Despite some other negative reviews about service, I had a very pleasant experience here! The young man at the counter was very nice and gave me some suggestions for late-night activities in Aspen. I came for breakfast and had the tempeh bacon sandwich, was a delight as well! The decor is very modern and fresh, but it does get a bit loud in there. Came here while vacationing and LOVED it. I got the avocado toast and it was delicious, and cheap compared to NYC. My boyfriend got The Cure-All. It was huge so when he couldnt finish it I gladly dug in. The base is a huge sweet potato cut in half and on top is the other half of the sweet potato cut up, black beans, corn, onions, tomato, spinach and vegan sour cream. I was impressed by the vegan sour cream, normally I don't like them. The sweet potato was cooked perfectly, peeling away from the skin easily with the fork. One of the few places open early on a Sunday morning in Aspen. There was nobody else in the cafe, and we pretty much had the place to ourselves. I ordered the avo toast which was four slices of whole wheat bread smothered in avocado and red pepper flakes. There were halves of cherry tomatoes to garnish the dish. I also ordered the blueberry bliss which was really good, but insanely overpriced ($9). I asked the lady at the counter if the advertised salad was available to go since I was looking for lunch during the four hour drive to DEN/plane ride. And she said "No, we don't make lunch until 11am". I'm like but you have it advertised, and she obnoxiously repeated herself again. So I succumbed to ordering a pre-made salad which apparently was $16. She didn't know how much to charge me and came back with the price. It was spinach leaves, cranberries, almonds, and a ton of beets. I was looking for the salad dressing, but realized it was already lathered in it. By the time I ate it, the whole thing was super soggy. Definitely don't order their pre-made items, it's not fresh. Maybe like a day or two old. Service isn't great either, the ladies just speak Spanish to themselves in front of you and just only reply when to take your order. Won't be coming back when I'm back in Aspen. read more

We were very excited to try this place and it was recommended as being very gluten-free friendly (I'm celiac). The meals were delicious. I ordered gluten-free everything. At a place like this I trusted them to make everything gluten-free. Unfortunately, they gave us the avocado toast on regular bread and I got extremely ill and it ruined our entire vacation day. :( if you have a severe allergy, please make sure you tell them that, even though I said gluten-free everything I should've said I'm Celiac so that they took it more seriously. read more

You had better be sure you ask for everything you need when you place your order because if you need anything after you get your food it is as if you shot them the finger! Ha! Love the nachos as I can't eat dairy and these r made with cashew cheese-the tamales are great but not much veggies inside-the soups are good and the salads are good-I like the Spring but replace the dressing with the Creamy Parsley! The only thing is that they charge you you to replace the brown rice with quinoa which I thought was a bit much since the dish of enchiladas is already pricey. Coming from Boulder a heath food foodie heaven, this places fares ok. Spring Cafe needs to up their game a bit as far as true heath goes. The "fake" cheese stuff is questionable and the tofu icing on the carrot cake we tried was inedible. We did not know that it was tofu icing and would not have ordered it had we known, but come on! Tofu is so 90's and that kind of soy is BAD for you! Also get an enclosure for the Vitamix. They are too loud to let run in an open space like that. They make enclosures just order one. I rarely crucify a place if it looks like they're trying, but I had one of the worst experiences at this restaurant. We are new to the area and thought we would give them a try for breakfast. The woman taking the orders was less than enthusiastic about our being there for starters. We were not aware that this restaurant is predominantly vegan selections, but we decided to give it a try. I ordered a Blueberry Beauty (see photo) smoothie and a plain bagel and my friend order an egg sandwich with avocado, lettuce on a bagel. We both ordered coffee. Now mind you, there were very few people in the restaurant so service should not have been an issue. Approximately 20 minutes after we ordered and being shocked that our breakfast was $30!, we finally received the food. The Blueberry smoothie was gawd awful and I received some seeded bagel (I ordered plain). Half the additions on my friend's sandwich were nasty looking and he scraped most of it off. Midway through the meal, a server came by our table and my friend asked for water. She curtly said, "you can get it yourself inside." I was shocked. This is Aspen folks. This is where service and quality go hand-in-hand. I must admit that I had been warned by other locals that this place was snobby and expensive and I must say they were right. Coupled with tasteless food and bad attitudes, I will NEVER return to this nasty place. Run! And go to Peaches where great good, great attitudes and fair prices exist! It's sad to read such terrible comments, it seems that people don't realize how employees are hard workers. I come here very often, they start their day off very happy. I've read so many comments and there's a lot of good ones. But I've noticed that one time a client came in and literally yelled at an employee, no hi, no how are you. She screamed because she wanted her dog in the cafe, and the employee was trying to explain how it's the hygiene, and it's a rule. She yelled terribly. It honestly ruins everyone's day. We have to being to put ourselves in their shoes. And yes, they might not smile all the time, but we also have to realize that we expect more than we deserve. If people say their service is terrible, we have to think of how we treated the workers. They have other things In mind as well, they forget things too, and because of one mistake, it's not the end of the world. We aren't the center of the world. I understand they work one thing after the other, it's all fresh. I keep coming here because there is a lot of honesty between people. I lost my bag, and they called me saying they found my bag and that I should pick it up. I think we all have good and bad days. Spring cafe is the best! Good job! read more
