I was familiar with Saul's from their food truck days but had never actually tried them. Now that they've set up shop inside Dudleytown Brewing, I finally got to see what the hype was about, and they're a perfect addition to the space. Everything I've tried has been awesome. The wings are packed with flavor, the pizzas hits the spot, the bao is super tasty, and the tacos are loaded. You really can't go wrong with anything on the menu. Dudleytown Brewing Company has recently partnered up with Saults Electric Cuisine. They are right next to one another, and they are likely under the same ownership. Last night while enjoying the live music and beers at Dudleytown, we were in the mood for something to munch on. Conveniently, the menu for Saults was right on our table. The menu features, salads, tacos, burgers and pizzas. We got two pizzas. The Truff Mushroom and the Pepperoni. The pizzas are very small and they come in just one size. Upon ordering they gave us a buzzer to indicate when our pizzas would be ready. After around a half hour wait, they were ready. The Mushroom pizza was loaded with mushrooms, ricotta, fontina and mozzarella cheeses. The crust is thin and this pizza is delicious. The mushrooms and the assortment of cheeses make this a dream topping. It was fragrant, crunchy and so flavorful. I didn't try the Pepperoni pizza, it was also a hit amongst our group. Saults Electric Cuisine offers tasty options in their menu. I wouldn't hesitate to stop by when in the area in the future. read more

(Emerson, Lake and Palmer) The menu served at Saults' popular outdoor food truck has moved inside and found a home inside the Dudleytown Brewing Company in Windsor, CT. Saults now serves as the one and only official food vendor at Dudleytown. The brewery built out a kitchen and huge pizza oven on the far-right side of the tasting room for Saults. The construction and "new look" is gorgeous. Eight of us had dinner there a few days ago, and their menu was excellent- bao sandwiches, tacos, pizza, apps, pasta, steak, chicken and more. The chicken tacos were a popular choice -three of us ordered them, including me. They were flavorful, tender, and packed plenty of chicken, beans, corn, and guacamole on fresh tortillas. Three of them per order was $12. Two of my buddies went with the Spaghetti and meatballs ($18) and it looked great. It was a ridiculously large portion, so each took a good chunk of the food home. From what I could see (and taste) Saults will do a well-deserved fabulous business at Dudleytown. read more

Saults Eclectic Cuisine is a New American restaurant that opened at Dudleytown Brewing Company in Windsor, Connecticut in April 2025. It was founded by husband and wife Stephen and Ashley Lundgren. Stephen has been in the food industry for over 15 years. He worked as a chef for the Hartford-based Max Hospitality Group for a decade. Stephen started off as a line cook for Max a Mia, then moved on to a Sous Chef position at Trumbull Kitchen, and then returned to Max a Mia as an Executive Chef: a position that he thrived in. He eventually left the Max Group and decided to serve as the Head Chef at Camille's Wood Fired Pizza in Tolland. Over the years, Stephen won numerous accolades at the various restaurants that he worked for. He and his wife Ashley eventually decided to invest $150,000 of their savings into a food truck which they dubbed "Saults". Featuring an eclectic mix of multiethnic cuisine, the truck had its first event in Tolland in November 2023. It was a hit at several breweries, wineries, farmers markets, and private events throughout Connecticut. Eventually it became part of the food truck rotation at Dudleytown Brewing in Windsor. Before long, it was the ONLY food truck that came to the brewery. The owners at the brewery had hoped to bring an on-site restaurant to the space. A deal with Square Peg Pizzeria had fallen through and they eventually offered the Lundgrens a chance to make a brick & mortar version of their food truck. The menu features wood-fired pizza, pasta dishes, burgers, tacos, bao buns, salads, and various appetizers. I recently visited Dudleytown Brewing for the first time with a large group of friends. We were exciting to try the beer but we were equally excited to try food from Saults too! We decided to order multiple plates and share them. The Saults kitchen staff brought out plate after plate for all of us to enjoy. We started off with small plates such as tacos (chicken and pork), bao buns (Nashville hot chicken, pork belly, Korean BBQ, Miso), wings (buffalo, bourbon honey BBQ, Thai chili), and meatballs. Next we tried some entrees such as the "DTB Burger", "White Bolognese, "Chicken Parmigiana", "Grilled Marinated Flank Steak", and even a caesar salad. The highlight of the meal was the wood-fired pizza with varieties such as "Buffalo Chicken", "Pork Belly", "Truff Mushroom", and "Great Balls of Fire". Every single dish that we tried was fantastic! It was great to hear that a restaurant had opened at Dudleytown Brewery. My wife and I came for dinner to check it out last week. Our server was very friendly, offering a few times to come back to us while we were making drink and dining decisions. Concentrating on the food, my wife ordered a Caesar salad with grilled shrimp, which had nothing bad to say about it. Her peeve is having to remove the tails lol...but she accomplished it like a pro! I was fascinated by their white Bolognese. It had a good portion of ground/chopped meats, mixed with a tasty mushroomy white sauce, and fresh pappardelle pasta. Lightly seasoned and quite filling. My only ding is the timing of service. It wasn't terribly busy, and we received a starter of corn cakes, which were ok... but after two bites our mains came out. I'm sure it wasn't our servers intention to rush us, but when this happens, it's hard not to feel that way. All in all, it was a good dinner, and we'd go back again, hopefully with a bit of time allowed between courses. read more

We got to check out Saults Eclectic Cuisine yesterday. They are the new restaurant inside Dudleytown Brewing Company PHENOMENAL & we tried a ton! The elote corn cake is a fun riff on street corn. This was so damn good we ended up with two! We tried a dry rub and sauced wing and they were fried to perfection! Super crispy and juicy inside. THE BAO BUNS we started with the pork belly and with one bite we decided to order every other bun on the menu! Each bun was expertly made with each ingredient just creating a chorus of joy. That pork belly just melted in my mouth, absolutely my favorite bite of the day! We tried three pizzas. The great balls of fire gave me a meatball sub vibe. The jam was sweet n spicy and a nice herbacious meatball played so nicely together. That crust was about as perfectly charred as you can get. Not overwhelming bitter char just enough to add flavor to the crust. We tried pepperoni pesto and pork belly as well. The restaurant itself is beautiful and well decorated in a simplistic setting. I geeked out over the salt, peppercorn and star anise candles on the table. That's the foodie in me appreciating decor with a purpose. That pizza oven itself is a beauty and I wish I could just wood fire a million things in it! read more

Formagio pizza is BOMB, and so is everything else on the menu- great food and awesome atmosphere. Everyone working is very nice!

This place is crazy good! I have to take care that it not ruin my life, because I am so anxious to try everything on the menu. I started with the White Bolognese, which blew me away, then I tried the Elote and the Korean BBQ Bao Buns. The flavors in all of this plates are amazingly good. My wife had a Caesar salad, and, seriously, it is the best I have ever sampled. The dressing is exquisite, and the execution is perfect. I've learned now of the chef's credentials, of the success of the Saults food truck parking at the brewery. Even the service reflects the professionalism, the commitment to hospitality, everything the wonderful food deserves. Heck, even the beer is as good as anything I have experienced. I have found several excellent restaurants in the Hartford area in the 9 months I have lived here, but none better than Saults at Duddleytown. read more

Food was great, service was great and seated on the restaurant side it wasn't too loud. Only downside - which hopefully is being/has been(?) rectified - no coffee! read more
