I went to Hutchins BBQ thinking I'd grab a quick bite…read more What actually happened felt... intimate. The pork ribs arrived first--glistening, smoky, practically begging for attention. One touch, and they gave in completely. No resistance. Just tender, juicy surrender. I leaned in, and suddenly it was just me and those ribs, no distractions, no dignity left. The kind of experience where you stop caring who's watching. Then the mac and cheese. Soft. Creamy. Rich in a way that feels almost too indulgent. It coats everything slowly, deliberately... like it knows exactly how to linger. Each bite deeper than the last. I didn't rush it. You don't rush something like that. The green beans surprised me. They had bite. Confidence. A little snap that kept things interesting--like a playful contrast to everything else melting around me. Not innocent. Not at all. And then... the tangy pork sauce. Sweet, smoky, just enough sharpness to make you react. I dipped once. Then again. Then I stopped pretending I had any self-control. It clung to everything in the best way--bold, unapologetic, unforgettable. By the time I thought I was completely undone... they handed me free banana pudding. Cool. Smooth. Soft in all the right ways. A gentle finish after everything that came before. I slowed down. Let it linger. Didn't want it to end. I left full... flushed... slightly overwhelmed. Hutchins isn't just BBQ. It's an experience you feel in your whole body.

The second time we took the family there the wife and kids got chopped brisket sandwiches which were good. I got the brisket and jalapeno sausage. Sadly, while it had a good char the brisket was dry as heck. Not good for a signature item on the menu.

It's anything but small when it comes to flavor and portions. The fried Brussels sprouts are incredible--packed with flavor and easily one of my favorites. The green beans with smoked turkey are a must every time; honestly, even a medium isn't enough for me. I could finish a large on my own without a problem. And the turkey leg? Huge. It's easily enough to share with two or even three people. It's comforting to have a place like this right here in our town. If you love barbecue and Southern food, this spot is absolutely worth trying.

The meats come on top of Mama's beans and 2 small loaf pan sized cornbreads. The jalapeno cheddar sausage was sliced it into bite size peices and it tasted great, the casing was snappy and sausage was full of flavor. Reminded me of Dickey's sausage that we used to buy in the deli meat section from Kroger. The brisket was tender and easy to eat and it was not very smoky. The mama's beans tasted like Ranch Style Beans and I like those kind. Cornbread was cornbread, no bells or whistles. I would call this food Home Cookin. Tasted and presented a whole lot like what I cooked for my kids when they were growing up. Also I got 1 pork rib. It was a big rib and a darn good one. The experience was nostalgic and made me leave happy. My hub got the dessert brownie and loved it. He took one bite and looked at me like Guy Fieri does on this show when he tastes something insanely delicious.

We just…read morewanted to share one small meal together and the NY strip and Large Caesar salad were plenty to feed two people. The steak was super flavorful and was cooked to perfection. It was a warm pink middle and a crusty exterior. The sauces were a great accompaniment. I didn't much care for the red wine reduction, but the chimichurri and the creamy horseradish were outstanding. The Caesar salad was delicious and executed well. All the food hit the spot and made me want to try even more of the menu. Our waitress was very kind and had the southern hospitality and accent down pat haha! She gave us fast service and was very attentive. The unique factor for me here was the back story. I heard the owner has a ranch up north which is where the meat is sourced from and he also has a Local Yocal Farm to Market shop close by the restaurant which I'm looking forward to checking out as well. I give it a five stars because I am looking forward to going back for more delicious food and sharing the meal with friends!

The cooks know what they are doing. But just keep in mind that this is on a farm in the middle of Princeton Texas. And there were flies EVERYWHERE. You will see them fly and land and walk around all over the uncovered food. All of them. And nobody cared. So note to self. Lechon is $20 a pound. When I was there they maxed at 2 lbs per person. Some people called ahead. But be informed with their process on their Facebook page. Grilled squid was my favorite. It was $20. Not all options they pictured on their Facebook page that they stated were available actually are. I was looking forward to some pork blood stew and some barbecue pork on a stick and they didn't have any even tho it was mentioned that it would be there. Their process is not efficient as of yet so it takes a while to actually order and then pay for your food. So if you are in a rush- this is not a good idea. There is a little karaoke stage next to the open kitchen. A little stall with desserts being sold. Which were delicious!!! The Ube Leche flan was legit.
