They recently changed their banana pudding recipe and it now has graham crackers and cinnamon on it, would not recommend. They did not want to rectify the situation. Doing a bit of a road trip for New Year's, our excursion took us right through Paris, so we scoured yelp to see what good eats may be around. Always willing to try new BBQ, we set our sights for Scholl Bros, given the bevy of good reviews. As with any new BBQ place I try, I always choose the option that allows me to sample most of the menu, so at Scholl Bros, it is the 3 meat plate. The Brisket: the brisket itself looked great, with a nice dark bark on the piece they were slicing up for me. The brisket was tender and they gave me a hefty portion. However, the smoke flavor was barely noticeable and without any semblance of rub, it was rather bland. The Ribs: like the brisket, were tender and a provided in a good serving size. They were served slathered in sauce, but I also left wondering where the smoke flavor was as, like the brisket, was a bit bland as well. The Sausage: common theme here, great portion size, average flavor. The sausage did have a nice pop to it and the flavor I would compare it to would be akin to Eckrich farm. The Sauce: I was a bit surprised as this one, unlike in most BBQ places in North Texas that feature a runny, vinegar-based sauce, this one was very thick and sweet, with some smokiness in there, something I would compare to KC Masterpiece. Overall, not bad. Scholl Bros has the look of a great BBQ place as their setup is rustic and their employees are nice and helpful. However, I just found it odd that a place with so many great reviews could be severely lacking in the most important thing a BBQ place should feature, great smoky flavor. read more

Visiting in Paris TX, some of the locals directed me here when I asked about BBQ. They told me it was best in Paris but just "ok". I have eaten at some of the best BBQ places in Texas... Smitty's in Lockhart, Salt Lick near Austin, Stanley's in Tyler just to name a few. The locals were right it is "ok". Pros: The restaurant appears clean, the potato casserole was excellent as well as the pinto beans. The BBQ pork was good too. Cons: Staff was unenthusiastic, they seemed weary of being here. I told them it was my first visit and I was looking forward to tasting. The staff just looked at me with no interaction or advice. I had the 3 meat plate. The Brisket was over cooked and dry. In my opinion every BBQ place in Texas is judged by the beef brisket. The ribs were under cooked and tough. Definitely not "fall off the bone". This local place was recommended by a local. Upon arrival it seems small but on the inside it feels much larger. There is parking in front and additional parking behind the building. The dining room is open with a lot of windows. We were not so warmly greeted by the employees behind the counter and they offered no emotion or suggestions for lunch. My group decided to get a different plates to try different things. I went with the smoked turkey. Additionally we got the hot links and smoked sausage. The meats looked good at first. They had good looking smoke rings and the turkey wasn't over cooked and juicy. However, it was cold. The brisket was over cooked. It was burnt on the outside and again it was not warm. Hot links were warm and had a nice flavor with a spicy kick. The best choice of the day. We were given decent portions as well. Side dishes were typically what you would expect. Potato salad, cole slaw, Mac and cheese, beans, green beans, and corn. None of them looked appetizing on the line. We selected beans, potato casserole, and Mac and cheese. The sides had a great flavor but needed more heat; they were cold. Mac and cheese was probably the best as it was nice and creamy. Additionally I picked up a banana pudding. It was your typical banana pudding and was really sweet. The item that stood out was the sauces. we tried out two. One was the house sauce which was a bit sweeter but I wouldn't say it was sweet, a typical sauce. It had a great flavor. Our favorite sauce was one that had a little bit of heat in it. Had Scholl Bros BBQ for lunch today. A 2 meat plate and drink was 20 bucks. Both the chopped beef, which was more like pulverized meat, was just okay as were the ribs. I don't care for sauce on my ribs unless I add it as it just covers up the taste of the meat. All in all this is just mediocre food at premium prices. They cover up the lack of smoke flavor with sauce. Even the sides were just meh. I wouldn't refuse to eat here again, but I certainly wouldn't seek it out. read more

Baked beans were good but not as good as Rib Crib's. We didn't have any ice cream but appreciated the gesture. That is a little extra something that stands out. Self-serve. I could have easily eaten a pound of the potato casserole. Once they're out of meat, they're out, so I didn't get to try my usual go to, pulled pork. No rolls or French fries for the starch lovers. The Mac and cheese was flush with pepper, just an FYI. And the staff seemed a little less than enthused to answer questions or provide essentials like silverware and lids. Where do I start. The food is bland. The guys behind the counter were oh my, so rude. The side bar which had pickles and sour cream was no longer there, as they didn't have potatoes either. I was in Paris for work and my coworker wanted some meats. We pulled up and had high hopes based the line for the drive-thru and the line inside. I love BBQ and am not that picky but this was highly disappointing. I got chopped beef and sausage. Beef wasn't bad but the sausage was. It was worse than if I went to the store and got a ring of bologna and ate that. Coworker had sliced brisket and said it was too dry. Scholl Brothers bbq has the ambience one should hope for when looking for a bbq joint. I will always order ribs at bbq places, and I like to mix up my 2nd meat choice between brisket, pork, and very occasionally turkey. Today, I elected to do ribs and sliced brisket. The brisket was among the most lean I've ever had- which was excellent. And the ribs came right off the bone. I also typically prefer more of a dry rub vs bbq sauce, but in this case I definitely went with the sauce. Another great choice! The sauce is excellent, as is the sweet tea. I also liked how they had a small bar setup with pickles, onions, etc if you wanted to add a little more to your plate or perhaps make a sandwich. My coworker did order the smoked turkey and he suggested it for me next time. If you are in a rush or just quickly passing through it looked like they had a drive through as well, which is something I'm not used to for bbq places. read more

I've eaten here twice, over a period of three years. I find that the brisket when doused with their BBQ sauce is quite nice and that the sides are OK. There is a pickle bar that has pickles, onions, jalapeños, scallions, bacon bits, etc... For soft beverages, they have the usual selection, plus sweet and unsweetened tea. There is also a soft serve ice cream machine with waffle cones. Ice cream, beverages, and pickles are included with a plate, and have unlimited refills.
