My friends and I were on our way to Little Alley, a Shanghainese restaurant that's been a Murray Hill mainstay for years when we pivoted to Shuya because we peeped their sign saying they billed themselves an "omakase noodle restaurant." We were guided toward the back, past white marble tables with beautiful mustard colored velvet chairs to the long countertop facing the open kitchen. We scanned QR codes to pull up the menu, and despite no omakase noodle offerings to be found, decided to stay because the menu options they did have sounded too good to pass up. Of course they had classic shio and miso ramens, but they also had a duck tsukumen, a red snapper ramen, a black truffle ramen, and the dish I set my sights on-- the uni mazemen. There were also lots of appetizers and a long list of high end onigiri featuring proteins like scallop lemon shio, A5 wagyu ponzu, and bluefin chutoro on offer. This place was the real deal. Our group shared the tebasaki wings-- so crispy and so flavorful, I could have inhaled a whole plate of these. The salmon, ikura, and apple appetizer that was served in a glass chalice was superb but even better was the bluefin tuna avocado sashimi with wasabi. That one was a winner across the board. And then my uni mazemen, which really stole the show. There was a very generous portion of uni that mixed with the savory sauce and al dente ramen noodles perfectly. This dish was rich, unctuous, and fresh and definitely delivered in value, though it was double the price of most other noodle bowls. Uni is a delicacy. Having just returned from a second trip to Japan I can say this place is really as good as any restaurant I visited in Japan, and it's right here in Murray Hill. These Murray Hill bros are lucky.

This is now going to be one of my go to spots in this neighborhood (in addition to Nom Nam)! I came here for dinner without a reservation on a Friday night, and I had a great meal and experience. It's not too big inside, but the tables are decently spaced out. There is also bar seating. It's a bit tricky figuring out what to do with your coats since the chairs aren't really meant to hang winter coats on, but there is a clothing rack in the back that someone can help you with. Everything is ordered via your phone using Toast Tab which was convenient since you didn't have to wait for your server. There was also happy hour when we arrived (6:15pm) so we ordered two hand rolls ($5 each). We ordered the chirashi bowl and the shoyu ramen. I thought the portion sizes were good and I loved the texture of the noodles in the ramen as well as my selection of fish. For dessert, we ordered the hojicha pudding which was delicious as well.

This place is so lowkey but pretty impressive! The broth is nothing like before and it is so clean and flavorful. I liked the ordering system where we just scan the QR code and can order for the table (can do individually as well!). I wish the chicken was a bit more cooked but the yuzu flavor was so clean in my broth and we especially loved the hojicha pudding. Highly recommend (bigger than you think). Staff are also so friendly (:

We found room for this gorgeous dessert!

Our meal began with brussels sprouts tempura -- a revelation! Crunchy and salty and nutty. Then came sushi, all presented in unique porcelain holders-- so original. Four of us shared two ginormous bowls of ramen (tuna and duck!) -- more surprises. Dessert was sorbet, a pleasure to the eye. Endless tea helped to wash down all the memorable dishes.

Not too many places in the city that specialize in Tsukemen first! Definitely was happy with my visit to Shuya with their duck tsukemen. Noodles were hand made and thick, firm, and chewy. The dipping sauce was not too salty and quite flavorful. My favorite was the duck. I don't normally get duck, but it seemed to be their signature so gave it a try. Duck was rich and juicy. Would definitely come back. Place was nice and intimate. Service was kind.

Hidden away in Murray Hill is a mellow ramen joint that serves subtle versions of what we know as ramen. No reservations needed on an early Friday evening. The place was calm, half full, and exuded peace in a city of noise. Maybe don't sit at the bar for ramen if you plan on gossiping with your best friend because the servers and chefs will very likely hear your conversation. Aside from that, our meal was pretty decent and started with happy hour handrolls. Blanking on what type of fish they used (Amberjack?) but it was fresh and good. For entrees, my friend and I got the assari yuzu shio ramen and wagyu & black truffle ramen, respectively. I preferred my wagyu ramen which came with tender pieces of seared and well seasoned wagyu and a flavorful broth that wasn't heavy. The assari yuzu shio ramen was decent, but not my taste preference. The clams that were in the ramen were also tough and unpleasant to eat. Would I recommend this type of ramen as a pre-drinking meal? Probably not. But I can see myself eating here when I need something light but filling.

This place is a hidden gem. My friend and I had lunch here. They have a small lunch menu and lunch specials. I like that they have a small menu, that way they can focus on quality. Its japanese owned. The decor is very nice. It's filled with traditional Japanese art. Its green and has a lot of wood elements. My favorite color is green so I love it. This place is so clean also. They have a QR code in which you could either place the order yourself or have the waiter place it. I ordered the duck tsukemen. I usually don't like dipped noodles because its usually bland. It was a hot day and I wanted something cool. However, this was full of flavor. I highly recommend this. My friend ordered the soup ramen and she said it was good too. We also ordered chicken wings which I wasnt a big fan of. It was very crispy but pricey even with lunch special pricing.

Shuya is the perfect ramen spot in Midtown. The food is consistently delicious. We can eat our way through the menu. Every type of ramen Chef prepares is fantastic. The Brussels sprouts, fried chicken and temaki (all of them!) are delicious.

