaurant decorations, etc., but it is extremely noisy, and for six men in their sixties and seventies, conversation was difficult. I should also mention, they have the smallest restroom I have ever seen. I use a walker, and it would not fit through the outer door or into the restroom. Definitely not ADA compliant. I'm surprised they haven't been ordered to upgrade! So...last visit EVER to Sybil's. They are wildly out of touch with what their customers expect. I give them one star because 'zero' is not an option! read more

The food was just great -- wheat toast wasn't store bought but seemed to be freshly cut bread, the ham slice was excellent and really enough for two people, the strawberries fresh, and the eggs perfectly done. And how much was all that? Well on the senior discount they offered, it was $10.50. Amazing value! I had the Portuguese sausage and cheese omelette with their homemade biscuit. Both were good. I would definitely get the omelette again. People have raved about the biscuits, but I found mine to be a little too dense. I like my biscuits to have a good crust but to be soft on the inside. We didn't wait more than five minutes before being called, sat and introduced to our waitress. A chicken coop theme adorned the walls lending a down home country feel. Booths were modified with plexiglass partitions and open tables were amply spaced for comfort. Do yourself a favor and review your menu options in advance or you may be a while. They're known for their omelettes and skillet scrambles, but have your standard breakfast items available with gluten free options. My daughter was thrilled to learn that their gluten free toast could be made 'French', and was given the opportunity to return anything that wasn't cooked to her liking, since she had a but of difficulty explaining how she liked her egg cooked. I also appreciated that our server doubled back to check to see if there was a celiac concern since the grill was used to cook everything. Luckily, her intolerance isn't so severe that cross contamination poses a threat. As we sat back awaiting the arrival of breakfast, I observed the bustle around me. The omelette was just amazing, im talking from the first bite to the last bite it is just amazing. The creamy taste of gravy on top of the omelette was just flavorful. The ham, bacon, and sausage was cooked to perfection and the cheese was melted so perfectly that the cheese pull was like no other. The hash browns are a little plain but if you mix it with the omelette its just a flavorful burst in your mouth. The pancakes are very warm and fluffy I would give them a solid 8/10.
