This is a unique type of ramen. It's French style with a deep broth with truffles. I took the lobster one with an egg. It's amazing, rich, comforting, and delicious. They also have a nice sake by the glass menu.

My experience for my first time here deserves a five. I came here after work for an early dinner and some work lunch to take home for the next day. The restaurant in my opinion is very nice. It has some elegance to it but also a casual atmosphere where you feel comfortable bringing anyone here. They have a little bar area that you can also sit at and dine in if you like. I decided to grab a table in the back that was set for two people. I had my backpack and lunch bag with me from work so I needed a little extra space to put things down. My visit today was because this place was beginning to trend on the social streets, so I wanted to jump on the bandwagon before I missed an opportunity that I may later regret. I've have done that and now some places I can't get into because of the popularity. I digress. I was greeted by this young lady who was quite nice but seemed like this could have been her first job ever or maybe she was just nervous. She did quite well assisting me. She asked me if the Ramen I wanted would be with the small or thick noodles. She couldn't really explain the difference in size, so I decided to go with the smaller ones because of a picture I saw. I also had an option to get the spicy crab ramen or the one with truffle. I decided to go with the basic one. For my appetizer I went with the shrimp tempura and I got a cherry flavored sake. Every single thing I ordered was delicious. The shrimp was so lightly crispy and the sweet chili sauce made it even better along with the wine I was given, everything was so balanced in flavor. The cherry sake was a hit with my delicious ramen. It wasn't too sweet but sweet enough to match the spice level of the dish. The creamy froth texture of the broth and the fresh crab added along with all the other elements, made this ramen unlike any other I've had. Just a one of a kind recipe. Although they could add a bit more broth, I mean that's what a lot of us want in a ramen. I still would definitely recommend and will be returning for the truffle version. Two thumbs up! I was actually really surprised how good this ramen would taste. Overall was really impressed with the flavor profile of the broth, which apparently it takes a lot of time to prepare. For a French/Japanese Ramen shop owned by a Michelin Starred chef, expectations are high and it lives up to the standard the chef set for himself. We started off with the Soft Shell Crab, which they had on a separate appetizer menu. It's as good as a well deep fried soft shell crab can get. For entrees, I ordered the Truffle Lobster Ramen ($32), which is their signature ramen dish. This includes a half roasted lobster, which you'd have to extract the lobster meat from its shell. The broth was rich from the truffle and tasteed amazing with the lobster itself and the ramen noodles. Truffle Crab Ramen ($26) was just as good, similar to the Truffle Lobster Ramen, but with crab instead. You get a choice between the soft shell crab or snow crab meat and the snow crab meat IMO was the way to go. For dessert, we got the Mochi ($7), which we got the Vanilla and Green Tea flavor. They're pretty standard mochi ice cream, but they provide some sort of strawberry sauce and whipped cream.

