    Cubano Sandwich

I went to the Slab in its current iteration as a popup inside Cora Pizza in Cap Hill. Around 12 on a Saturday there was 1-2 people also eating in the restaurant during Pride weekend, so it was quiet and plenty of seating. I still placed a to go order. My food took a bit over 5 min to be prepped. My sandwich was nice and warm when I got home about 30 min later. And this sandwich was absolutely amazing, and I'm planning to go back ASAP. The sandwich isn't huge, but the meat was so flavorful and juicy, and the toppings were a great addition, and I was left satisfied after I finished eating. I also really enjoyed the salted chocolate chip cookie. Overall a great sandwich, highly reccomend!

We visited Slab Sandwiches at their new location for a Saturday lunch and found the place completely empty. They have plenty of seating inside, albeit in a very dark and dreary kind of atmosphere. It seems like they brought over the dim lighting from a typical fine dining establishment rather than the more brightly lit modern counter service places. We placed our order at the stand near the kitchen and had our food within 15 minutes. Fried Chicken Sandwich ($16) - The fried chicken seems to be a boneless, skinless chicken thigh covered in a very delicately crisp breading, thin and almost glass shattering-like in texture. It's topped with a cabbage slaw that includes plenty of dressed cabbage that exhibits a robust crunch, crunchier than regular sliced cabbage somehow. Some pickles, piquant, but not especially crunchy, line the top. This is all on an exceptionally soft and puffy bun, toasted on the edges to give some textural contrast. The bread is rectangular, which sometimes is a problem for sandwich construction - in this case, the chicken is trimmed so that it fits quite well with the bun. While they slather a ghost pepper dressing on the bun, it's not overwhelmingly spicy at all. Everything comes together well, creating a nice bite with plenty of flavor and textures every time. (5/5) 12 Hour Brisket Sandwich ($17) - This uses the same pillowy bun but swaps the fried chicken with brisket and the pickled cucumbers with pickled peppers. The brisket is amazing. It's not like brisket from a BBQ restaurant at all but it's still cooked absolutely perfectly. It's so tender, so fatty, so rich. I have no idea how they cook the brisket - it's clearly not smoked. Perhaps sous vide and then baked afterwards? It's placed on a bun that is slathered with a smoky aioli, which I believe is actually smoked (rather than liquid smoke added) given the robust woody flavor. It's a high quality aioli that only enhances the brisket. The pickled peppers are only slightly spicy, less so than the ghost pepper dressing in the fried chicken sandwich. They're actually a bit crunchier than the cucumber pickles and have a more pronounced vinegar acidity. This sandwich is extremely rich and heavy yet not oily or greasy. It's so filling that that it's actually difficult to eat more than a couple of bites. I ate half the fried chicken sandwich and couldn't get through more than a quarter of this sandwich before feeling kind of sick. My wife couldn't stomach more than a few small bites. (5/5) Lark Crispy French Fries ($6) - The only miss of the day. "Crispy" french fries? More like soggy. These are definitely underfried, leaving them floppy and listless. There's no crisp to be had anywhere, and the interior of the fries remain firm in texture rather than softening to a tender fluff. The fries are served with standard ketchup and a scallion aioli. The aioli is very lemony and really reminds me of tartar sauce in taste. Interesting, but not a flavor profile I enjoy that much with fries. (2/5) The sandwiches Slab serves are very high quality. While they look small, they pack a punch. It's difficult for me to expound on how great the 12 Hour Brisket is - it's the best sandwich I've eaten in at least the past year. I will definitely be back in the near future to try more. I'll be avoiding the fries though! Bathrooms - Two unisex rooms through the kitchen doorway to the left

A pretty good place for well crafted sandwiches. I wonder if this restaurant shares space with a different restaurant at night because they had a paper sign on their door and looked a bit impromptu. You order at the counter in the back and self serve water that's already set out. We ordered the brisket sandwich and order of fries. The brisket was super tender and flavorful. On a slightly toasted ciabatta role with some gardineea inside. The fries were enough to share for three and crispy, came with ketchup and aioli. The restaurant was pretty empty and felt a little haunted. The food was good!

If not for their unusual hours (and I understand that Slab is something of a side project for Lark), I'd eat here often! I've been to Slab a few times now, and every time it's been impressive. Operating inside of the restaurant Lark, Slab is only open 11-3pm Monday through Saturday. It's got a very peaceful interior, clearly a nice restaurant during its normal hours. The food has always been exquisite, and I particularly recommend the brisket--I didn't realize how much I could like a sandwich until trying it. Far and away my favorite sandwich place in Seattle!

This lunch spot is excellent! Each sandwich is fresh and crafted perfectly. Truly some of the best tasting lunch sandwiches I have had. Much better than most spots. I got the 12hr brisket sandwich and it was soooo good. Nice interior. Good service. Little confusing on like the slab + pizza place and what is what.

The Cubano and the Special were both very special. Props on their cut-the-sandwich-in-half skills so my buddy and I could properly and optimally share.

