    I went here last month for my birthday!!! It was amazing. Exquisite service, food and they even made me a birthday card (see photo below). It was honestly one of my fav restaurants ever and the ambience is a VIBE too.

    Service: super friendly, but a but slow... we sat down at 7pm and left at a little after 10pm and had like a 30min break between courses lol. Wouldn't be an issue except my butt got sleepy and i got full halfway through from the long breaks. Menu highlights: Scallops [5/5]: WOW. If a dish represented spring, this would be it. Scallops were delicate, the whole dish was light, refreshing, and really just tasted and looked like spring. Probably my favorite course from the entire menu Maitake Mushroom on wild hog pork belly [5/5]: super rich and umami. Pork was succulent and the mushroom really soaked up all the flavor. Heavenly. Honorable mention -- Ants on a Log [4/5]: ok so the dessert was great, I don't like chocolate desserts so I'm biased. BUT THE ANTS WERE REAL. Definitely can't feel or taste them but I think knowing they were real made it slightly hard to swallow?? That being said... still very unique and I enjoyed it LOLL

    Wow. This is definitely the BEST restaurant I have ever eaten at. Everything is so so SO incredibly innovative, beautifully done and delicious. I've tried new things I've never done before like spruce tips, sea asparagus, elk and even crabapple sorbet. It's a forager's dream restaurant tbh cause everything is local and has a story tied to it. I didn't even know you could smoke bread! The texture was incredible. I highly recommend the juice pairing- it was amazing and very unique -definitely not what you would get from the store. I genuinely thought they were gonna give me fresh pressed orange juice or something BUT NO, it was a unique twist with herbs like Rosemary. Im super picky about food and this place just amazed me. It's also a good value for what you get in my opinion. There are so many tasting menus that serve a little bit of food but this one definitely ensured that we didn't leave hungry. The ambiance is also aesthetic af with the moody but cosy lighting. Perfect to celebrate something, have some solo chill treat yoself time or even a date (I guess). My friend and I overheard the table next to us telling the server that they drive several hours just to eat here. I don't blame them, I would love to but I literally live in the US so... everything we had after this was meh in comparison but canmore is an impressive foodie place tbh. Book a table,you won't regret it.

    What a special experience and magical place! This was one of the best tasting dinners I'v had, and was my sister's first. Everything from top to bottom was stellar. What was so special was each dish (aside from simply being delicious) had it's own story, and is unique to various parts of Canada. The cocktails were *amazing* as well. You can really feel the love and care that touches every part of Sauvage, and Rebecca & Pierre took wonderful care of us. I'm so happy we decided to go here while on our vacation!

    Our friend from the area took us to this amazing restaurant. Who would have thought that Canmore can have such a unique contemporary restaurant that serves Canadian cuisine. They used ingredients from what is around them. We choose to hunters vs. gatherers (vegetarian) on our pre fix chef menu. Got to try many different game meat- bison, red fox, yak, and crispy Ants. The flavors of each dish were spot on. It was the perfect amount of food. We were not rushed by the waiter as he checked on us before serving the next dish. Btw great waiter- I think he is Irish. They have a great of mixology and drinks. Place is clean. Lots of street parking around. If you choose to sit outdoors- they provide blankets to warm you up. Again, excellent meal. All the dishes were so good but I would say we love the gnudi and bison. Dessert as well.

    This place was soo fun! We chose the 5 course meal, but it ended up being a lot more because they don't count the things like the palate cleanser and the pre dessert. The actual restaurant was super cute. They wall paper was green and there was a lot of cute plants everywhere. We wanted and inside table because I knew I would get cold and they were able to seat us at one which was so nice of them to do! I got the gatherer menu and my husband got the hunter menu which contained meat. This place has a ton of very unique dishes. If they didn't explain what it was you would have no idea. I loved this place because there is no other place like it. Everything is super fresh and you can tell the veggies are farm to table. This place is pricey but it is perfect for a fun celebration like a birthday (which is why we went)! Because of how unique and different the food is, I would definitely recommend to others if they have an event they want to celebrate in Banff.

    My husband and I recently had dinner here and Wow! We loved it! We both chose the 7 course "hunter" tasing menu - he with wine pairings. The first thing I loved is that, often when we dine out with a tasting menu (and I am designated driver) I have water, or just any random beverage. However, at Sauvage they have a juice pairing for those not choosing to drink alcohol. And they are all made in house. It was such a great "extra". The courses were all interesting, delicious, and each successive course became my new favourite. I loved that all the ingredients are sustainable and all come from Canada (it was an especially nice touch to have the map on the front of the menu marking where each ingredient originated from). The service was wonderful. Each person we encountered was friendly and knowledgable. The ambiance is cozy and welcoming. Fun touches to look at and enough light that I can read the menu and admire the gorgeous food!

    We went here as a last hurrah during our trip to Banff. We were so excited to see a locally foraged tasting menu, and it did not disappoint! The food was beautiful, creative, flavorful, and the wine pairing highlighted local Canadian producers that we had never before experienced. If we find ourselves in Canmore again, we will be sure to dine here a second time. I am sure they are only going to grow and become even more impressive.

    It was a really unique experience. It does take 2-2.5 hours to go through. You and the person you're with have to order the same extra meals if you want. Like my friend wanted the crab and I didn't so they brought us both crab. The ambiance is really nice though very cute. Looks like a refurbished house but it's very quaint. The food was good though and I got to try a lot of stuff I never would have normally so all in all, a wonderful experience.

    We decided to book Sauvage for our anniversary dinner and chose a table on their patio. The patio is decorated with beautiful flower pots and greenery. We opted to try their 7 course Hunter's tasting menu. All of the dishes were so beautifully described and our server was great at describing each one. We enjoyed all the fresh locally sourced ingredients. Some of the greens/veggies were sourced from local farms/local school gardens which is very unique! Definitely recommend trying their tasting menu as they are all creatively put together and delicious! A nice touch was the anniversary card and drink for us!

He and the excellent Chicago hot wings make Fergus & Bix worth more than one late night Happy Hour visit. The wings are marinaded, fried, dipped then baked - perfect. I'm a little beer snobby, but my spouse says the in-house Wooden Ship beers are good. Great place to watch sports too. Lots of TVs but not too intrusive if you're not interested. Ambiance is warm and relaxed. Happy Hour offers some nice choices, and is twice per day every day as is the norm in this tourist town. Definitely recommended for folks who want a pleasant adult atmosphere. You also avoid excessively intoxicated and rowdy revellers. They're over at the corner of Rose & Crown and Drake.

It was well put together, with good variety and satisfying portions--great for a late-night bite. Overall, while the experience wasn't exceptional, it was a decent stop considering the circumstances. It served its purpose and provided a solid option when not much else was available. That said, the bar itself is pretty decent. Carries some ambiance --perhaps a place you'd hang out for a few drinks.
