I was so excited to find a new little breakfast spot so close to my office. I called in my order and it was ready within 5-10 minutes. I tried a breakfast sandwich on a house made biscuit with sausage, egg, and cheese. It was enormous and absolutely delicious. The sausage patties are pressed thin, smash burger style, which I absolutely loved. I was also given a sample of their powdered sugar donuts and it was such a treat. The location is a bit hard to find on google maps so make sure you navigate to Speed's Auto Auction, as it's located in their parking lot. I'll definitely be coming back every week or two. read more

This place is an amazing find. The food was great! The biscuit was fresh out of the oven, and everything cooked fresh to order. You could literally taste the freshness. The portion size was very generous too. The dude at the window was very friendly and polite as well. He offered free doughnut samples (delicious) and a great friendly attitude as well. I'm so glad this place is located just down the street from us in the Next Level Pinball Museum's parking area :D My husband had the Biscuit Breakfast sandwich and I had the hashbrown breakfast sandwich with added smasher (sausage patty). Both were delicious! We also grabbed their mini sneaky donuts and maple cinnamon bun. The bun was a special for that day so it may not be there when you go. Everything was so good! They had Quick and friendly service. They seem like really nice people running this food cart and their food is delicious! Definitely go check this place out!! Finally a close by breakfast foodcart in Hillsboro! We just gave it a try & will be back. A cute cart in a nice, clean location with plenty of parking & outdoor seating. We tried Shelby's sausage smasher and the biscuit sausage smasher with egg added to each. The house made sausage is fantastic coupled with a homemade biscuit and you can't go wrong. We also shared a hashbrown sandwich. The cream cheese in the hashbrown sandwich is a creative touch. Adding a sausage smasher would make it a great sandwich. Hopefully word will get out and Shelby's will become another local staple. read more
