Late summer menu us excellent. The mushroom small plate is amazing. And the new sherry dessert cocktail is definitely a gateway to sherry for those who have never had it. Well done as always
We wanted to love this place as friends had recommended it to us. And I will say that the food is great. Our experience with service was overwhelming and bordered on driving us crazy. We felt like we couldn't have a conversation without being interrupted. "Are you finished with this?" We felt rushed; and our chairs were bumped by other guests as well as servers (like a dozen times). We just really couldn't relax. I hate to be the one giving the bad review, but if I pay $300 for two people, I expect the environment to match the food.
My wife and I had a really great experience here this week. First and foremost the service is incredible -- all the staff in the restaurant is working together to make your experience seamless. The food is excellent as well -- highly recommend the bread and hummus app -- so tasty. We also really enjoyed the steak entree. Both our entrees came with excellent accompaniments and were very well executed. Also highly recommend the ice cream sandwich dessert, very tasty. Ambience is a bit loud due to all the hard surfaces, but we hardly noticed.
Rootstalk was a truly transcendental experience! I went with three of my girlfriends and we were all absolutely blown away the first night that we had to return the second night (just for cocktails, but we wish we could have stayed for dinner too). First of all, the service is second to none. Teddy, who we assume was the manager, was so kind and friendly. He even recognized us the second night that we came in, which was so nice. The bartender, Jacob, was so knowledgeable and patient with us and helping choose our drinks. They were absolutely amazing and top quality! The vibes of the place were also 10 out of 10. We sat at the lively bar for our second night, but our first night was in the downstairs intimate, warm basement. Finally, what everybody's been waiting for... The food! We started off with a flight of bites. You wouldn't believe that all four of us shared each bite, but we were able to, and every next bite was better than the last. They were alllll top-tier. Two of us got the ribeye steak, one of us got the cabbage dish, and one of us got the scallops. Each dish was so flavorful and cooked to perfection. We literally cannot wait to come back the next time we are in town!
What a fabulous dinner we had! We went with another couple and we were celebrating both of our anniversaries. To help us celebrate, the Rootstalk staff gave us each a glass of champagne! To start we shared the Esoterra Culinary Garden Summer Salad-it was so delicious and full of flavor. We also split the Cured wild caught king salmon-it had salmon, beets, pastrami slices, horseradish and strawberry-so good! Two of us got the alaskan halibut-with morel mushrooms (love!!!), fava beans, English peas, potato gnocchi and spring onion. It was incredible. My husband had the NY strip with fingerling potatoes, esoterra scallions, morel mushrooms and roast onion fondue. He really loved it and he normally is a ribeye fan. Our other friend had the ricotta cavstelli-foraged chanterelle mushrooms, sweet corn, Australian summer truffle and pecorino. Awesome! We ordered the ice cream sandwich dessert and it was so yummy-different than we expected but we love it so much. Then, for our anniversaries they gave us 2 strawberry sorbets. Everything was so good, can't wait to go back! Olivia was our server and she was fantastic.
I can easily say this is one of the best food experiences I've ever had. To be fair, I have not had many tastings in my life, but the flavors I experienced were top-notch. My wife and I sat at the bar and had excellent service from all that interacted with us. The interior is a harmonious mix of historic charm and modern convenience inside a house that was built in late 1800s. The wine and cocktail offerings are extensive and interesting; beer is not as much of a focus here. I look forward to my next visit already!
My mouth had been watering for another chance to try Rootstalk. Everything was perfect -- superb food, exceptional service and a cozy atmosphere. Food was over the top delicious. Everything was farm fresh, cooked perfectly, presented beautifully and bursting with flavors. The Dungeness Crab bite was delicious, although overpriced and tiny - hardly a real bite. The special swordfish perfect -tender, juicy and flaky. umami. Our server Colleen, is the best. She knew the menu, was efficient, and available whenever needed. The whole front of house staff worked as a superb team. Rootstalk, as you might expect, has a lengthy wine list by the bottle and some good selections by the glass. Chef Vawter continues to impress with his passion for excellence and ability to deliver exceptional dishes.
Holyyyyyy. This place is unreal. One of my favorite things about high-end restaurants is how they can take seemingly everyday ingredients and completely transform them -- and this spot nailed it. The heirloom tomato dishes were the perfect example of this (yes, there were two!). The first featured heirloom tomatoes with sheep's milk feta and a pine nut shruq sauce -- absolutely divine. The flavors were so intentional, each component lifting the tomatoes to a whole new level. The second was the heirloom tomato toast: crispy bread, a punchy aioli, and fresh, juicy tomatoes -- simple but elevated to perfection. The fried oysters were spot-on -- a perfectly crisp coating giving way to briny, tender oysters inside. The eggplant paillard was another standout, with thoughtful touches of hummus and vinaigrette that gave the dish real depth. The halibut and beef tartare weren't quite as much of a standout for me (though my husband loved the halibut), but they were still excellent. Overall, this spot is an absolute gem in Breckenridge. It makes me so happy to see this level of culinary talent here in Colorado. Huge thanks to the chefs and the team for a 10/10 experience -- from food to service, it was flawless. As far as pricing: not bad at all tbh, we didn't do the set menu, we each got two cocktails and left VERY full and it came out to about $250 total with tax & tip. For one of the best meals of my life / easily best meal in Colorado - this was more than worth it
To start this place was beautiful. The restaurant setup was very nice. Service was amazing, a little extra with the refilling of water to be honest, but overall very good. Nice timing of dishes being served. The food was delicious. We ordered two orders of each "bite" and the tuna small plate with the tartare small plate. Everything was incredible. We would definitely come back here. We celebrated a birthday and it was made very special. Highly recommend rootstalk.
I loved the ambiance of this charming 1800s house. The staff was so kind and was on the spot all night. The food... oh man, the food. We had a Blue Crab small plate (bite), the Ricotta Cavatelli (dish with house made rabbit sausage), the Alaskan Halibut, and the Duck Breast. Everything was wonderful. My favorite was the Halibut, and that says a lot as duck is usually it for me. We topped off the meal with their Rhubarb Shortcake. This is a place where you get what you pay for. I'd love to come back the next time I find my way to Breckenridge!
We came to Rootstalk while on a family vacation with my husband's entire extended family. It was our anniversary, and my husband knows that I like very creative and high-end food and so set up this reservation. From the moment we walked in to the moment that we left, the experience was extraordinary. We did the chef's tasting, and every single item that came out was wonderful. We received our own personalized menus for our anniversary, and an anniversary card as well as a fun little dessert. Rootstalk is simply the very freshest food. I can imagine you can get in the mountains.. The greens of all types, the ramp butter, the lightness but extreme flavor of their foams. Our spring pea amuse bouche as well our tomato amuse bouche were a very impressive start. Then the in house bread, having both a fresh ramp butter and a chermoula-like spread was excellent. The egg chawanmushi was unreal. The texture, the touch of chili - best dish of an unparalleled meal. English pea tortellini tasted like spring in Wales. The chicken mousseline was very good but my husband struggled with the mousseline texture. If an airy pate texture isn't for you this might have been the one that wasn't complete top notch but even he said the mushroom sauce and roasted mushrooms made it delicious. The perfectly done ribeye was again amazing. The rhubarb dessert was fabulous as rhubarb or strawberry rhubarb is my very favorite sweet flavor in the world. So pretty much the only words I have are amazing and perfection. The ever more impressive dishes just flowed out flawlessly. It is simply unparalleled in the area. This is a very high-end dining experience, but it's worth every single dollar if you're a foodie.
The best culinary experience of my life. My husband and I celebrated our 20 year anniversary last night. We sat at the Chef's counter (10 course tasting menu). Every morsel was delicious and prepared with great attention to detail. Beautiful presentation. Fantastic personalized service. Relaxing pace that allowed us to savor every bite. They have an extensive wine and cocktail list. We had front row seats to watch the kitchen create magic. It was truly an incredible experience.

