Here is the review with the burger worked in. --- I spent today at Brisket School at Vaqueros BBQ, and it was my Father's Day gift. The class was taught by the great Trey Sanchez. Let me start with the most important thing I can tell you. If you have never eaten at Vaqueros, you are missing out. Vaqueros and Hutchins are the two best BBQ joints in Collin County. But Vaqueros has a twist. Their barbecue is competition grade, and they also happen to run one of the Top 50 taco spots in the entire state. Do not take my word for it. Ask Texas Monthly. Want to know why the tacos are that good? It is the brisket. Trey uses every last ounce of it. The trimmings end up in the sausage, the burgers, the tacos, and the consomé de res. They go into the tallow too, and if you ever order the fries, you will understand. You will want more. His suadero tacos are something special, and that is just the beginning of the menu. Speaking of burgers, do not skip his. It is outstanding, and it is made with, if you guessed brisket, you would be right. So here is my advice. If you are thinking about wandering next door to Village Burger Bar, stop. Get a burger from Trey instead. His beef is ground fresh daily, and the pickles and the mustard are made in house. It is in a different league. Now the class itself. What Trey taught me about trimming a brisket, treating it like a steak, seasoning it, and wrapping it, those are lessons any wannabe pitmaster will cherish for life. And here is the part nobody warns you about. Trey is a phenomenal storyteller. He knows everyone in the Texas barbecue world, and his stories alone are worth the price of admission. Let us talk about the food. Do you love barbecue? Vaqueros has it. Brisket, ribs, turkey, and two kinds of sausage, and every one of them is excellent. The smoked pork carnitas are pure heaven. Arrived around 1:00 p.m. and were pleasantly surprised to find no line. Most of the tables inside were occupied, and there was an adjoining overflow dining area that didn't appear to be open--but it wasn't needed. We opted to sit outside despite the heat. Thankfully, there was plenty of shade from umbrellas, and it was a great spot for people-watching with lots of foot traffic passing by. Now for the important part--the BBQ. My son and I split the two-meat plate with brisket, pork ribs, mac and cheese, and beans. The brisket was legit--moist, flavorful, and with a nice bark, although I would have liked it a little crispier. The pork ribs were just okay; they were a bit on the dry side. That said, their BBQ sauce was excellent. I'm usually not one to sauce good ribs, but in this case it definitely elevated them. The mac and cheese was probably the biggest surprise. It was rich and gooey, topped with feta, chives, and shredded cheddar. Not a combination I would have expected--or ordered--but somehow it really worked. The only real disappointment was the beans. They arrived cold and were a bit bland, especially by Texas BBQ standards. Overall, it was a solid 4-star experience. When in Texas, I gotta find Brisket... Vaqueros was close to my hotel and was on a short list from my Dallas Yelp Friend Ricardo J. He highly recommended Terry Blacks but the idea of sitting in Dallas traffic after sitting in Dallas traffic didn't appeal to me. I always like variety, so I ordered a Meat Plate with Brisket, Turkey, Hot Link, Garlic Bread, Mac N Cheese, and Slaw. Man, what a plate of food. The Brisket was good and better than most that I've had, but not the best. The hot link was super dry and pretty much inedible... Blech. The slaw was weird with some fruity notes to it. The Mac n Cheese was delicious, as was the garlic bread! Gotta love carbs! However, that Turkey was one of the best pieces of turkey I've ever eaten in my life. It was so flavorful and moist. It was glistening in the light like Phoebe Cates coming out of that pool in that Fast Times movie (a boy remembers). I love the big cup they had for soft drinks as well as the hot BBQ sauce (temp, not spice). I wish they had multiple types of sauce though. As we make our way through the D magazine top 10 best new restaurants, we decided to stop by Vaqueros. The reviews seemed to indicate we would be in for a treat, especially because of the mashup between bbq and Mexican cuisines. Worried that we would be in for a wait we were pleasantly surprised that the restaurant wasn't has busy as we expected. Mindful that we showed up at 11:45am on a Saturday. One at the counter we could see some of the meat trays being prepared and the sides. Shame there were no tasters offered