It creates a creamy texture and makes it easy to get just the right amount of heat that I want with each bite. And Willy's served a thick creamy tartar sauce that is very satisfying. The fries were hot and crisped and quite generous. We liked Willy's welcoming staff. They seemed to like the place and the customers, and they seem to know many as regulars. And the customers filled the room with a soothing background of happy chatter. I can't tell you how comfortable it felt.