Everything about this place is top notch. The atmosphere, service, and food were off the charts for this James Beard Award winning restaurant. We did the 7 course meal with a wine tasting, all of it delicious but the Steak, Salad, Pasta and Desert were my favs. read more

What an amazing dining experience in a winter wonderland!!! We were in Breckenridge for the night and made reservations to try out one of the best restaurants in town, it did not disappoint! We arrived 30 mins early to our reservation but were still seated immediately. The servers here all go above and beyond, they were friendly, attentive, and gave great reccos. It was a cold and snowy night, so I opted to start off with the French onion soup. It was unlike any that I've had before. The bread had a soft, delicious cheese and the soup had mushrooms and chucks of tender beef. Just a warm and cozy bowl of soup! For main courses, I got the duck breast. It was crispy, flavorful and cooked just right. My husband got the halibut, and he absolutely loved it. For dessert, we got the brownie and added a scoop of vanilla ice cream. It was decadent and delicious and had this amazing cardamom caramel sauce that was mind blowing. Overall, Rootstalk exceeded our expectations and is def a place to try if you're in Breckenridge! read more

The service is best described by a phrase commonly used by our server... "Peace of Mind." The staff anticipated and accommodated all of our needs, they were wonderful. The food was simply delightful. Each bite delivered a symphony of flavor and ingredients, in perfect harmony. The ambiance was relaxed, romantic, and subtle. Rootstalk is a clear leader of dining options in Breckinridge and I very much look forward to a return visit. read more

