Delicious Everything Thick brown/ black outer crust reaveals tender juicy meat inside So delicious no burnt ends all good

I want to start this review with everything good! The burnt ends were fabulous (juicy flavorful, and yet had that char on the edges that you like to see and taste on burnt ends) the service was friendly. The pulled pork, sliced brisket and ribs we good rib, they had a good char I would've liked to have seen them a little more juicy. Now I will talk about the sides; I ordered coleslaw because they said it was sweet and I enjoy a really good flavorful, sweet coleslaw however it had a lot of sugar granules sweet as a sugar cube.Ugg the baked beans were good, however, tasted like a good canned bushes pork and bean and the macaroni and cheese was very average and for me too salty. No I will end with something positive. The cobbler peach was very delicious. A suggestion : a picnic table or two outdoors on the place would be very appreciated. This is not dog friendly, and it would be wonderful if it was at least for an outdoor seating. We ordered a Texas Twinkie to-go and it was very delicious and freshly off the smoker grill! read more

Yum!!! Had the single meat plate with brisket, baked potato casserole and cole slaw. Brisket was so tender and full of great smoky flavor! Baked potato casserole was yummy too. This is a really great place to pick up some delicious barbecue in Paris. The outside and interior spaces look just like you would expect at a barbecue joint. We arrived after lunch and there was a very short line. The special that day was the Dino Beef Rib....I HAD to get that! The dog sure enjoys the leftover bone when we get home. The outside bark (HAHA) was a little on the salty side for me but the meat underneath was succulent and had nice smoke to it. I ordered the spare rib burnt ends and those were very good too although they could have been a bit more tender. I would order both of those items again, however. My husband and stepdaughter ordered the sliced brisket and they liked it. We ordered the baked beans, potato salad and white cheddar macaroni and cheese and the items were all delicious. I particularly enjoyed the macaroni and cheese as it actually had a good flavor and was not bland like most other restaurants prepare. The service was warm and friendly and I enjoyed the Christian music playing over the speakers. That definitely impacted the atmosphere in a positive way. read more

Stopped here with the fam as we were passing through on our way to Dallas. Didn't necessarily have a taste for barbecue, but that changed quickly after sampling some of the brisket. Stop here! We had loaded baked potatoes, baked beans, ribs, and white cheddar mac n' cheese! All so good! You can pick your sauce and squeeze it out of fake cow utters (lol - cute!). All the sauces were great so we ended up mixing three for the prefect match They have free soft serve ice cream that the kids enjoyed. Caution: I got a cone too but had a stomache later and I think it was the ice cream. It was a little icey in texture and not as soft as usual soft serve. Maybe since it's free it's not as attended to? Not sure. Both me and my nephew had to vomit. Kind of wish I tried the peach cobbler, but it didn't appeal to my eye. Neither did the mac n cheese (the color threw me off), but I ended up ordering it for the kids in our party any way. I tried it and it was so good! So don't let me sway you! Headed thru town and really wanted some BBQ. This spot was the place to be based on yelpers so off we went. Easy to find on the main road. Order at the counter style spot. We decided to share a three plate and add an extra side, so we did brisket, sausage, and ribs, with baked potato salad, green beans, and broccoli salad. Toss in some good pickles and onion with a slice of bread and we knew we were already in trouble. So much food! The ribs were the least favorite -needed another hour or so on the pit. The rest was fabulous. The condiment cow on the wall that you use the udders to get BBQ sauce out of was my favorite. Grabbed a free ice cream to go and left pleasantly stuffed. read more

