This place is very interesting. If you're looking for very forward culinary options, this is 100% the place. The menu is quite different with the perfectly selected ingredients and flavors. I love to try new things and chef inspired flavors combinations, but my husband is a very "meat and potatoes" guy. Which is a difficult sell for high end flavor pallet restaurants. I personally felt the flavor options were pretty great, although very different the food was delicious. The drinks are perfectly hand crafted and up to a very perfect high stand, which we love. The ambiance upstairs, which we were told was different from downstairs, was very fast paced and at times quite loud because it is such a small space with many tables. There isn't much on an intimate vibe, when you're coffee style seating right next to the other table. But I can definitely see why it is as such, the food & dining experience is amazing and I'm thankful for as many seats as possible to be able to try to food & experience. The hospitality too was amazing. They do a team approach and everyone assists every table . Make sure to get your reservations plenty in advance. Next time I'd love to try the chefs tasting menu. read more

What an amazing dining experience in a winter wonderland!!! We were in Breckenridge for the night and made reservations to try out one of the best restaurants in town, it did not disappoint! We arrived 30 mins early to our reservation but were still seated immediately. The servers here all go above and beyond, they were friendly, attentive, and gave great reccos. It was a cold and snowy night, so I opted to start off with the French onion soup. It was unlike any that I've had before. The bread had a soft, delicious cheese and the soup had mushrooms and chucks of tender beef. Just a warm and cozy bowl of soup! For main courses, I got the duck breast. It was crispy, flavorful and cooked just right. My husband got the halibut, and he absolutely loved it. For dessert, we got the brownie and added a scoop of vanilla ice cream. It was decadent and delicious and had this amazing cardamom caramel sauce that was mind blowing. This was on of my favorite restaurants. We recently returned for my partner's birthday and I was disappointed. Unfortunately for two of the large dishes exceeded $50 each and the portion was so small I'm not sure what they were thinking. I just wish we had complained while there. If you are changing the amount then make sure people leave full and feeling like it was worth it. read more

Waitress first day, and bartender second day (we sat at bar) both acted like they hated their jobs, and us. We are well dressed, well mannered, and quite easy going. This place needs to relax. We went to Aurum afterward -- food was just as good, drinks were better, and service was infinitely better. Stellar experience for serious foodies from a top-notch staff headed by a James Beard award winning head chef! This restaurant was an experience! We chose to do a seating at the chef's table, which had us in the basement where the kitchen is. Our seats were at a bar overlooking the kitchen, which was fantastic for us! We were able to watch and converse with the chefs (including the head chef), who were personable and warm. Each dish was explained to us in detail. I chose to get the wine pairing with each course and the sommelier explained each wine and what was special about it and how it complemented the food. I'm not going to attempt to describe the food, because I will not do it justice, Each course was outstanding; there were technically 7, but we received some extra "gifts" from the kitchen as well. Ordered the 7 course and sat at the chef's counter for my birthday dinner, the experience was truly wonderful, because I booked a late reservation, so there were one other party at the chef's counter when I started, and I was the last one being served at the chef's counter. Nevertheless, they served all the customer very well. The food was incredibly delicious and creative, and I think it's one of the best meals and satisfying meals I had in the past few years. Holy oh my wow thank you please more again. It was our last night in Breck and we decide to say F it and go for the full tasting menu and wine pairing. We've done others before that were very good and a great experience. I'm telling you, this is different. If you really want that immersive and memorable dining experience, do this. You won't forget it. Before we get to the food, let's talk about the ENERGY of this place. The positivity and enthusiasm of the servers (Angie is awesome), the sommelier, the entire team (and all for a Friday night / last seating / full tasting menu / near 3 hour event). Can't say enough good things. Were there a couple of minor issues? - of course, it's food, people and a restaurant. But the responses and interactions weren't just well trained - they were authentic. Good people make this food and that makes this place. Our son's birthday celebration will be remembered for a long time - the special toast midway through the meal as well as a couple of other nice touches made it something he is still talking about. The appetizer selection is off the charts and I choose the octopus. It was cooked perfectly and even with a great sauce some other flavors the Octopus was the star of the show! Our entres were equally impressive and the service was attentive and professional. I particularly enjoyed the staff's knowledge of the dishes and how they presented the food rather than just delivering the plates. I shared a beautiful meal at Rootstalk with a group of acquaintances, and it was incredible how this food brought us together. We were passing bites across the table, asking each other about our dishes, sharing memories and reviews. Every one of us was impressed and delighted with our meal. It's not every day that you experience this community-building superpower of good food. For my meal I ordered the Cauliflower Schnitzel, which was served with a mustard spätzel and some veggies. I am always impressed when a restaurant puts so much care and attention into a vegetarian dish, and this one was unlike anything I've ever had. The crusted cauliflower was flavorful, perfectly cooked, and not at all boring, particularly with the well-crafted sides it came with. After much deliberation over their creative cocktail menu, I ordered the Terra-gin cocktail. I was nervous it would be too sweet, given its green chartreuse and pineapple ingredients, but I was pleasantly surprised to find it was perfectly balanced. A little sweet, but mostly refreshing and herbal. For dessert, we split the hazelnut olive oil cake with lemon curd and honey yogurt. What a perfect ending to this amazing meal. The cake was light and so flavorful. I can't say I footed the bill for this meal, but I would 100% return here on a special occasion regardless of the price. read more
