We stopped by Saltbrush for happy hour cocktails and appetizers. You can tell a lot about a restaurant by the feel of its bar, and Saltbrush delivers--comfortable seating and a great view into its classic Art Deco-style bar create an inviting atmosphere. We took advantage of the two-for-one Old Fashioneds and shared a kebab with a uniquely smoky flavor and incredibly tender texture. We already had dinner plans elsewhere, but Saltbrush is definitely on our list for the full dining experience soon.

For a seamless experience, stay away from the verbal special menu. It seems to be experimental apps only served at the bar. We liked every special, except the spotted prawn skewer, which was double the price of the chicken or beef skewers, at maybe 1/6 of the size. They sold us on one of each of the skewers, but of course we didn't know the price until we paid at the end. However, Saltbrush really hits the spot on the permanent staples on its menu. It seems to be updated regularly because the online menu didn't match with what we saw in person. The carrots were slightly sweet and not overcooked, the Alaskan Black Cod was FALL APART FLAKY, and the duck fat potato was literally my singular favorite dish. What a beautiful restaurant. warm and inviting but not overly pretentious. Bartender was knowledgeable and created cocktails to suit our tastes. Had an order of roasted carrots with whipped ricotta and drizzled in honey. I did find the carrots a bit to hard to bite through. Would have rather they softer bite, The flavors were amazing. Didn't get to eat dinner here but definitely enjoyed our time.

It was the first time my girls and I ate there and EVERYTHING we ate was so flavorful! We ordered several different dishes and shared or tasted them all -- from the boule to the broccoli to the entrees and desserts. All the dishes were delicious and I can't wait to go back again!!

This was my first visit to Saltbrush and I was not disappointed. The staff is warm and genuinely friendly. Service is very attentive and knowledgeable. I ordered the duck confit and it was absolutely delicious. The flatbread appetizer with lentil puree appetizer was also very tasty. The ambiance exudes Old Boise Elegance with marble and beautiful lighting. Definitely will return!

A "first Thursday " offering from a special menu--aperitif, grapefruit...can't remember the rest but was delish! Bees knees!

Amazing cocktails and friendly bar staff while we waited for our table. Was a great first impression and it was vibrant in the restaurant without being too loud or chaotic. Our server continued with the hospitality and even offered a chef-created off menu vegan dish for my friend. We ended up not getting a bottle, but looking over the wine list, we had a Somm come offer assistance in a friendly, approachable way--not overbearing or pretentious. We'll be back for the wine and dessert soon! Food was thoughtful. No over seasoning, just bright and fresh.

Want to visit France, Italy, Alaska and Thailand in one evening? Check out Saltbrush. I rarely write this much about a restaurant but I feel that recognition is deserved. Rarely do I go to the same restaurant 2 nights in a row but there was just too many dishes on the menu that I hade to try. The first night I tried the Pork Cabbage Rolls, Himachi Crudo and the Mibrasa Roasted Half Chicken. Oh, and the Oak smoked Alaskan wild shrimp on homemade toasted brioche points. I asked the restaurant co-owner what a Mibrasa was (I thought it was a spice). A Mibrasa is a charcoal oven. They use the oven to cook the chicken and steak over medium smokey oak. The second night, I visited with my family and friends for more. I had the Duckfat potato, Heirloom Tomatoes/Pork Belly and the Alaskan Wild King Salmon. Both dinners were started with their homemade sourdough which was amazing. I sat and looked around at the restaurant. It was abuzz with quiet laughter, softly lit ambient lighting and delicious foods. Expect a visit at your table by either the sommelier or one of the owners (or both). I travel the world for work and have had the privilege of eating in some amazing restaurants ( and my waistline shows it ). With a menu that I am told, changes with the season, check out Saltbrush and travel the world - in Boise.

Fabulous meal at Saltbrush this evening. Very impressed. We sampled: Pork Cabbage Rolls nem nuong, crispy shallot, toasted peanut, pork broth Kale Salad fermented cabbage, charred farro, avocado tahini dressing, pistachio dukkah Sourdough Masa Flat Bread with idaho lentil spread Grilled Kurobuta Double Pork Chop creamy polenta, calabria chili vinaigrette The execution was wonderful. Great palette of flavors, pork was perfectly cooked and the Calabrian heat was fabulous. Great service and a lovely environment. We will be back.