Tony and Lei, the owners of Salmon Noodle 3.0, and Autumn, our server, were all very friendly, welcoming, and passionate in their attempt to create something unique, delicious, and affordable for its diners. The interior design was very spacious, clean, and provided a heartwarming atmosphere that we all found really enjoyable. Now lets talk about what's most important: the food. Sides and Appetizers: The Softshell Crab Tempura was fried beautifully soft yet crunchy, which paired perfectly with the sweet sauce, a must-get in our opinion to start off the meal strong! The french fries were also crispy and not too oily, and paired decently with the mustard/wasabi(?) aioli; the only thing that can elevate this dish further is to add an option for truffle fries, but that's just a personal opinion. We also got the shrimp tempura, which we thought was a bit lackluster due to the high ratio between batter and shrimp where the amount of batter overwhelmed the amount of shrimp. The crunch of the batter was also a bit overly light, resulting in an airy texture versus a crunchy one which you'd normally would want from shrimp tempura; nonetheless, a easy fix in our opinion! Lastly, we got the beef potato salad, which was by far the least enjoyable dish we had this evening; it was very cheesy and rich, where the beef shreds didn't really help cut through how cheesy it was. Since the main dishes were also creamy and rich, this side didn't pair too well and we would much rather prefer the traditional Japanese style of potato salad with cucumber, where at least the veggies can help balance the creaminess of the main entrees. Main dishes: We got the Spicy Salmon Ramen, Spicy Crab ramen, Truffle Crab Ramen, and their signature Truffle Lobster Ramen. The best was definitely the Truffle Lobster Ramen; the broth was infused with such a rich and intense lobster umami that balanced PERFECTLY between it's richness and saltiness! It wasn't extremely salty nor too rich where it leaves you feeling overwhelmed; the flavor of the broth was just right; a MUST-GET in my opinion! The second best was the Truffle Crab Ramen, where the broth had a completely different flavor profile compared to the lobster; the softshell crab was soft yet crunchy where it absorbed a lot of the broth and turned into a flavor bomb of crab-delight! Our least favorite was the regular spicy salmon and crab ramen, due to its very limited amount of seafood that accompanied these selections; the crab ramen came with a minuscule amount shredded crab that it simply disappeared when mixed altogether. As a result, you can barely taste it and it didn't provide as pleasant of a textured experience as did the softshell crab. The salmon portion was larger, but a bit on the blander side which didn't add too much to the flavorful broth. Salmon Noodle 3.0 has the potential of being the best, if not only, French Ramen restaurant in all of NYC. As such, Tony and Lei expressed their passion in listening to feedback to continue to improve and potentially expand to include a expansive and affordable fine dining option with the Japanese Michelin Starred Chef Shota Saka, which is extremely exciting! As such, here are the feedback that we hope Salmon Noodle 3.0 will take into consideration to continue to provide a even more elevated French Ramen dining experience! First, the temperature of the broth was on the warm side instead of hot, which we understand could be due to the logistics of transferring from kitchen to table, with earlier prepared bowls being less hot than later ones. If there's a way to ensure that the broth maintains its hot temperature a bit longer, we believe it would make the ramen even more enjoyable than it already is! Second, the thick noodles absorbs the broth a lot quicker than the thin noodles. As a result, I find myself racing against time before the ramen soaked up most of the broth. I personally would love the opportunity to have more broth so that I can order an additional side of ramen to savor the meal even further, but Lei also informed us that adding more broth would ultimately alter the flavor profile of the dish, which we understand and appreciate the chef's passion for wanting each dish to be as perfect as possible. Lastly, the truffle flavor was quite minimal from all of our experiences; honestly, we really didn't taste any truffle in our broth at all. It's understandable that this is a personal preference, where some diners may want more or less truffle, but for us it's the former. It would be great if there's a customizable option for diners to customize how much broth or truffle they want their dish to have, but I can also empathize how that would ultimately change what the chef envisioned for their dish. Nonetheless, these were just some of our recommendations and feedback to hopefully help Salmon Noodle 3.0 become the best French Ramen spot in all of NYC! Highly recommend giving them a try and you won't regret it!

I appreciated the flavor profile here and rly wanted to like it, the noodles were creamy, well balanced, and perfectly seasoned. We tried the signature Lobster Noodle and the Truffle Crab Noodle. The name 'Salmon Noodle 3.0' doesn't resonate when their signature dish is the lobster noodle. My main disappointment was the small portion size and the lack of seafood protein in both bowls. The big bowl is def misleading; it looked a lot, but I honestly left the restaurant still hungry. The taste is a solid 4/5, and presentation is great but disappointed with portion here

French technique layered onto a ramen format at @salmonnoodle3.0nyc by Michelin Starred chef from Japan, Shota Saka. The broth is richer and more rounded than classic tonkotsu, clearly butter-forward but balanced enough to keep it from feeling heavy. Noodles have proper bite, toppings are minimal and the balance feels intentional rather than experimental. what's not to love about salmon & noodles together in broth? welp, yelp, i tried the eponymous dish and was both over and underwhelmed. the frothy broth that some reviewers tout as umami was bland, milky and lacked the depth I would've expected. salmon was tasty, though mildly seasoned & the noodles were the perfect texture. it was topped with spring mix which threw me off more, and the side of gummy egg was cold! the location is cute, great spot for lunch; and the server was nice tho not too forthcoming about that broth. try it, or not but dont say i didn't warn ya!