I usually love their burnt ends but this last time they were charred rocks that couldn't even be eaten -which made me sad bc they're my favorite! What is Texas known for? It's known for its BBQ among other things. This week, I had to travel to the small town of Paris, TX for work. Not being from Texas, I had to make it a point to have good BBQ at least once this week. Scholl Bros Bar-B-Que did not disappoint. I ordered the Meat Plate 3 with smoked sausage, brisket, and ribs along with a one pound brisket order. I can tell you that there was no way in heck that I would finish the Meat Plate 3 in one sitting not to mention the brisket order. I ended up having the leftovers over the next few nights. It was that good. The brisket was tender and flavorful without too much fat. It tastes great by itself or dipped in their wonderful homemade BBQ sauce. The smoked sausage was also very good and the BBQ sauce complemented the flavor. The ribs were perfectly smoked and had a good combination of firmness yet fall-of-the-bone-ness (not even a word, right? :-) ). For the 2 sides, I got cole slaw and green beans. Both were a good compliment to the meal. For dessert, I washed it down with their strawberry cobbler. I ordered the above to go and took it back to my hotel room. Honestly, I wasn't really expecting much, but Scholl Bros Bar-B-Que nailed it in terms of high quality BBQ. I have cousins in Paris and drove up from Bear County [San Antonio] for a family reunion. It was a great event. I ordered pulled pork from Scholl Bros. Brody the pitmaster was gracious and knowledgable. 10 out of 10 across the board. I arrived to pick it up on Saturday and it was hot and waiting. I had put the order in the day before. This place once was very good. Those days are over We ordered 450dollars worth of food for a dozen people for a work function. It was not great The banana pudding is worst ever times a million. Had a weird taste overall. But then got a big chunk of something. Quickly realized it was a tablespoon+ of cream cheese not even remotely mixed into the dish. Just a big chunk of cold cream cheese. Then I got another. Then my coworkers had same complaint. We tossed whole tray in the trash. Turkey dry as the desert. Lots of cheap sausage and skinny portions of brisket. Brisket was decent, just not enough for what we paid. For the price these jokers are charging every dish should be top notch and the portions should be generous. I'm done with them. Never going back. Consensus among my co-workers who were part of the event is that Scholl Bros. Ain't what it used to be... I'm fine paying premium for a premium product. We've eaten her before and it wasn't too bad. This time however we had it delivered. It seems that the sides had been prepacked and had been sitting around for days. The coleslaw had a rancid taste and no one could eat it. The potato salad was just ok. I thought that it needed more Mustard in it. The pulled pork looked like minced meat but the taste, wasn't horrible. We didn't receive any sauce, so we used our on. For the price we expected way better!!! I hope to find another, better barbecue place in Paris, TX. Probably won't be eating here again. read more

This was my first time coming to this establishment, and I was 100% blown away with their customer service. I wasn't sure how the ordering process worked, and they walked me through it all with genuine smiles and hospitality. I ordered 2 Texas Twinkies, 1/2 lbs of pork belly burnt ends, and a side of coleslaw. Pickles, onions, and jalapenos are complimentary. The bread came with my order. Let's start with the Texas Twinkie. It was a good size, great flavor, It's filled with cream cheese, topped with meat, and then wrapped in bacon. Although it was tasty, I think if they had mixed the meat into the cream cheese before stuffing into the jalapenos, it would've enhanced the flavor. With that said, I would still order it again because it was very tasty. Onto the pork belly burnt ends, I LOVE the sauce that it's covered in, absolutely delicious. It did not fall apart in my mouth, had some chew to it, but with every bite, there was meat juice and flavor. I really enjoyed the smokiness from both meats. Coleslaw was pretty average. The pickles added some acidity to cut through the meat juices and refreshed my palates for the next meat bite. The bread was a nice touch to wipe up the sauce. My first trip to Paris, TX we looked on Yelp for top places to eat and Scholl Bros BBQ has some great reviews. We decided BBQ sounded good we located the restaurant and gave them a try. When we first drove up on a Saturday at 1 pm the place only had a car in the drive thru. But we still went inside a little hesitantly. I glad we did the food was very good nice experience. While we were there the business pick up people kept coming in and the parking lot filled up. You go up to the counter pick what meat or combos of food you want. The menu has plenty items from slice beef, hot links, turkey, sandwich combos. I had the small sandwich comb with slice beef. It was very good meat was moist with good flavor. Combo comes with one side I picked the potato casserole it has a bunch of reviews on Yelp. I agree very good potato casserole. Next time I will just get the one meat combo I really did not want the bun. My husband had the hot links and slice beef and 2 sides. His food was also good. The other side he got was a Mexican corn that was very good. I will want to get Mexican corn next time. I did not see any beer to order which is okay I had an ice tea. There is a pickle and jalapeno bar next to the drink machines. Service was okay no issue not overly friendly just doing their job. The restaurant has plenty of seating and there is a drive thru. I would go back to Scholl Bros BBQ if we ever go back to Paris. read more