The 5 star reviews were not lying. This place is worth. The. Hype. Service, food, ambiance, drinks, all 5/5. We ordered a la carte instead of doing the tasting menu. Best dishes we had were the New Zealand sea bass, the steak tartare, and the banana bread sundae. Everything was fresh, full of so many different flavors, and served elegantly. Can't wait to try out their sister restaurant down the street! read more

We sat in the downstairs cellar area which was really cozy and romantic. Service was amazing and the wine we ordered was great. Sharing two snack dishes and a large plate plus a dessert was plenty of food for two people. Would come back next time we're in town to try their other dishes since it seems like they change out their menu seasonally. read more

My husband and I brought my parents here and we LOVED it. The service was amazing. Our waitress was very knowledgeable about the menu and was great! The food was soo good. My parents are very picky and all our plates were empty. It was pricey but definitely worth it. Everything we tried we loved. I'd have to say my favorite thing about our entire dinner was the agnolotti, it was amazing! We will be going back the next time we get to visit Breck. read more

Ordered the 7 course and sat at the chef's counter for my birthday dinner, the experience was truly wonderful, because I booked a late reservation, so there were one other party at the chef's counter when I started, and I was the last one being served at the chef's counter. Nevertheless, they served all the customer very well. The food was incredibly delicious and creative, and I think it's one of the best meals and satisfying meals I had in the past few years. The conversation with chef was fun and inspiring, and felt thankful for the restaurant and the team to deliver such a delightful and unique experience for my birthday, would love to come back and try. My personal favorite is SUNCHOKE ANGOLOTTI, so creative and delicious you must try! read more

Holy oh my wow thank you please more again. It was our last night in Breck and we decide to say F it and go for the full tasting menu and wine pairing. We've done others before that were very good and a great experience. I'm telling you, this is different. If you really want that immersive and memorable dining experience, do this. You won't forget it. Before we get to the food, let's talk about the ENERGY of this place. The positivity and enthusiasm of the servers (Angie is awesome), the sommelier, the entire team (and all for a Friday night / last seating / full tasting menu / near 3 hour event). Can't say enough good things. Were there a couple of minor issues? - of course, it's food, people and a restaurant. But the responses and interactions weren't just well trained - they were authentic. Good people make this food and that makes this place. Our son's birthday celebration will be remembered for a long time - the special toast midway through the meal as well as a couple of other nice touches made it something he is still talking about. The food (sharing the menu)? The wine pairings? My descriptors won't do any of it justice - they know their stuff on this front too. This place is fantastic. Before coming to Breckinridge we were in Santa Fe for a number of days and ate at three James Beard nominated restaurants........Rootstalk blew them all away. The appetizer selection is off the charts and I choose the octopus. It was cooked perfectly and even with a great sauce some other flavors the Octopus was the star of the show! Our entres were equally impressive and the service was attentive and professional. I particularly enjoyed the staff's knowledge of the dishes and how they presented the food rather than just delivering the plates. They serve tasting meals or you can order a la carte, so dont expect to pop in for a dine and dash. It's all about the food so relax and enjoy. read more

I shared a beautiful meal at Rootstalk with a group of acquaintances, and it was incredible how this food brought us together. We were passing bites across the table, asking each other about our dishes, sharing memories and reviews. Every one of us was impressed and delighted with our meal. It's not every day that you experience this community-building superpower of good food. For my meal I ordered the Cauliflower Schnitzel, which was served with a mustard spätzel and some veggies. I am always impressed when a restaurant puts so much care and attention into a vegetarian dish, and this one was unlike anything I've ever had. The crusted cauliflower was flavorful, perfectly cooked, and not at all boring, particularly with the well-crafted sides it came with. After much deliberation over their creative cocktail menu, I ordered the Terra-gin cocktail. I was nervous it would be too sweet, given its green chartreuse and pineapple ingredients, but I was pleasantly surprised to find it was perfectly balanced. A little sweet, but mostly refreshing and herbal. For dessert, we split the hazelnut olive oil cake with lemon curd and honey yogurt. What a perfect ending to this amazing meal. The cake was light and so flavorful. I can't say I footed the bill for this meal, but I would 100% return here on a special occasion regardless of the price. read more

Do they serve anything for kids?
They offered a kids pasta bolognese when we dined there. I'm sure they could make accommodations for littles.
What is the dress code? We are casual dressers?
Mountain causal is the norm but if you were dressed up it would fit the ambiance too. We have gone in both looks and felt appropriate.
