I stumbled onto Cowboy Ciao in Terminal 4 and was pleasantly surprised. Cool vibes (the employees reminded me of the movie "Waiting" with a mix of all different people), the service was friendly and fast, and the food was good. Our server extraordinaire, Faith, was a huge part of that. She was phenomenal and genuinely made our night incredible. But what impressed us just as much was the entire staff. There was absolutely no ego. So many different people interacted with us throughout the evening, and everyone was warm, knowledgeable, gracious, and seemingly focused on one thing: making sure we had a memorable night. Even getting a tour of the kitchen during service was such a cool touch. And the food? Off the charts. The foie gras macaron bite was the standout for me. One of those bites where you immediately look at the person across the table and just go, "Wow." But there really wasn't a miss. The ribeye, Cornish hen, pasta course, smoked Caesar, ice cream with brisket powder, and bread pudding were all spectacular. The attention to detail throughout the meal was phenomenal. You could tell there was thought and intention behind everything that came to the table. I noticed the 3.7 star rating and read some of the older reviews before we came. I can only speak to the restaurant we experienced today, but those reviews simply do not represent the Quiessence we visited. If you have been hesitant because of the rating, I would absolutely give this place a fresh look. Beautiful setting. Spectacular food. Exceptional attention to detail. A wonderfully calm and romantic atmosphere. And a staff that made an upscale dining experience feel remarkably easy. Five stars from us. People congregate and get stuck after ordering, trying to get coffee, when it's busy. There's no room to move around others who have ordered and are getting their coffee. At the same time people are trying to approach the counter to pick up their orders. It's just too disorganized imho. Also, what I didn't like was the woman screaming out orders. That's your system? Screaming when ordered are ready? It was really disconcerting. To top it off, customers were scolded by another employee telling customers to make sure we're listening for our order number. I think they really need to figure out a better system. Put fewer people on the register and put more people assisting customers and managing the dining space around your order counter. It was all just very confusing and not a pleasant experience. I hope this feedback is instructive to the owners or the manager to look at system improvements to the employee and the customer experience. It's not the customer's fault if they have nowhere to go to wait for their orders. So I hope you give this some thought.