Came here for dinner a short while back and loved it! The ambience is nice and the service is fast - you have a QR code at your table and you can place your order, add items, and pay your tab all in one go. At the cost of being fast, though, we did feel a little rushed - we had a little less than 2 hours for our table which felt a little tight but maybe it was just a busy Friday night. In terms of food, highly recommend the wings, a hand roll (they seem to have two daily specials to choose from), and the shoyu ramen but there's many options that all look delightful. Also highly recommend the yuzu drink - tart and refreshing - as well as the pudding for dessert. I'll certainly be coming back here in the future!

We were a little nervous coming for our 5:30 dinner reservation when we entered the restaurant and found it completely empty. However, by the end of the meal, there were 5 other tables (the entire space only has about 9 tables), and the restaurant was lively. Our ramen was so delicious - I ordered the bowl with pork shoulder that was out of this world. Chewy, savory and with strong umami flavor, I would get the dish over and over again. They made my picky husband's meal perfectly as ordered which's is rare. Would highly recommend this place, especially on a frigid New York night.

    Sophia N.

Shuya is hands down the best ramen I've had in the city, especially if you prefer ramen with a lighter broth with thinner noodles. I got the limited time menu item, red snapper lemon shio ramen. The fish was cooked perfectly, and the lemon in the broth was so light and refreshing. The noodles were cooked just right. The portion size is a little small compared to a standard bowl of ramen, but it was enough for me. The attention to detail in the bowl was amazing, and the handmade ramen bowls were so cute. The staff were lively and the owner was chatting with a customer sitting at the counter. I will be bringing back friends and family next time, maybe to try the dipping ramen next.

The service is 10/10! Upon entering in my puffy winter coat, the waiter offered to take and hang it up. This was great since the chairs were rather small and my long coat would drag on the ground if hung on the back. He also bought me cold and hot water and refilled both without me asking a couple times! Food came out quickly as well. I got the shoyu ramen and my friend got yuzu shio. The portion size was filling and not overly so, just the right amount of chewy noodles with a good bite on them and a flavorful clean broth. Most times I get shoyu ramen, the pork is way too fatty for me to enjoy but the pork here was fairly lean which was nice. The yuzu shio broth had a light citrusy taste. Both were perfect for a cold winter day. Prices were reasonable at under $20 a bowl!

Ate here today on a warm Sunday afternoon by myself. I had brought and ate the fried chicken wings and wagyu ramen that it tasted really good, mouth watering and delicious. The service there was attentive and friendly and thanks to my server Jay for making me feel welcome. The ambiance was felt so good and relaxing. I couldn't agree more about it. Finally, I would definitely eat and come back again next time! :D

The whole experience is a journey lol. You customize your ramen exactly how you want it and then sit in these little individual booths that are meant to let you actually focus on the food. You barely interact with anyone because of how the booths work, but that's part of what makes it so cool. The ramen is $21, which honestly isn't bad for Times Square. Some of the staff has been here for a while, which tells me it is a well managed operation. Quality is still the focus at TONCHIN. Table comfort is still not. I love to bring my children when not crazy crowded so they can also enjoy one of the best ramen restaurants in the world. Maybe I'm exaggerating, but I haven't found better yet. Summer soupless ramen with perfectly chewy noodles and slightly spicy sauce is a great addition. The vegan ban ban kinoko as well as its chicken version are great also during summer. The maguro is delicious but I don't find it as satisfying as the noodles. Mind spiciness level for the younglings. In the winter, the spicy tantan or Tokyo ramen always hit the spot. Fish bun has been improved slightly over the years but thank ramen-sama, it is always as messy to eat as the first time I tried it 7 years ago. Desserts are surprisingly delicious. Typically Japanese ramen restaurants lack in that domain but not here. The Tokyo banana is perfectly crafted: creamy crunchy tasty. The shaved ice are great and super fun to eat. We started with the pork belly appetizer which was recommended and stated on the menu indicating it's their featured dish. It was the biggest disappointment as it was extremely fatty with large chunks of fat, while the lean portions were dry. It didn't look very appetizing. The dumplings were just okay--they had decent flavor but I was hoping for a crispier texture. I ordered the Zebra Ramen. The noodles were cooked perfectly al dente, but the broth was much saltier than I would have preferred. The pat of butter felt unnecessary and made the broth overly rich without adding much depth. The chashu was on the small side and also quite fatty and I assume it's the same as the appetizer but was sliced instead of in large chunks. The marinated egg had good flavor, although the yolk was a little more cooked than I typically like. Another thing is the pork belly appetizer came with an egg. I wish the server would tell us so we didn't have to add it to our ramen with an extra charge. The nori was also completely soggy by the time it reached our table. Overall, the noodles were the only highlight of the meal and the rest were very underwhelming. It's definitely not a place I would recommend.

The bowl comes loaded: tender shredded chicken, seared chashu, marinated soft-boiled eggs, fresh scallions, bamboo shoots, and a sheet of nori that ties everything together. Every topping tastes intentional, not just filler. The texture balance is what really stands out fatty chashu that melts, shredded chicken with real flavor, and noodles that hold up beautifully in the broth.
