The bread should be soft and chewy, and Pappa Geno's does a good job with that. The meat in an original cheesesteak is supposed to be cheap, thinly sliced and quickly grilled. Tender. Greasy. Wonderful. Pappa Geno's does a good job with that too. But -- there's enough black pepper to float a battleship! And there's nothing authentic about that! None of the original Philly cheesesteak joints empty half a can of black pepper onto their meat. Though I enjoy black pepper, my crew (including my Yankee wife) had some issues. Yo, Pappa Geno's! Enough already! Tone it down! We can add our own black peppa! (Still, this is an outstanding sandwich, as far as my taste buds are concerned.)