as is usually the case in other bbq spots across Texas. Anyhow so we ordered the Texas tray, a combo of brisket, hot links and pork ribs with 2 sides of apple Gorgonzola slaw and Texas beans. And as a lover of Mexican food, I had to order a bbq birria and carnitas tacos. First up was the carnitas, great flavor, well filled and the green salsa was superb. However I found the pork cubes to be too big for the taco which meant they are very fatty and not crispy enough. Second was the bbq birria taco which came with a nice side of consume. Again great flavor, but some cheese (even optional) would be nice. All in all tacos had great flavor and I would order them again. Maybe next time if they are ordered alongside a bbq tray, they can working on timing the prep as both tacos were a little on the cold side. Now on to the Texas tray. The hot links, tasty, spicy but we did find the casing a little tough. The ribs were the star. Fall off the bone tender, great smoke and thank god they were not smothered in bbq sauce. As for the brisket, as I prefer lean brisket, I was reminded that we were not given the option lean or fatty when we ordered. The brisket was flavored well and thank god there wasn't an excessive presence of salt. The meat was very tender and paired very well with their house made bbq sauce. Now the sides, the apple slaw was phenomenal and something I am going to try to make at home. It could have done with a little more Gorgonzola but that is because I love blue cheese. And the beans, scratch made as you can see the chiles and taste that it has been cooking for hours. The dining rooms are spacious and nicely decorated. As a Cali native, everyone always tells me I have to go to Texas and try the BBQ, but I honestly didn't understand the hype until I came here. This is a new restaurant. They started out as a food truck enterprise. I love the location. There are 3 dining areas, the main dining, the large dining area which hosts live music . Then there is the outdoor dining area. This area is bustling with shopping and dining experiences. Everything we had was tasty. The Cole slaw was unique and delicious. The Mac n cheese was good enough. I had the smoked turkey and the carnitas taco (technically a tostada), our food was a little slow (still shaking down the food service line) and therefore my taco was a bit too soggy to pick up successfully in one part. Everyone loved the sausages, The brisket had a good smoke ring. The best value from my perspective was the brisket nachos, they were huge! Management needs to refine the dining room a bit. I had to go to the counter to get napkins, there were none outside on the table; like inside. The order spot is also the pickup spot which is not good. Several menu items have been struck down permanently. To my personal disappointment the smoked chicken was also struck off the menu; still scratching my head on that one. They did have a solo musician performing in the big dinning hall. We love live music I'm going to reserve judgement for another 6 months.Vaqueros has some very good competition nearby. Wow! What a place - I remember, back in the day, when I would wait at the gas station to make sure I could grab some bbq before they sold out. THEN, I followed them to brewery to keep myself in best damn bbq I have ever eaten.. more more more - the offerings kept expanding and every item was a tastebud party . This new spot in Allen, Texas felt like I had just entered bbq heaven - everything was there - the service has always been the best and the proteins - no matter what form or which you order - are clearly a labor of love and a work of art. TLDR: Amazing hospitality and great BBQ with twists I can't emphasize enough how amazing the hospitality is at Vaqueros. My party and I came by half an hour before opening and Trey let us in early and hung out with us until opening time. The staff were incredibly friendly and helpful in every interaction. The brisket, sausage, turkey were all smoked as well as you'd find in the best places. Everything is made with quality ingredients, especially evident in the beautifully marbled prime brisket. Vaqueros is significantly less salty than other BBQ joints - really letting the meat shine. They also do great tacos and burnt ends. These both stray from your standard joint - the pork belly burnt ends are closer to chicharrones than the typical sauced / glazed pork belly bites. If I was in the area I'd definitely be coming back. Vaqueros is a wonderful representation of the community with some great food. Extra: Vaqueros has an amazing indoor smoke