Very attentive staff, felt like high end clients, and the place was buzzing. Very good vibes in there overall. The noise level was acceptable for a good date night. The drinks were very good and the selection of wine was top notch. I'd skip the sourdough starter as it was underwhelming. The chicken was 7.8/10 and the pasta dish was 8.3/10. Great fun spot, and good to see variety downtown.

I was in town for business, and I had a local friend tell me, "you gotta go in here. You can tell…read morethe bartender what you like flavor wise, and they will make you something even better than you can imagine." And that, my friends, is exactly what happened. I walked in, not sure what to get. The bartender asked me what flavors I like. She went away and made me this epic cocktail. She told me all the things she added, and it was clear, these bartenders are the real deal. They know their stuff. I drank my delightful cocktail way too fast. But it was so damn good. The vibe is fun. They bartenders interact with everyone and do all kinds of cool things with cool ingredients and tell you about it all. Perfect spot for a loungey date night, or a meet up with a friend. There is no food. But plenty of spots on 8th in walking distance. This is probably one of the best cocktail bars I've ever been to. ... and I've been to a lot. :)

A small window in the door opened and we had to provide a password to gain entry. (Initially our large group had to reserve 3 time slots and we would be seated separately.) I was in the first group. We were let into a small area with floor to ceiling bookcases. Of course there was a book that once pulled, opened a secret door to the bar within. The ambiance was dim lighting and groups of comfortable seating areas. The waiter was very attentive and knowledgeable about the drinks on the menu. I started with a mocktail that could be made vegan by omitting the egg white. Beautifully presented with a flower design. It was sweet and it was tart. The second drink I got was a cocktail that was smooth with a perfect amount of sweet. My friends got cocktails in their unique glasses. When our next group came through, they were led into a room. After a while, one friend came out to say hello to us. The waiter noticed that we knew each other and told my group to follow him. The room was dimly lit and was furnished with comfortable armchairs and couches. Our third group was able to join us in the room and we were able to mingle seated or standing. The different drinks that were ordered were so cool. A smoky bubble was set on top of a cone shaped glass that resembled an ice cream cone. I had a couple of friends that ordered gin drinks and they were served in a bathtub complete with rubber ducky! This was such a fun and special way to celebrate a friend's birthday! The service was superb!

I've been to several speakeasies around the USA and Gatsby should be the standard of what a…read morespeakeasy should be. No really! Imagine yourself walking through the 8th St promenade in downtown Boise. It's hustling and bustling with people and restaurants that are packed. Then, out of the corner of your eye, you see an alley. It's kinda dark, maybe a little unsettling at first. You see a steel door with a small panel at the top of the door. No door handles but a green lit old stagecoach light, a small wooden sign hanging g just beyond the door with a key on it. Hmmm, strange. In faded sharpie letters it says Knock knock on the metal door, so you knock twice. The panel on the door slides open and they ask for the password. Whoa!!!! Luckily you called ahead to make reservations so they whispered it to you. You give the password and door opens to a tiny little library with a couple of shelves full of books. The hosts welcomes you and you stare at the bookshelf knowing it isn't just a bookshelf but a door. You try pulling on different books guessing which is the right one but after a minute the hostess shows you and you enter a beautiful brick walled 1920s decorated room with seats and dim lights and no windows whatsoever. The artwork is prohibition-era themed. Heck, there's even a stack of wooden barrels that supposedly hold spirits. That is exactly the speakeasy experience you are looking for. We were seated in the boiler room, a private area which had beautiful wooden lockers with glass doors all lit up and full of booze. Books line the wall and there is an old fireplace covered with candles that have melted wax all over the mantle. In the corner is a poker table. Really the perfect vibe for a speakeasy. Glance at the menu and notice their tang of cheaper to very rare and unique spirits, some costing hundreds of dollars for a shot. Whisky, vodka, rum, gin, scotch, bourbon, you name it. But also check out their cocktails. They can even make mocktails if you don't want alcohol. Not only are the drinks unique but so is their presentation. The glades used I've never seen. Some drinks have a printed pattern on them, others come with dry ice that quickly evaporates or a cool smoked filled bubble. The whole experience was just amazing. This is a do not miss opportunity if you like drinks and cool, unique experiences. They even have another room in the back called the Garrison Room which looks like a mineshaft. I just love the thought put into this place. And when you are done, you exit through a nondescript door and exits to a patio area of another restaurant and back out to the promenade. Just a wow experience! So glad I did it.

She should not have been charged for the Frittata...it took forever to get the right one and then she didn't eat much of it at all, we were done time wise and it was not good...very bland and rubbery!!
