Slims BBQ was our favorite stop for BBQ during our trip to Texas! It's a small little roadside stop that is family owned. I ordered a plate with brisket and pulled pork with some sides. My husband ordered brisket, and my mom got some pulled pork tacos. The meats were perfectly cooked, and I loved the options for sides. Service was great. We sat outside and they brought our food out to us. Plenty of room to sit inside as well if it's too hot. Let's talk about what truly matters: THE BBQ SAUCE. This is the best BBQ sauce we have ever had! We bought two bottles and brought them home with us, and we are SO sad they are almost empty. We would love if they could ship it! Having left Austin and the very good BBQ opportunities we missed in that city, we decided to stop in the next town we were in to get our fix. "Right there, Slims", we both hollered after searching the blocks our navigation system was guiding us. To us, it was not well signed but a quick visit out front revealed there was plenty of signage. Must've been the crappy navigation system we were using. About $38 worth of three meat items that came with two sides. We chose a red potato, corn salad and coleslaw. We also tired their very good Mac and cheese. The plate also came with two slices of tasty Texas toast. We also bought a Lone Star beer and an ice tea. All of their home made sides were delicious, but were even better the next evening while in the hotel room. The food and friendly service here at Slims was surprising. We weren't expecting such great all house-made food, but the warm Texas hospitality was almost a given. Thoroughly enjoyed this visit except for the flies on the patio. The flies weren't there when we sat down, but a soon as the food was brought out, it was like we were sitting in a horse stall, but that's ok, cause they don't eat much. It's hard to find bad BBQ in Texas. SLIMS is delicious. Chopped bbq sandwich was amazing. Tons of meat on this sandwich and the plate that my husband got. We all left stuffed. Outdoor seating only. We were looking forward to trying out this BBQ restaurant but we're very disappointed in it. The food was pretty good but waiting 55 minutes for two chopped brisket sandwiches and an order of coke slaw and pinto beans was excessive. Ridiculous amount of time for meat that was already cooked, slaw already made, and beans already cooked. I witnessed another customer go up and ask for their money back due to waiting so long for their meal. I was walking back to ask for our refund when the server finally brought our order out. Stopped in on our way to Fredericksburg. The brisket is decent, but they seem to run out of a lot of things when it comes to sides. My brother ordered their pork ribs and they were dry like sand, so definitely don't get those. The pulled pork was similarly lacking. It is always nice to see a family owned business succeed. These folks took over the small location of another BBQ location and have really made things their own. Great menu of yummy smoked meats and sides. And today, it's been a little while since our list visit, found they have expanded their space. We found this BBQ place by chance searching "food near me" as we drove into town. What a gem! Patio seating or to go only. We have been in Texas for four years and try bbq everywhere we go. BEST BBQ ever! The sauce is something special. We had the pulled pork, macaroni and cheese and potato salad. Everything was delicious and not hohum like 90% of BBQ restaurants . Great customer service and excellent food. We ordered ribs, turkey, and a brisket baked potato. Everything was delicious. The pinto beans got a "ooh, these beans!" from my husband after the first bite. The red potato and grilled corn side was different and unexpectedly tasty although simple. We were driving by and I just had to stop. And I glade that I did. It is just a little place that you go in and order and they do have some seating outside but we were running errands and not that hungry . I got some sliced brisket and pulled pork I was happy that they let me get a small order but after tasting it I wish I would of got more. The pulled pork was juicy and a nice smoke flavor same went for the brisket as you could just stretch it apart. They gave me some pickles and onions and a bbq sauce that I really liked it had a slight spice and a vinegar back that I love. They were super friendly and I just wish I had tried them sooner. I am a born and bred Texan who loves brisket. The night before we had eaten at "The Salt Lake" and the brisket was OK. The following day we grabbed tacos from Slims and the brisket knocked our socks off. This is a must try when in Fredericksburg. The Barbacoa is very good. While meeting in Fredricksburg, we decided to try Slim's Barbecue. It's a small place with outdoor seating only. The setting was nice, with good tables and chairs, with gravel covering the ground. I ordered the 2-meat plate with moist brisket and pork ribs. Sides were pintos and corn&potato salad. I'd never had that type of salad before and it was quite good. The ribs were just right, with excellent flavor and good mouth feel. Brisket was tasty and tender, though a mite salty for my taste. Other members also expressed positives about the 'cue and the friendly service. All in all, very good 'cue served in generous portions. Next time I'm in Fritz-burg I'll stop in again. read more
