I saw Slow Co. highlighted on a social media article a few weeks back. And since I pass thru cotati quite a bit, I knew I'd be trying it soon. Yesterday was the day.. had to get my windshield replaced in Rohnert Park and stopped by Slow Co. on my way out of town.. Really well put together space, very nice decor.. simple but nice. So clean and smelling delicious of food they were preparing..Bathroom was absolutely spotless too. You can tell they care. Met the owner, and chatted up the Sonoma County Pizza scene while going over their menu.. Personal size pizzas, just the right amount. But if you want leftovers, but two pies. We got three pies, the fungi, the sausage and the pepperoni which I had them drizzle hot honey on. Oh my goodness the flavors are amazing. All three pies were excellent and perfectly cooked. Nice undercarriage, the crust is some of the best I've had on a Neapolitan style pizza. Lots of parking, and located in a quiet and safe neighborhood. I can't wait to come back in the spring and sit on the patio and have a couple brews and pies. Great local beer selection with beer on tap and in can. Wines available too. Give it a try if you are a pizza connoisseur like myself. I would love to see another salad option and a few more pie options too. Somewhat limited but tasty menu options. My favorite pizza place now! My husband has been here a few times before and I finally joined him today. We love a good thin crust and in our opinion it's perfect! We went to Slouch Pizza restaurant in Cotati yesterday for the third time. Again, it was the best pizza I have ever had. We are working through the menu but get stopped by the delicious special offerings they continuously change. The sour dough long fermented crust is "the perfect crust" for me...chewy, not soggy and not overloaded with too much of any one topping. Delicious. Wowie!! Very impressed. Just enjoyed a Hogwarts Express pizza and it was one of the very best pizzas I have had since moving west in 1974. And I used to make pizza when I was in high school. It was ready really fast while I waited just about ten minutes in the new and very comfortable ambiance next to La Plaza. Highly recommended. I have visited four times since they opened less than a month ago. The pizza is amazing, fresh, local ingredients nestled carefully onto the most amazing crust and finished off with cheese options that aren't your normal pizza cheese. Their pizzas are baked in a beautiful brick oven and can be paired with generous salads and a cold draft,canned beer or non alcoholic option. The staff and owners are clearly excited to be open and they truly engage with their customers. Their seating area is small but clean, new and more than adequate. Check out the personal touches in the bathrooms. I look forward to putting their fenced patio to use when the weather is nice...and they noted they are pet friendly.
