Okay, I'm weird. I love BBQ, but don't like barbecue sauce. I love hot and spicy, but don't like peppers. All that aside, given that I order weirdly when I eat barbecue, here's what I can say: RIBS. Ribs, ribs, ribs. I didn't add any sauce (see above), but they don't need it! The chicken is also flavorful, but I think it got a little dry (this is on me; I did take out instead of eating there), so would definitely recommend using sauce with that. I didn't have the brisket yet, but others in my family have had it and really liked it. LOVE their corn bread. Their potato salad is different from any other I've had; it took me a minute and then grew on me. The mac 'n cheese is kind of like if you've ever been in the south and had pimento cheese sandwiches, but melted and poured over macaroni. Everything has a kick, which I really appreciated it -- enough to get me to pay attention, but not so much as to be unpleasant. So glad someone told me about this place! Wow legit real TX bbq in Cold Spring?! It's a few min drive from Main Street but worth it since so many spots on main were closed early on Tuesday! The closest you'll get to Texas BBQ, without a plane ticket. Fall off the bone ribs, sweet and hot sausage, juicy chicken, plenty of sides, it goes on. There's a nice smoky flavor that permeates the meats. The BBQ sauce has a little sweetness and later you have pleasant tingle of piquancy on your lips. You wish you could eat more; even when you're satiated. Maybe, your doctor might not approve of it daily, but now and then it's just what you need. Especially, if you've been cooped up and now that the weather is getting better; to sit outside under an umbrella, BBQ sauce dripping off your fingers delicious BBQ'd meats and a couple of sides. Great find and a delish spot on a beautiful spring day. At the end of our meal nothing but bones and napkins were left behind. We ordered some meal combo lean brisket + spicy sausage & marbled brisket + regular sausages. Really didn't have a preference, loved both styles. Also had some fries, potatoes on the side. Nothing extraordinary but complimented the meat dishes well. Would have rounded this up to 5 stars if they actually had the prominently advertised Shiner Bocks, a Texan beer institution. I had my mouth watering expecting this and was disappointed they had ran out. Guess just need to come by again next time! Visited this establishment yesterday after a morning of fishing with best friend Pots & Pans AKA Mud Magnet (full disclosure, I caught 2 pickerel and a bass; he got SKUNKED). We fished and swam in Canopus Lake...very refreshing. Anyway, Round Up Texas BBQ is right on Rte 9, minutes from downtown Cold Spring. We both ordered the brisket sandwich, and I also ordered the friend okra. P&P also ordered spicy sausage (which we shared) and corn bread. Prices were very reasonable, and the menu very diverse. We both thoroughly enjoyed the brisket...very tender and moist, and the sausage, which had a kick to it. The fried okra was really pieces of battered okra deep-fried. Definitely interesting. He raved about the cb. Both our trays came with a small cup of tangy sauce. There was both indoor and outdoor seating. We opted to eat outside on a beautiful day. There was a pretty steady crowd as well. All-in-all, a very good experience, and I recommend this unpretentious place. read more

The lean brisket fell apart as it should and was an easy chew. The rib meat fell off the bone and had no pull at all. Great rub! The chicken also fell of the bone and the skin was crisp, but not burnt. Mac and cheese had a spicy kick to it, Cole slaw had great flavor, but was not sweet or creamy - awesome. The beans were soupy, but had enough to satisfy and a nice bold flavor. The only thing missing is a creamed corn side! The sauce was good, but could have used a little more kick - mild and spicy versions should be available. They don't give enough sauce with the takeout: two containers should be standard for the three meat combo. They only provide takeout right now, but the indoor seating area reminds me of a smaller version of a cross between Rudy's and Salt Lick. The aroma and decor were the same and they even serve Shiner Bock!!! Hopefully they will enforce mask usage. Half of the people on line while I was there were not wearing masks. We four out-of-towners and BBQ lovers sat ourselves at Round Up's wooden outdoor picnic tables around 5:30 PM on an October day. A small birthday party was going on with a bouncy castle and a half a dozen adults hanging out drinking Buds. The tables were covered with food crumbs. We got the feeling this place was not meant for city slickers like us. Before we could get settled, dark and stormy weather set in and we moved inside. To be honest, it's really cool inside. Reminded me of the old West. Very very rustic. Old pictures on the walls. Wooden tables. I'm pretty sure there was a poster of John Wayne. No one else was there and it seemed dingy, but maybe that was just the dark weather outside casting shadows. Together, we ordered a variety of meats (I ate ribs and brisket) plus mac n cheese and cole slaw. And some beer. They were out of the ranch style beans and a few other items, which was a shame. The guy behind the counter seemed like he couldn't wait for the day to be over. The ribs were a bit dry. The brisket was okay but not the best ever. The mac n cheese was mushy. I have been coming here since the beginning. I was a local and have now moved a bit farther away. I try to get here as often as I can, and sometimes that is only once a year. Things have changed. The BBQ sauce on the side tastes like store bought when it used to be clearly made in house. The potato salad which was always a standout, now also tastes store bought. The ribs while cooked nicely also taste different. They seem way saltier when they used to be very peppery, smoky, and savory. I'm not sure what's going on there, but I wish it would go back to what it was 15 years ago. I had not been there in a spell, and from my experience assumed they had sold to new owners, but they hadn't - same