He remembered my husband's request for thickness and preferred amount of fat around the chop - perfect for searing. My husband has been preparing chops Steven's way for years now and it is flawless. It certainly doesn't hurt that the meat he starts with is fabulous. Since I had many errands to run, I asked Steven if he had any ice I could use in my insulated bag. He graciously supplied me with several sealed bags of ice which would be sure to keep the pork safe until I reached home. We enjoyed them tonight.