Was in the area and grabbed a sandwich and a cookie to go! Good sized sandwich for one meal, and definitely packs a punch with flavor! I got the burrata sandwich, my friends got the brisket and cubano. All were amazing!! Will definitely be back

WARNING: AFTER READING THIS REVIEW YOU WILL WANT SLAB TO CATER EVERY FUTURE EVENT! Updating to include my AMAZING catering experience with Slab for my graduation party! As a big fan of their sandwiches, I was delighted to hear that they offered sandwich platters. I worked with Allison from start to finish and having nothing but kind words to share about Slab's customer service. I ordered sandwiches for 50 people and the portions are so great that we had several leftovers (aka hangover cure ). Each sandwich was cut in half and wrapped on the platter. They took such special care to label each sandwich type and even separated the vegetarian options which made it so easy for my friends. All of the guests were raving about the sandwiches throughout the party! They accommodated my party time even though it was outside regular business hours and every member of the staff congratulated me when I picked them up. Thanks for making my day so special!

Gosh this is going to be a long one. I've been coming here for a few years now so this place has a special place in my heart. Slabs in Capitol Hill is hands down the best sandwich spot in the entire Pacific Northwest! Bold claim, I know. Hear me out. From the moment you walk in, the aroma of freshly baked cookies and savory sandwiches fills the air, creating an irresistible temptation. Let's talk about their Fried Chicken Sandwich - oh my FREAKING goodness. People ask me what's my all time favorite sandwich. As much as I want to gatekeep, I can't. The Fried Chicken Sandwich from Slab Sandwiches + Pie. The chicken is perfectly crispy on the outside and juicy on the inside, with just the right amount of seasoning to entice your taste buds. The addition of pickles and slaw adds a delightful crunch and tanginess that complements the chicken beautifully. From the perfect amount of spice, to the soft yet toasty texture of the bread and crispy batter on the chicken. Each bite is a melody of flavors that leaves you yearning for more. And don't even get me started on their Salted Chocolate Chip Cookie! I didn't get it this time because they were out, but trust me when they have it, you NEED to try it. Ordering your meal without the cookie should be illegal. It's sheer indulgence in every bite. The cookie is soft and chewy, with generous chunks of chocolate and a sprinkle of salt that elevates the sweetness to a whole new level. It's the kind of treat that you'll find yourself dreaming about long after you've devoured it. For as simple as it is, no other cookie franchise can compare! The staff is friendly and attentive, adding to the overall wonderful experience. Shout out to Allison for being such a chill and AMAZING host! Whether you're a local or just passing through Seattle, do yourself a favor and make a stop at Slab Sandwiches + Pie. When I say this is a hidden gem, this is definitely THE gem worth discovering. No if's, and's or but's.

Wow, spot on sandwiches and great idea from the owners of Lark to run this sandwich offering for lunch. Service was quick, no frills and you can be done in under 30 mins at lunch time. The sandwich bread itself had a nice inner crunch and soft outside, with the brisket juicy and tender. The special tsatziki chicken was delicious too and would definitely come back to try the others!

Burrata sandwich. Made with Mama Lil's peppers, tomato, balsamic reduction some herbs and bitter lettuce. So so good
    Ashley K.

I'm a sucker for a good sandwich, and this place totally hit the spot. I had been looking forward to a nice summer burrata sandwich for a while, and after a peek at their menu, I was on a mission. I got it to go with one of their famous chocolate chip sea salt cookies. (Also the person who took my order was super nice and down to earth. Points there, too.) The sandwich had the perfect balance of flavors that were loud but also somehow didn't overpower that nice, fresh, creamy burrata - the star. That cheese was wonderful and gooey but didn't make the sandwich a total mess. The moisture wasn't overdone and didn't make it fall apart, an impressive feat for how much juicy veggie goodness was on it. The bitter lettuces, the Mama Lils peppers, the herbs... it was all perfect. Finished off with some great balsamic glaze. Would definitely recommend if you're looking for a decently priced, satisfying sandwich made with love. The cookie was great, no bones about it, but the salt was a little piled on in one spot. If there was absolutely anything I'd critique it would be to have that not quite so concentrated in the center of it. But I love a salty cookie, so... Yeah, go and get it!

Phenomenal sandwiches! My favorite sandwich is the brisket sandwich; I get it every time! It's so flavorful and juicy. Also, JM's chocolate chip cookies are to die for!!!

From the outside, it looks like a hole in wall but once you enter the building, it's very upscale and clean. The sandwiches are delicious but on the small size given the price. But I would definitely come back. Ordered the brisket and burrata. The beef was super tender and seasoned well. The burrata was so good. I want to try the cubano the next time around. The pics are pretty much on point

The mixed berry bingsu was my fave! The berries were fresh but the best part was the ice cream! Super flavorful and I loved the fruit syrup too. For both, the bingsu itself is very light in flavor and texture. It melts in your mouth and pairs well with the toppings, especially that sweetened condensed milk.