owners. Don't get me wrong. It's not bad. It's just not special anymore. Due to COVID, traveling and visiting restaurants have been something hard to come by. This is a rare gem of a space with plenty off outdoor space and vaccinated worker and employer. I am glad to find this place out of a random search for burger. We end up getting Texas bbq instead which is much better Our hiking spot is about 5 minutes drive from this place and it was easy to find off the route. Just be careful coming down the road because sherif is parked nearby for speeders. So don't drive too fast for you hungry folks. We came on a Sunday afternoon and there are 75% empty benches outdoor. Parking is not an issue except for those having decision problem because there are so many. To the food!! We got two combo due to decision issue and fries and potato salad. Combo has a mix of short rib, sausages and brisket. Portion is a small but great for the waist line right!!! Brisket is a little dry but it's decent enough. Right is top of the line. This place can sold out of stuff so be patient. We walk away pretty full after this order. Price is reasonable. I love the wood bench and paper towel. This is the best barbecue I have ever had. The ribs are amazing, they meat just falls off the bone, the brisket is gorgeous, so tender and all the fat and gristle and chewiness melted away in the smoker for 20 HOURS!!! I know because I asked Brisket Bill, the owner and smoker of said meats and I was in the smoker room, I saw the magic happen. Also: best homemade Mac'n'cheese I have EVER tasted, sorry Mom. I dig beef ribs! I dig great beefy beef ribs! Round Up TX BBQ does a great beef rib which I order every time I visit. One rib is basically all you need with a few of their great sides. The fried green beans with the fried cornbread completes my meal every time. The fried green beans are nice and aren't really salty. The fried cornbread is something I've never seen elsewhere but soooo good. With a dash of sugar on top, this is a great dessert. Definitely after the beef rib, the must get has to be this fried cornbread. Finally get some of their pork ribs which are awesome as well. The only reason why I don't get the pork ribs first is because I rarely come across a beef rib as great as the one they do here. The decor is seriously rustic, the tables/wooden benches are first come, first served, both indoors and out. You have to order your food and pickup when it is ready. You also bus your own tables. If it is seriously hot outside, the inside isn't much better, the AC in the dining area isn't very powerful. The bathrooms are outside the dining area and perhaps needs a makeover. read more

This is the prime example of don't judge a joint by it's exterior. I cannot tell you how many people have mentioned how this place looks sketchy or biker vibe from the outside, but when I hear that, I am always telling them to give it a chance. Truth is, it's a prime hidden gem. The food menu has expanded as has the seating inside and out. Sure a lot of bikers frequent here, but let me tell you, most of them are the friendliest, most respectful individuals I have ever met. Both were really good. It was very busy with a constant influx of people which left seating at a premium. If theres an open table grab it and let someone order for you. I cant wait to go back and try another meal. Only thing that prevented a 5th star is the price. The food was great, but a bit overpriced in my opinion. We ordered 1/2 lb of brisket (marble), 1/2 rack of ribs, a pulled chicken sandwich, a side order of potato salad and one corn bread to share between the 2 of us. We are bjg eaters. The meats were done to perfection. Sauces were provided on the side so we could control how much would go on the meats. Although the place is far from fancy, the service was great. You order inside and pick up outside. There were plenty of picnic tables for outdoor dining. The man who called out my name to pick up the order sounded terrifying but he was actually a sweetheart. He came out and offered a small plate of brisket for our dog. Another man, presumably the owner or manager, came out to ask how our foods were. If you love Texas BBQ it's the place to be! This place serves some delicious brisket and ribs. The meat is fall off bone and melts in your mouth. It came with some bbq sauce which I did not use since the meat itself was very flavorful. We also got the macaroni and cheese which was delicious and had a spicy kick to it. For such an unassuming place with little social media presence, they sure know how to do BBQ. I've been here twice and have no problem driving 20 min there just to pick up food and drive home to eat it. They have plenty of indoor and outdoor seating, but I like to eat in my own comfort making a mess without judgment lol. I wish I had pictures but of course I didn't take any. My only criticism is probably that I ordered very lean brisket, not realizing until I got home that that meant they completely cut off the fat cap on top where all the seasoning was. It somewhat defeated the purpose of brisket, so it's just a lesson for next time. Also, the side of bbq sauce this time was certainly a very different (not in a good way) recipe from my first time there..it tasted like straight up ketchup that was smoked. The first time I had it, it was legit perfect bbq sauce. Thankfully I had some leftover and was able to use it to moisten the brisket. The cornbread is soooo good..sweet but not too much, perfect with the Smokey brisket. The Mac n cheese was also very good, I may or may not get it again. Best damn BBQ I've had since being in SC. I had ribs and spicy sausage with coleslaw. Surprisingly I finished everything on my plate including all of the coleslaw. My boyfriend had pulled chicken sandwich and chili Mac. He said he hasn't had anything like it since he was stationed in TX over 10 years ago. We were both very impressed. This BBQ restaurant blows any other BBQ restaurant in New York that we have had out of the water. The place doesn't look like much from the outside, but the inside was decent.
