The menu is creative, and the chef uses local and wild ingredients in both the food and drinks. Everything is beautifully plated and you can tell they pay attention to details. My boyfriend and I came to Sauvage Canmore for our anniversary and ordered the prefix menu. I have a dairy allergy, so I asked for accommodations for the bread and dessert. The other courses, including the fish and bison with mushrooms, did not have dairy. Sadly, while the food was aesthetic, I have had much better dairy-free food in both Canada and the States. The bison was the only dish that tasted tender and savory to me. The fish did not taste as fresh to me, and the vegan bread was quite inedible, shaped like a rounded brick and tasting like one too. When I asked if there were any other dairy-free bread options, they said no. I hoped the dairy-free dessert would be something unique, but it was another vegan bread brick with jam and a dairy-free ice cream that tasted like freezer ice and sadness. My boyfriend also found his dessert bland. The waiter said there were no other dairy-free dessert options and recommended a drink, which was solid. The two stars are for the cozy, romantic vibes, the lovely Canadian Rockies view, the tender bison, the good drink, and the kind servers. All in all, I sadly would not come back, as only one course and a drink we liked for the price of the prefix was not worth it, especially for our anniversary. read more

We came to Sauvage in Banff to celebrate a special birthday milestone, and opted for their 5-course "Late Summer: The Fading Light Hunter Variation" tasting menu. From start to finish, the entire experience was exceptional -- thoughtful, warm, and deeply memorable. The ambiance was perfect for an early September evening: cozy, intimate, and beautifully lit. It got a bit chilly toward the end of the meal, but the kind hostess noticed and brought out blankets for guests -- such a simple gesture that really added to the overall comfort and care we felt throughout the evening. Every course was balanced, creative, and told a story -- the staff took time to walk us through each dish's components, connecting it back to the chef's vision and the local ingredients. That kind of storytelling and intentionality elevated the entire experience. While every dish stood out in its own way, my personal favorites were the bison, the cabin bread, and the raspberry dessert -- each one rich with flavor and beautifully presented. We also had two cocktails, both perfectly crafted and a great complement to the meal. Service was warm and professional without being stiff -- the team clearly takes pride in what they do, and it shows in every detail. This is not a restaurant. This is a spiritual journey through food. Each bite will bring joy to your heart and warmth to your soul . With each mouthful you can feel the gift that Chef Little has been given and all of the knowledge her ancestors have bestowed upon her. You can feel those blessings with each course that gets placed in front of you. I chose the juice option. I do feel that it adds to the journey by exposing one to flavors you would never find any where else. I will say those around me who selected the wine option seemed to be enjoying them very much. Final note is about the staff. My food spiritual guide was exceptional and I cannot say enough good things about her. It was a pleasure to have her as my guide. So often one gets the "server voice" when they explain the food to you. Tonight I had someone who spoke with a caring tone and at times excited about what she was bringing to you. Of course when I had questions she replied with answers confidently and promptly. To know and repeat this menu over and over and to have the answers at the ready shows great professionalism. If you love food. Love to try new things. Love to have an experience instead of a just a dinner I highly recommend you visiting. read more

