I knew I had to stop at Cowboy's BBQ after I passed it a few times while looking at houses in Covington. Some of the best food that you'll find anywhere is often attached to a gas station. The good reviews and smells made me certain this was going to be great. At first glance, prices are amazing [more on this later...]. I ordered the 3 meat plate with brisket, ribs, and smoked chicken. I chose fries and mac n cheese for my sides. The mac n cheese carried an upcharge, but this is reasonably common for places to do. I agree with the one diner who said the brisket was amazing. I really enjoyed the brisket. The fries were also fine thanks how are you? Wish I had more good to say about this place. The ribs were very old and mediocre at best. I understand that food can't be cooked to order at a barbecue place, but even barbecue has a shelf life. The ribs that I was served should've long been chopped into a stew special or something along those lines. The smoked chicken was a disgusting insult. At first, I thought I was mistakenly served an additional side instead of smoked chicken. Unfortunately, their service style is off the bone and finely diced. Storing barbecue meats off the bone is a delicate process. You have to take extra care to ensure that it doesn't dry up in the hot box. Unfortunately, no care was taken, so the chicken was dry and tasteless. The mac n cheese was very low quality. I'll happily pay an upcharge for the good stuff that's baked. I'll grudgingly eat Kraft mac n cheese. I will not pay an upcharge for Kraft mac n cheese. Honestly, all of this would've made the experience probably worth 2 or even 3 stars, but they have an incredibly dishonest, unadvertised upcharge for credit cards. The surcharge is definitely higher than their cost to accept credit cards. Some businesses eat the cost of accepting credit cards. Other businesses pass this cost to the customer. Cowboy BBQ uses this as an opportunity to improve their margins by cheating their customers.

The old pit, the brick walls, the long tables, the signs on the walls, and the simple serving line all remind you that Fresh Air has been doing this for a very long time. One thing worth knowing before you arrive: this is Carolina-style pulled pork with a vinegar-forward sauce. If you're expecting sweet barbecue sauce, reset your expectations before that first bite. This is a different barbecue tradition, and that's part of what makes the experience interesting. We ordered the Deluxe Plate, which comes with pulled pork, Carolina barbecue sauce, homemade Brunswick stew, homemade coleslaw, a dill pickle spear, and two slices of plain white bread wrapped in plain white paper. That little package of white bread may not sound like much, but it perfectly fits the restaurant. Nothing here is trying to be fancy. The focus is on the food and the tradition behind it. The lady who took our order was very nice and a wonderful example of Southern hospitality. She patiently answered our questions, helped explain the menu, and recommended the lemonade. What wasn't understandable was our server's response. Instead of simply apologizing, he became defensive, explaining that it was the Fourth of July, they had been busy, and one of the unavailable items was one of their staples. His tone came across as if we were inconveniencing him by asking a reasonable question. Sensing the interaction was heading in the wrong direction, I asked for his name and thanked him in an effort to ease the tension. When our food arrived, one of the side dishes was incorrect. We informed the food runner, who immediately apologized and brought the correct item. That's exactly how customer service should work--acknowledge the mistake, apologize, and fix it. No issue there. After we finished eating, our server cleared only one tray from the table, leaving the other. He then brought the check, but half of the receipt was wet. At that point, we just looked at each other. For the unavailable menu items, we were told they had been busy and there were other things on the menu. For the incorrect side, the response was that the kitchen was busy and they could have just swapped it. For the wet receipt, we were told it could have gotten wet in the back or from the table, followed by, "Do you want us to print another one?" At no point did we receive a genuine, "I'm sorry." That's what made this experience so disappointing. Every issue by itself was minor. The problem wasn't the mistakes--it was the dismissive attitude and complete lack of accountability. Customer service isn't about never making mistakes; it's about how you respond when they happen.