I am from Reno, NV... I just got into Paris, TX. My kiddo and I had to try real TX BBQ and wanted to support a local restaurant. Saw this restaurant when we were exploring, and knew this would be great. Came in- the workers were very friendly and got right onto our order. The ribs were great! My kid loved the Mac & cheese... We had high hopes for BBQ rated #1 in Paris Texas. Upon entering, the aroma of smokey goodness made our mouths water with anticipation. We were extra excited when we were greeted with such a friendly welcome. My husband and I made sure to order the most recommended cuts of meat by the staff--brisket, turkey, ribs, jalapeño cheddar sausage and the Texas Twinkie. Let's not forget the sides--coleslaw, pinto beans and potato casserole. After sampling here is our honest assessment: Brisket-so dry it REQUIRES sauce or you'll choke to death Turkey-should rename it turkey jerky Texas Twinkie (stuffed jalapeño)-burned brisket/burned jalapeño (bitter flavor) with cream cheese that was gooey. Cute name though (Pork) Rib-over smoked -- enough said. If you know BBQ, you know. Jalapeño cheddar sausage - probably the best out of the meats. We liked that you could taste the kick from the jalapeños and that it wasn't overly greasy. Pinto beans-not seasoned enough. Just tasted like beans boiled in water. No flavor. Coleslaw-TERRIBLE- literally, bland-limp-and soggy --needed some type of seasoning --like even salt at the bare minimum. Potato casserole-mushy with a complexity of flavors that you, actually, wonder what you're eating. The unsweetened ice tea -- best thing on the menu. Scholl's was one of the few places that open during what will be called a "historic freeze" of the United States. I arrived around 11:00 AM on a Thursday morning. They had just opened, but you could smell the BBQ from a mile away. The dining room was of typical fare with western theme throughout the restaurant. Drink station was cleaned and the tables were spread out during the COVID-19 times. Overall no complaints whatsoever. Food 5/5 After telling them that I was from out of town, the fine gentlemen behind the line gave me samples of the various meats before making a decision. On this particular outing they were out of the Pittsburg hot links due to the ice storm. After looking at the menu, I decided on a three meat plate. I chose ribs, chopped beef and pulled pork. It was served along with bread and two sides of your choice. I opted for the mac & cheese and red beans for my sides on this outing. I got a side of their hot variant BBQ sauce, but as it turned out wasn't necessary. The beef brisket had a slight pull, but fell apart with the bite. The pulled pork was perfectly smoky and delicious. Finally the ribs were "pull off the bone" delicious and the smoke ring was well defined. Seriously, get the ribs in addition to whatever else catches your eye. Staff also recommended the banana pudding for dessert which was delicious and from what I hear a true "Southern" treat. Service and Overall thoughts 5/5 The lads behind the line allowed me to sample the meats they had in house this particular morning. They made recommendations which were truly appreciated given all of their food smelled amazing. Fair warning. This isn't the same "craft BBQ" that you get within a fifty mile radius of Austin. It's not the BBQ favored by the folks at Texas Monthly as evidenced by their review. But the truth is that this is pretty good BBQ and pretty representative of northeast Texas BBQ. The brisket is very flavorful and tender. In my opinion, it would have been excellent had the counter staff not trimmed all the bark off. The ribs came highly recommended and I see why. They were well seasoned and had a glaze of their BBQ sauce on them. Speaking of sauce, I'm in love with their sauce which is slightly sweeter and a lot thicker than other Texas BBQ purveyors.