Had walked by a few times but a on post gym Trader Joe's run the pictures were enticing enough…read more Got a Lanzhou beef noodle combo with a drink and a lamb burger. The beef soup is clear and light and the noodles have a delightful texture, with a slight chew and good bounce. There's a good portion of braised beef as well. Tender but a bit fatty for my taste, but given the portion it's not going to kill you. Lamb burger ended up as overkill and will be consumed as leftovers but a quick sampling let me know that it's gamey and fatty with strong notes of cumin. Not a bad thing, but something to note for people that might not generally enjoy lamb or cumin. Black pepper beef rice bowl was solid too. Spice wise, you can calibrate accordingly but I'd recommended at least their regular spice level. Decent amount of tenderized but still chewy beef. Both dishes came with a salad of celery, carrot, cucumber, peanuts and seaweed strips in a light sauce. Couldn't quite figure out the sauce but it was lightly tart and refreshing. Space is clean and modern. Neutral wood, well lit. Service is friendly enough. If you dine in, you order at the kiosk and they'll deliver to your table. We had leftovers that they graciously packed up. Solid choice. I hope they stick around as they do bring a different cuisine to the area.

NOTE: WAGAMAMA has added to their menu, since my last visit, so you now have a RAMEN SELECTION, and other yummy additions. I was too full from my spectacular Ahi Tuna Poke Bowl to try the Korean bbq Chicken Wings ($8.95) but, I will definitely be back to try them!! I'll post menu photos so you have an idea of the delicious food choices. (April 2026) My very first delicious bite of Ahi Tuna had a heavenly garlic flavor, it was wonderful, and the sweet green seaweed with rice only added to the wonderfulness. Vertical slices of cucumber, onion and scallion, also add deliciously to my wonderful Poke Bowl. Toasted sesame seeds, too. SIMPLY MARVELOUS!!! Some pieces warm others were room temperature. Our waiter never checked back so it was too late to get a fresh order. We did not finish it. The Pad Thai was gross, no flavor and extremely greasy with very tiny pieces of chicken. A very unpleasant experience. This was my first time to Wagamama USA and my last!

We were guided toward the back, past white marble tables with beautiful mustard colored velvet chairs to the long countertop facing the open kitchen. We scanned QR codes to pull up the menu, and despite no omakase noodle offerings to be found, decided to stay because the menu options they did have sounded too good to pass up. Of course they had classic shio and miso ramens, but they also had a duck tsukumen, a red snapper ramen, a black truffle ramen, and the dish I set my sights on-- the uni mazemen. There were also lots of appetizers and a long list of high end onigiri featuring proteins like scallop lemon shio, A5 wagyu ponzu, and bluefin chutoro on offer. This place was the real deal. Our group shared the tebasaki wings-- so crispy and so flavorful, I could have inhaled a whole plate of these. The salmon, ikura, and apple appetizer that was served in a glass chalice was superb but even better was the bluefin tuna avocado sashimi with wasabi. That one was a winner across the board. And then my uni mazemen, which really stole the show. There was a very generous portion of uni that mixed with the savory sauce and al dente ramen noodles perfectly. This dish was rich, unctuous, and fresh and definitely delivered in value, though it was double the price of most other noodle bowls. Uni is a delicacy. Having just returned from a second trip to Japan I can say this place is really as good as any restaurant I visited in Japan, and it's right here in Murray Hill. These Murray Hill bros are lucky.
