I got all the fixins on my potato (cheese, chives, bacon bits, sour cream) and chose brisket & jalapeno sausage. I didn't plan to eat the whole thing but I it was so delicious I had to! :) Besides all the typical soft drink options, they also have koolaid available which is a fun option. I thought it was cool how they had an old western movie playing in the dining room too. The decor in there makes it cozy and the employees are very efficient & friendly. They have a good amount of seating available inside and a table on the patio too. I will definitely be returning to this spot to try more specials and the banana pudding! :)

We ordered 1/2lb of brisket and 1/2lb of ribs just to give it a try. The verdict.... The brisket was very tender but still held its form. Nice thick slices served with pickles, bbq sauce, onions and sliced white bread. The flavor was amazing, nice bark and definitely not salty like other bbq spots. Then the ribs, tender and with little effort come off the bone cleanly. Nice smoke rings however we found it lacked flavor. Maybe a little more seasoning and salt especially as I like a dry rub. The serving was accompanied by the usual, pickles, onions, bbq sauce and white bread. It also had a sweet dipping sauce which was a nice surprise. If there is one little request, I would ask for some jalapeño or banana peppers to add a little kick. But for a quick tasty bbq bite, I would definitely recommend stopping by Meat Juice. By the way it's a little cheaper too

Let me start with the most important thing I can tell you. If you have never eaten at Vaqueros, you are missing out. Vaqueros and Hutchins are the two best BBQ joints in Collin County. But Vaqueros has a twist. Their barbecue is competition grade, and they also happen to run one of the Top 50 taco spots in the entire state. Do not take my word for it. Ask Texas Monthly. Want to know why the tacos are that good? It is the brisket. Trey uses every last ounce of it. The trimmings end up in the sausage, the burgers, the tacos, and the consomé de res. They go into the tallow too, and if you ever order the fries, you will understand. You will want more. His suadero tacos are something special, and that is just the beginning of the menu. Speaking of burgers, do not skip his. It is outstanding, and it is made with, if you guessed brisket, you would be right. So here is my advice. If you are thinking about wandering next door to Village Burger Bar, stop. Get a burger from Trey instead. His beef is ground fresh daily, and the pickles and the mustard are made in house. It is in a different league. Now the class itself. What Trey taught me about trimming a brisket, treating it like a steak, seasoning it, and wrapping it, those are lessons any wannabe pitmaster will cherish for life. And here is the part nobody warns you about. Trey is a phenomenal storyteller. He knows everyone in the Texas barbecue world, and his stories alone are worth the price of admission. Let us talk about the food. Do you love barbecue? Vaqueros has it. Brisket, ribs, turkey, and two kinds of sausage, and every one of them is excellent. The smoked pork carnitas are pure heaven. Looking for something a little different? Get the brisket nachos. They come loaded with chopped brisket, queso, beans, pico, and all the fixings. Fifteen dollars. You can feed a family of four with one order. They have beer, margaritas, and a bourbon lemonade that is genuinely fantastic. I will say it one more time. You are missing out if you have not been. Again, they were generous with the sauces and jalapenos, and that made these even better. The pork is smokey and pretty good with bbq sauce minimally dispersed throughout the sandwich. I knocked down a star because I'm sure there's better out there, but I was hungry and it was satisfying. The bun was soft and complimented the pork well. My friend had a small pork belly bun with added garnishes (didn't really pay attention because like I said, I was hungry) which she said was ok; although for $4 it was a little small. However, the bun was under performing, as it tasted and looked like it had been frozen and just thawed out. Yuck. I can't judge a truck based on one encounter, so I hope I can try the other selections next time. I love seeing the food truck industry blossom and boom. It's a foodie's dream come true.

Anyway, I heard the woman a few orders before mine ask if we had to do the tacos x2 (on the menu, they're listed as you getting two of the same tacos). He said you could mix it up if you wanted to try different tacos. When it was my time to order, I asked if I could do that as well, and he said I could. I ordered the sloppy taco and the fried avocado taco. Both sounded delicious, and I was going to share them with my girlfriend. She wanted to try those as well (I ordered before she texted me back... But luckily I ordered what she wanted). If you order two tacos that are different, they'll charge you the higher price of the two. That's totally OK with me, but just a heads up. They give you one of those alert squares that lets you know when your order is ready, that way you can go back to your table or whatever. I just hung out there and waited with the rest of the folks who had ordered. My buzzer went off, and I went to get my tacos. Instead of getting a sloppy taco and a fried avocado taco, I got two fried avocado tacos. They were busy, and I was content with getting two fried avocado tacos because they still looked delicious. The tacos were great. Nice crisp to the avocado. Flavor was spot on. Definitely worth checking out if you get the chance. Just thinking about them right now is making me hungry.