Service: super friendly, but a but slow... we sat down at 7pm and left at a little after 10pm and had like a 30min break between courses lol. Wouldn't be an issue except my butt got sleepy and i got full halfway through from the long breaks. Menu highlights: Scallops [5/5]: WOW. If a dish represented spring, this would be it. Scallops were delicate, the whole dish was light, refreshing, and really just tasted and looked like spring. Probably my favorite course from the entire menu Maitake Mushroom on wild hog pork belly [5/5]: super rich and umami. Pork was succulent and the mushroom really soaked up all the flavor. Heavenly. Honorable mention -- Ants on a Log [4/5]: ok so the dessert was great, I don't like chocolate desserts so I'm biased. BUT THE ANTS WERE REAL. Wow. This is definitely the BEST restaurant I have ever eaten at. Everything is so so SO incredibly innovative, beautifully done and delicious. I've tried new things I've never done before like spruce tips, sea asparagus, elk and even crabapple sorbet. It's a forager's dream restaurant tbh cause everything is local and has a story tied to it. I didn't even know you could smoke bread! The texture was incredible. I highly recommend the juice pairing- it was amazing and very unique -definitely not what you would get from the store. I genuinely thought they were gonna give me fresh pressed orange juice or something BUT NO, it was a unique twist with herbs like Rosemary. Im super picky about food and this place just amazed me. It's also a good value for what you get in my opinion. There are so many tasting menus that serve a little bit of food but this one definitely ensured that we didn't leave hungry. The ambiance is also aesthetic af with the moody but cosy lighting. Perfect to celebrate something, have some solo chill treat yoself time or even a date (I guess). My friend and I overheard the table next to us telling the server that they drive several hours just to eat here. I don't blame them, I would love to but I literally live in the US so... everything we had after this was meh in comparison but canmore is an impressive foodie place tbh. What a special experience and magical place! This was one of the best tasting dinners I'v had, and was my sister's first. Everything from top to bottom was stellar. What was so special was each dish (aside from simply being delicious) had it's own story, and is unique to various parts of Canada. The cocktails were *amazing* as well. Our friend from the area took us to this amazing restaurant. Who would have thought that Canmore can have such a unique contemporary restaurant that serves Canadian cuisine. They used ingredients from what is around them. We choose to hunters vs. gatherers (vegetarian) on our pre fix chef menu. Got to try many different game meat- bison, red fox, yak, and crispy Ants. The flavors of each dish were spot on. It was the perfect amount of food. We were not rushed by the waiter as he checked on us before serving the next dish. Btw great waiter- I think he is Irish. They have a great of mixology and drinks. Place is clean. Lots of street parking around. If you choose to sit outdoors- they provide blankets to warm you up. Again, excellent meal. All the dishes were so good but I would say we love the gnudi and bison. Dessert as well. read more

I was there for a special occasion. We got the vegan gatherer tasting menu. The concept and presentation were great! I loved the juice pairings too! However for some the items on the menu like the bread and tart - they were very hard and wouldn't cut through with the knife. This was a bit disappointing. We ordered the extra courses as well and there was no wine or juice pairing with them. I was a good one time visit but won't go back because of the price. For CAD 450 for 2 I expect more. read more

This place was soo fun! We chose the 5 course meal, but it ended up being a lot more because they don't count the things like the palate cleanser and the pre dessert. The actual restaurant was super cute. They wall paper was green and there was a lot of cute plants everywhere. We wanted and inside table because I knew I would get cold and they were able to seat us at one which was so nice of them to do! I got the gatherer menu and my husband got the hunter menu which contained meat. This place has a ton of very unique dishes. If they didn't explain what it was you would have no idea. I loved this place because there is no other place like it. Everything is super fresh and you can tell the veggies are farm to table. This place is pricey but it is perfect for a fun celebration like a birthday (which is why we went)! My husband and I recently had dinner here and Wow! We loved it! We both chose the 7 course "hunter" tasing menu - he with wine pairings. The first thing I loved is that, often when we dine out with a tasting menu (and I am designated driver) I have water, or just any random beverage. However, at Sauvage they have a juice pairing for those not choosing to drink alcohol. And they are all made in house. It was such a great "extra". The courses were all interesting, delicious, and each successive course became my new favourite. I loved that all the ingredients are sustainable and all come from Canada (it was an especially nice touch to have the map on the front of the menu marking where each ingredient originated from). The service was wonderful. Each person we encountered was friendly and knowledgable. The ambiance is cozy and welcoming. Beware before making a reservation. Be sure to read the fine print. I made a reservation in error and called to cancel 5 minutes later. I later noticed an $86 fee charged to my card. I called but was told there were no exceptions. I fail to see how a 5 min reservation harmed them in anyway other than to charge an exorbitant fee for an honest mistake. It was a really unique experience. It does take 2-2.5 hours to go through. You and the person you're with have to order the same extra meals if you want. Like my friend wanted the crab and I didn't so they brought us both crab. The ambiance is really nice though very cute. Looks like a refurbished house but it's very quaint. We opted to try their 7 course Hunter's tasting menu. All of the dishes were so beautifully described and our server was great at describing each one. We enjoyed all the fresh locally sourced ingredients. Some of the greens/veggies were sourced from local farms/local school gardens which is very unique! My bf and I stumbled upon sauvage while visiting banff from cincinnati ohio, and ended up having one of our most delicious and memorable dining experiences of all time. The restaurant is eclectic and cozy, the food is tasty, fresh and artistic, and the staff pulls it all together with a fun, attentive and informative approach. We were lucky enough to have Sully and John as our waiters and they not only kept our plates and glasses full, but had us laughing and feeling like part of the sauvage family the whole meal.
