    [[HIGHLIGHT]]Great - low key spot where we really enjoyed our shared lunch.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]The server/bartender was easy and fun to talk to and the place itself has a great rustic feel to it.[[ENDHIGHLIGHT]] Fairly large menu and very well stocked bar. You should check it out!

    The miso salad - see how it's "aesthetically" just like 2/3 of the plate lol~ wish it was just the whole plate!

    Prospector is absolutely bomb, in particular the drinks. [[HIGHLIGHT]]I came on a Friday night at the end of August, and there were only like 4 tables taken; it's not a big place but it was def less than half full and I heard the bartender talking to some folks about how the "busy season" just ended a few weeks prior when school restarted so things were quieting down in Breckenridge.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]The place itself is quite cute, it's a lovely spot that's open late so you can come for a drink or light food.[[ENDHIGHLIGHT]] I was pretty hungry, but mostly wanted a drink so I ordered one of their cocktails (the whitehead wildflower, $15) since the bartender said it was floral, but also added some rose liqueur to make it even more floral, and I absolutely LOVED it, one of the best cocktails I've had! I also ordered the miso salad which was delicious, albeit a bit small for $15. Nevertheless, I felt neutral after eating it rather than hungry, and it was late at night (8:30-9p) so neutral was sufficient. Also they have street parking out front, seems like it's paid only from 10a - 8p, but because I came late I didn't have to pay. There were a decent number of spots available, I didn't have trouble but the whole town is quite walkable. Overall would def come back, this is a nice spot!

    We came here on a random weekday for happy hour. The gentleman behind the bar was super knowledgeable and helpful. We opted not to go for the stuff on the happy hour menu since it was mainly we'll type liquor plus a mixer. Boy am I glad I didn't go for the normal low ball cocktail. They do an outstanding job on every cocktail and take their time to give you a true mixology experience. The prospector was perfectly balanced and came with quite the punch! Don't forget your at almost 10k feet and the booze will hit different! [[HIGHLIGHT]]I really enjoyed my time here, the staff is super friendly and the patrons are all super nice.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]Pro tip: sit at the bar for some good chats, vibes, and cocktail convos![[ENDHIGHLIGHT]]

    [[HIGHLIGHT]]This place is aptly named based on the decor and the menu. It's definitely got an old Wild West country vibe.[[ENDHIGHLIGHT]] I took my niece and her boyfriend there after skiing the whole day and we liked it. The food is very good but also very small portions for the price besides my chicken pot pie. We also got enchiladas and roasted beef. Each dish was at least $30 and tasty but smaller portions than we expected. We all loved the cornbread with honey butter...that was the yummiest

    We were walking down Main Street in Breckenridge and came upon Prospector and decided to try it out. We were glad we did! It's a small place, but we sat at the bar and had great service from the bartender. This has to be the best cocktail bar in Breckenridge! I had the Smoked Ember Old Fashioned and it was incredible! The Short Rib dinner was also amazing and highly recommended. We'll definitely return.

    3.5 stars... Started out with a flatbread and drinks... local beer selection was good, and the crust on the flatbread was nice.. For the main I chose the short rib, and it came out room temp the first time, but was delicious on the second try. Perfectly tender and served with mashed sweet potatoes. [[HIGHLIGHT]]Ambiance is chalet chic[[ENDHIGHLIGHT]], service was prompt and friendly, and prices are in line with expectation. This joint makes the list!

    This is a great spot with great bartenders. Mixologists if you will. We went there over Spring Break - and had to make it twice within just a few days as their hot chocolate concoctions (one Adult, one Child version) were amazing! Went back over the summer and equally enjoyed the hospitality at the bar with another few pairings of wonderfully creative and tasty cocktails. Absolutely will make it a "go to" when in downtown Breck.

I won't divulge how to find this place because that was half the battle and made it worth the wait. We ultimately were gathered in the hotel lobby to take us back to the speakeasy - the welcome drink was a super nice touch! The speakeasy itself is fairly tiny - seats about 30? It felt super swanky and loved all the wood - felt like we were somewhere back in the 30s. The cocktail connoisseur behind the bar, Danny, makes you a custom made drink based your preferences. They can of course make standard drinks but what fun is that? In their menu, they have a list of the most popular liquors (gin, vodka, whiskey, rum, etc.) and then flavors that typically pair with those liquors. For example, I wanted some sort of whiskey sour and asked to make it with peach or ginger flavors. My husband asked for a gin drink with crème de violet and got a delicious play on an Aviation cocktail with aloe and rosemary simple syrup. Overall, a little bit of a hiccup to find it and get in, but the experience was awesome! We never figured out the supposed "clues" to finding the place and after a few minutes someone asked if we needed help and it happened to be the host of the Canary bar. I just wish we'd had a little more time but had to leave due to dinner plans. But the atmosphere, the speakeasy setup, and the service were absolutely outstanding. Easily the best and most unique cocktail experience we've ever had. We were a little worried that there were no prices on the menu, but our bill was actually very reasonable especially considering the overall experience. We only had a couple appetizers but the food was outstanding and also quite unique. I definitely recommend making a reservation and checking it out.

The butter complimented the bread beautifully. I started off the night with the blackberry smash with tequila and it was delicious. Just the right combo of sweetness. For entree we went with their Pasta Rotante which for the night was a crazy flavor combo of tomato, pumpkin seeds, crunchy carrot strings, sage and chicken sausage. I'm probably missing other ingredients, but it was a dance of flavors on the tongue. Our waiter recommended pairing this with a glass of Pinot Noir and it was the perfect compliment.

I am 56 and my friend is 73. We have been friends for 26 years and we took a girls getaway to Breckenridge. I can't begin to say enough positive things about your establishment! The martinis were absolutely scrumptious. Christian is a dedicated young man, and as I told him he is like "an old soul in a young body". I mean that with the highest regard! He is completely squared away, he was personable, kind, and friendly while still tending to all of the guests that were there. One thing that impressed me the most is how he kept his bar so organized.....he has an incredible attention to detail... before he served any drink, he put a straw in it, pulled it out with his finger held over the top of the straw and sampled a taste of the drink, and then would throw the straw away. I've only seen this done at a few establishments, which I can tell you Cecilia is at the top of the list and the epitome of a wonderful experience! The only thing I would ask in return is that the owner of Cecilia's please recognize Christian for all of his efforts. Too often in life, people are very quick to complain about a negative experience and as a result, no one will take the time to reward positive experiences.