room rather than an outdoor setup. When we visited on a Friday evening at around 6:30pm, there were only a few people in line and plenty of empty tables to go around. When you get to the front of the line, you order meats at the first section of the counter and then you order sides, tacos, and any other dishes at the check out counter further down. For BBQ, we got their prime brisket, hot link sausage, and pork ribs with mac & cheese and fries. The brisket was nice and tender and it was probably my favorite out of all three meats. Both sides were just okay in my opinion and not a stand out. Service was great and the atmosphere and location are awesome. Even some of the sides and the prime brisket was incredible but after an $82 bill for 3 people, the food wasn't as up to par as I'd hoped. Maybe it was because it was 230pm and after the lunch rush on a Saturday and during a Mothers day craft show at Wattera Edge, but for what we paid, I wasn't impressed. The burnt ends pork was barely edible. It was so tough it felt like id Crack a tooth. The sauces covered up the actual pork flavor and didn't compliment it. It was drowned in sauce. We also got the regular pork and it was so gross and fatty that it bled through the butcher paper. I don't think there was actual meat in the portion they gave us. We tried the elote and it was OK. The beans, Mac and cheese and potato salad were honestly better quality and flavor than the meats. I will say we ended up getting the first slices off rhe prime brisket and it was phenomenal. Also the staff is super nice but for what we paid, I was expecting alot higher quality bbq. Maybe well try again on a less busy weekend. Happy to have local bbq and it's super creative. Here's what works- great location at the corner of Watters Creek retailing on the parking lot. Great outdoor seating and access from the bike path. Plenty indoor seating as well with super cute cowboy decor. Wood plank tables and even big screens playing white washed westerns. Like many bbq joints you order at a meat counter and walk through a line and pay at the end of the line. (If you want an alcoholic beverage you have to order at a separate window) . You get a buzzer, seat yourself and wait to be called to another window to pick up any remaining items. In terms of alcohol there is a limited selection of bottled beer, and a margaritas from a countertop slushee style granita machine. The food is good. We had several different selections. But it was too much. We all overate from huge portions and felt unwell due to rich food overeating. What would I change besides the food portion size? The bbq sauce was a tad too sweet. I went to Vaqueros BBQ and it was smoky, cheesy, and slightly confusing, kind of like my dating history. The brisket gets an 8 out of 10. Juicy, tender, and smoky enough that I briefly considered writing it a love letter. The chipotle cheese sausage also gets an 8 out of 10. Basically a tube of molten cheese disguised as meat. Not too spicy, which is disappointing if you enjoy pain, but comforting if you do not. The BBQ sauce tasted like someone spiked a fruit punch with just enough heat to make your grandma nervous. Sweet, a little spicy, and weirdly addictive. The bread was white, soft, and about as thrilling as an HR meeting, but it did the job. The birria tacos were good and flavorful. My friend insists that dipping tacos in broth feels like tortilla water aerobics, but I actually enjoyed them. They were not mind blowing, but I would not be mad if they showed up on my plate again. The sides had range. The apple Gorgonzola slaw was really good and refreshing, the kind of side that makes you briefly think you are making healthy choices. The spicy cucumber salad was the real star, refreshing and balanced with heat, even better with pickled onions. I would order it on purpose. The potato salad was mid. It existed. It was beige. It tasted like it was made by someone who got bored halfway through seasoning and decided to give up. Service was quick, the crowd was chill, and they had five dollar drink specials for the people who wanted to leave tipsier than they arrived. I've been hearing great things about Vaqueros since they were a food truck out in Grapevine, so when I learned they opened a brick and mortar location so close to where I live, I absolutely had to go and sample the goods! My cousin, my husband and I stopped by on a Monday afternoon around 5:30 and the space was pretty empty; it's a huge restaurant so I do hope business picks up and/or is more busy around lunch time or during weekend hours. We