Was so excited to try Bills after reading all of the positive reviews. It was disappointing to say the least. A complete and utter let down. Got the three meat plate ( ribs, pulled pork, and brisket.) The Ribs and pulled pork were tender hut that's where the compliments end. Both meats were severely under seasoned and there was no smoky flavor to be found. I just don't understand how the ribs could have such a nice red color from the smoke and lack any sort of smoky flavor. Thought to myself maybe the sauce can save the meat. Nope! The sauce tasted like it was having an identity crisis. Wasn't sweet or tangy and the texture was gloopy like a gravy. All it did was provide some moisture. Potato salad was average tasted like any ol potato salad you can get from Walmart or HEB. Coleslaw again average, tasted like I went to KFC and got a side of slaw from there. Finally the brisket. What a major letdown. Impressive looking bark on the outside but again lacked seasoning. Both the lean and fatty brisket were dry. How they manage to make fatty meat dry is beyond me. I've always heard that Texans take their brisket seriously and the brisket here just feels disrespectful. The atmosphere was okay. Clean and had a lot of local decor in the dining area. I went with the 3-meat sampler dish with chicken, pulled pork, and brisket with beans and potato salad as the sides. Overall...the meal was OK. Everyone was friendly and the atmosphere was exactly what you'd expect in a divey, local BBQ joint. I had the brisket and sausage (made locally in Kerrville), and my husband had the ribs. Where to begin? None of the meats are seasoned well and they lacked the smoky flavor promised by the stacks of wood outside. I asked if the sides were made in house and was assured they are. The potato salad is, for sure, out of a carton - both the potato texture and flavor made me think of prepared grocery store quality. The cole slaw was fresh, but had no flavor. I had to heavily salt and pepper everything to eat it. Even the beans were straight out of a can. Unfortunately, their homemade sauce didn't make any of it more palatable. It's thin in texture and flavor. Little to no sugar, no cayenne for heat, no vinegar to balance. Just a red sauce that didn't taste anything akin to barbecue sauce. Bill's Bar-B-Que is a perfect representation of Texas BBQ, served casually in a side-of-the-road shop with walls plastered in old photos and meat-related memes. It was truly a delicious meal! No frills, no fluff, just juicy and tender meats perfectly smoked and grilled to perfection. The two meat plate, with bread, two sides and unlimited sauce, was large enough to split (although I would have happily eaten more if it had been at my fingertips). We chose the brisket and the baby back ribs. The brisket was tender, fatty (in a good way) and flavorful. The ribs were so well-done than the meat was falling off the bone as soon as you looked at them! The coleslaw was a tad too sweet for my liking, but added a nice crunch to the meal. The beans played nicely with the rest of the food and really shined when mixed with the bbq sauce. We didn't try any desserts but I'm sure they would have been great as well. Wow! Fantastic BBQ served in a casual but, nice atmosphere. We tried the 1 meat plate... pulled pork, beans and potato salad. Also the brisket, coleslaw, and potato salad. A little conflicted. The hill near our house was on fire, so we decided to get food for the firefighters that were working. We spent $300 and left a very big tip. On the way out, there was a stack of 300+ styrofoam plates, i asked if i could grab some and they said no and wouldn't let me have any because i am getting the food to go. I feel likes it's the equivalent of going to Starbucks and getting a drink and not being allowed a straw because i got it to go. The Turkey also was not even warm. They have also been rude to my dad in the past who was a frequent costumer, so much so that he will not go back ever again. I know in the grand scheme of things one customer isn't bad but you don't wanted to be treated like a nuisance when you're buying food. On the other side of things, the food is always good. First, the people who work here are extremely nice! I am never disappointed by this BBQ, and I believe this place is the hands-down best BBQ in Kerrville. I enjoy their chicken the most, followed by brisket (ask for fatty) and then the jalapeño sausage. I don't have much experience with buttermilk pie, but I was thoroughly impressed with theirs. I prefer to take my meal home since I'm not a fan of staring at stuffed animal heads in their dining room while eating meat.... Great place to stop if you feel like some Texas BBQ! read more

Out of all the BBQ places I've eaten, San Antonio, Austin, Victoria, Houston, etc., this would be in the top FIVE! Watching them chop/cut the meats had my mouth watering. Arriving at Bill's I see a rustic building with limited parking on the street up front, but I notice there's a single lane driveway leading to additional parking in the rear. As I navigate the narrow lane I notice a similarity to Cooper's BBQ in Llano - outdoor smokers under a covered patio. It's similar, but smaller, with far fewer smokers. The unmistakable aroma of meat and burning wood fills the air. Stepping inside, the room where you order the food is a little cramped, but I'm immediately welcomed by the friendly server who offers to fix my lunch. I think I want the two meat plate. It comes with a couple sides of my choice. Hmmm.. How do I chose? Chicken, Brisket, Ribs, Sausage, Turkey, Pulled Pork - they all sound good. (Pulled Pork? What's that doing here? Isn't this Texas??) I'll take ribs and fat brisket please. She's weighing the meats as she puts them on my "picnic style" divided section sturdy paper plate. That looks like a lot, maybe more than I can eat. She hands me the plate and instructs me to help myself to the sides. Sliding down to the sides I discover a bucket of potato salad, a bucket of cole slaw, and a bucket of pinto beans. I can have as much as I want? As much as the plate will hold? Well, thank you very much, I think I will. A ladle of cole slaw and a ladle of beans fills the dividers in the plate. Maybe one more ladle of beans. A little more cole slaw too. The food begins to run together like a Thanksgiving Dinner helping. Yes, that's perfect. With cole slaw falling off the heaping pile on my plate and onto the counter top, I round the corner to the BBQ sauce, onions, and pickles. A handful of pickles and a plastic cup of sauce. I grab an ice tea, pay for my meal and walk the tray to the dining room. Should I sit on one of the outdoor picnic tables, or on an indoor picnic table in the dining room which is covered with mounted heads of trophy animals? It definitely looks like Texas in here. I think I'll sit inside today. After my first bite I know I'm in for a treat. The fat brisket is smokey and flavorful, and incredibly tender rib meat falls off the bone with a simple tug. I'm originally from Kansas City, so I'm a bit of a rib snob, but these ribs are good, really good. Bill's ribs don't taste like KC ribs (Bill's serves Baby Backs rather than the Spareribs that are popular in KC), but they are lip-smacking, boot-stompin' tasty and delicious. The sauce is rather average and doesn't do much for me (my only extremely mild complaint), but there's plenty of Cajun Chef on every table to satisfy the true Texans. Maybe I should stop at half a plate and take the rest home? I could save the leftovers for dinner and share a taste of this Hill Country BBQ gem with my wife. Mmmmm, it's so good. Just one more bite. Maybe another bite... and another. Now there's not enough to take home, I better keep eating. Looks like I'm not going to have any leftovers for dinner tonight. If my wife is reading this - sorry.
