THE PLACE we didn't know we needed in Brewster. This bar is exactly the place you can go to with your friends to hang out, have a drink (or two) and eat a burger (or not). This bar is so unassuming especially since it's located in this little random plaza - which has now been taken to the next level. When you walk in, you don't really realize where you're at since it's a full vibe change and you feel like you just walked into something you'd find in the city or, being honest, the cousin bar of Uncle Cheef. Totally could be related! Either way, it's a long narrow space with a pretty big bar and plenty of seating for smaller parties. You can call ahead and reserve the big table on the left for larger ones. It's a super inviting, chill, hang out spot where you'll eat incredible food and can grab a beer, choose from their cocktails or even request your own. They have it all. Come for a quick date night, happy hour, with your family, or just to hang out, everyone's invited. The food can take a little on the longer side but who cares when you're enjoying your apps and drinks. If you're here to hang out and have a good time there's plenty of reason to not care how long it takes. We ordered the smash burger with impossible meat and the chickpea sandwich. Our friends had wings, burgers and all kinds of things and there was not one thing left on our table. I was in shock how that impossible patty was clocked to perfection and had to do a double take each time I bit into it since you really almost couldn't believe it was. Both were absolutely incredible and loved having these vegetarian options (and plenty more things on the menu). Huge shout out to the chef, CJ, he's absolutely amazing! I'm so happy this place is here, can't believe it took us this long to check them out but huge welcome to the biz and owners! People: be nice, be gentle, be patient. These folks are husband and wife and are here to serve us and let us have a great time. They've only been open since November! We can't wait to be back and are so excited with the changing menu and all the fun stuff coming as the seasons change.

Date night out? Girl dinner? Let's go. This is the perfect cocktail bar in Brewster. The drinks are unique and well made. This was our second time visiting The Rye Republic and I can see it becoming one of our regular visits. The first time we enjoyed the specials. This time we stuck to the main menu and tried their burgers. From the tables, You can see the kitchen crew making everything fresh. My only complaint is some of the tables are a little close together.

Staff are super attentive and friendly. Space is dim yet stylish and brings a new age speak easy air to the room. The food was wonderful and the open kitchen window concept was great as I enjoy watching the chefs prepare the meals. Enjoy the low tables at the back of the restaurant. There was only one issue I had and that was the biscuit for the porchetta which was also used in the strawberry shortcake. The biscuit is too dense and I ended up not eating it for my sandwich and for the dessert one side was a bit burnt/overcooked, while the sauce helped loosen it up it was crunchy. Drinks were wonderful and overall the food tasted very well. That biscuit needs work!

Nice restaurant in an easy to access plaza with lots of parking. Staff were very kind and attentive. I tried the kiwi fizz mocktail and really enjoyed it. Food was delicious and very filling. The bacon egg and cheese sandwich was unique, as it was opened faced. The aioli they put on it was delicious and so creamy. Nice long bar to the side of the restaurant with ample seating on the other side. Prices were reasonable as well. Would stop by again!

Food price / quality (value) rating 8.5. The atmosphere is what I'd call "clean contemporary", functional and tasteful. I had the American Burger, a cheeseburger with pickles, lettuce, and tomato, and house-cut skin-on fries. The wife had a special pasta and boneless rib entree. Both dinners were of high quality ingredients and were prepared properly. There was no salad or bread offered along with either entree, however. They have a limited menu with a few specials. Be sure to ask the cost of any specials you may order. A small, but well chosen, rotating draught beer selection is available. Service by "Mark" was excellent. The owner is typically on the premises which is always good. We'll definitely come again.

Just wow! This is our second visit, this one was for brunch, and obviously didn't disappointed. Service was outstanding, Rev was our server/bartender, he made us one of the best cocktails we ever had. Spritz are a must and the infused fruit cocktails ( Summer of '76,) were amazing. Food was delicious, took a while but totally worth every bite. One of the best fried chicken we ever had, and we had many! Eggs were delicious, soft but buttery and the most important part, food was perfectly balanced, because wasn't salty like many other places. We had the pancakes and fried chicken and the Cacio e Pepe eggs. This will be our new spot, and can wait for the fall season and come with friends, because I bet they will surprise us with amazing food and cocktails again.

We started with the two-cheese crostini, which ended up being one of the highlights of the night. The bread was perfectly crisp, and the cheeses had just the right amount of richness without being heavy. I also tried their seasonal non-alcoholic Spiced Apple-Lini, and it was surprisingly delicious--refreshing, slightly sweet, and very "fall in a glass." For my entrée, I ordered the chicken Milanese, and I have to say it might be the best I've ever had. I'm usually very particular about chicken dishes, but the flavor and texture were spot-on. The breading was light and crispy, and the chicken itself wasn't dry at all. The plate came with a beautiful mix of seasonal vegetables--roasted squash, shaved fennel, cranberries, and arugula--topped with an apple cider vinaigrette that pulled everything together. The owner also came by to chat with us, and he was incredibly friendly--clearly someone who cares about his guests and the quality of the experience. Between the great service, thoughtful menu, and inviting atmosphere, we're already looking forward to coming back and trying more dishes. Definitely a strong addition to the Danbury dining scene.

It comes with candied bacon and that just doesn't fit the profile of bleu cheese and iceberg. I ended up eating the salad without the bacon and then having the bacon at the end as an "opening dessert." The salad was super fresh and the dressing was well done. And the bacon alone was delicious--just not great together for my palate. We went with a couple handmade pasta dishes as our mains and they were both good. Again, not quite great. I liked mine better than my wife's. That is sis's new favorite was well named to my mind. It was spicy, but not overly so and the tomato and broccoli added depth to the dish that was missing from my wife's pasta. I would 100% come back. If we do, I think we'd split a pasta and a main. Some of the fish dishes we saw go by looked fantastic. The one negative to me was an occasional whiff of marijuana. I'm totally fine with someone taking a break to calm themselves if that's what they need. I just don't want to smell that while I'm eating, especially in a restaurant that is otherwise very very nice.

I just left there about 10 minutes ago, and the selection isn't what it used to be. Everything is IPA, weird craft flavors or fancy fruity style beers or your typical watered down beer that you used to drink in college on a budget. Or what you can find in grocery stores but with a higher price tag. I do appreciate the good cider selection, however, the prices are just out of control. They don't update the sticker prices on the six packs and when checking out, I was surprised that it was several dollars more than what I had anticipated on paying. When I asked the cashier if he would be willing to honor the price on the sticker, he flatly said no. I get times are tough right now, but a little customer service goes a long way. If you're not doing your end of the bargain to update your inventory and prices, then maybe don't mark the cans at all so that customers can confirm the price at the counter before buying.