tried a little bit of everything, starting with a Taste of Texas platter that came with brisket, ribs, two types of sausage, and two 16oz sides (we picked the beans and the potato salad). Cucumber salad we added on the side, and we also tried an order (single taco) of their birria and an order of the elotes, plus the banana pudding for dessert. My cousin arrived a bit later than us and added on some turkey and the carnitas. The great: LOVED the barbecue sauce, omg. The brisket was super tender and moist, and I loved both sausages we tried. The turkey was also super flavorful and moist, would definitely come back just for that. Carnitas I'm used to being presented pulled pork style but I really enjoyed Vaqueros's version! And the grilled Texas toast went really well with everything. Room for improvement: elotes were solid, but lacked a bit of flavor - I would probably not order this again. Ribs were rather dry and tough. Birria came in a hard shell taco which was a little odd to me, and the flavor was also just okay. I'm usually a big sides girl at BBQ restaurants but the other sides we got were also just alright -- beans and potato salad really lacked flavor. The cucumber salad had decent kick but the actual cucumber itself tasted like it'd be sitting in the brining liquid for a while because instead of a nice crisp crunch, it was pretty soft. Maybe we came on an off day for sides but I'd try some other ones next time. It's just a little disappointing considering I was excited to try this place because of the interesting things they seemed to be doing with Mexican + BBQ fusion, but most of the Mexican inspired items ended up falling a bit flat for me (the only consensus hit was I think the carnitas). That being said: all in all still a great place to grab some excellent meats and super convenient for us. One of the owners came over to see how we were doing after our meal and I thought that was a nice touch; he also mentioned they're looking to start selling their barbecue sauce soon! This was my second time here so I got all different things from what I had before. I enjoyed the rib... lol and the potatoe salad was as good as home made. I took a break from eating Bbq after completing the Texas Monthly Top 50 recently and decided to re-enter the game by trying Vaquero's finally after all the buzz Ive been hearing about. Well, it' wasn't great sadly. First and foremost, all my food was cold. $77 dollars for cold bbq. The hottest thing I had on my tray was the bbq sauce they served you off the steam table. Brisket was not bad, but my two pieces had a lot of inedible gristle and again, was cold. The ribs were sitting out on the cutting board on the counter for some time. So yea, cold and rubbery. The sausage of the month, which was the frito pie sausage, was actually the high note of the meal. It was hot thankfully and really flavorful and delicious. The three cheese mac was not anything memorable or special. Thick noodles, gloppy sauce, and yea cold. Cucumber salad was actually kind of nice. Something that was intentionally made to be served cold was light and crisp and cleansed the pallet well. The Al Pastor Pork Belly Burnt Ends had me scratching my head. They were not burnt ends. These were crispy deep fried pork belly chicharrones and were not smoked at all so I am not sure why they'd call them burnt ends. The crunch on them was nice but they completely lacked flavor. They were served with barely a tablespoon of a sauce that would make it Al Pastor and it was under the pork belly so it was hard to eat. Last was their Texas Monthly Top 50 Barbacoa taco. If this taco is traditionally meant to be eaten with a knife and fork because it's completely covered in sauce and hard to pick up, then that's fine I guess. But guess what I'm about to say, it was cold. Ambiance was cool, nice and clean restaurant. The woman who worked the register never lifted up her eyes to acknowledge us as we were paying. The whole experience for me was underwhelming and with so many other options out there... you know the rest. read more

Clean, open dining area with ample seating inside and out. Ordering set up isn't clearly laid out which makes the ordering flow feel clumsy. We ordered the Grand Tour which fed 5 meals. Lean brisket is drier than I would like and lacked seasoning. Ribs were meaty and tasty. Birria lacked the depth of flavor normal found after hours of slow cooking. Birria dipping sauce was void of chili flavoring. Mac&cheese tastes like a kit, not homemade. Beans have a spicy kick. Taters were overcooked in places. read more
