We've really enjoyed our visits to Prospector for cocktails and lunch, and our most recent visit was our first time for dinner. Cocktails and service were excellent as expected, but we were a bit disappointed in the fairly pricy entrees we ordered. Not bad, but not great; my lamb chops were a bit dry. Nevertheless, I felt neutral after eating it rather than hungry, and it was late at night (8:30-9p) so neutral was sufficient. We came here on a random weekday for happy hour. The gentleman behind the bar was super knowledgeable and helpful. We opted not to go for the stuff on the happy hour menu since it was mainly we'll type liquor plus a mixer. Boy am I glad I didn't go for the normal low ball cocktail. Friends said the deviled eggs were also very good. What kept us going back to Prospector though were the great specialty cocktails, the craft beer selection and the great staff. My favorite cocktail was The Prospector. I also had their smoked ember with two different woods, walnut and hickory. If you like Mezcal, Aged to Perfection is your drink. It is not too smokey with perfectly blended flavors. They have seasonal cocktails also so experiment and enjoy. You won't be disappointed. I'm a Breck local and visited Prospector in May. That visit was not great, and I had several issues*. However, I just returned from my second visit and was very pleasantly surprised. We were there on a Tuesday from 6:15-8:00p. We ordered the white wine sangria, burrata, crab cakes, and flatbread and ate family style. The burrata is by far my favorite dish; I highly recommend. I ordered it on both my visits and it's delicious. The flatbread is also very, very good. It wasn't super crispy, but I didn't think that was a deal breaker--the ingredients work well together and make for a deliciously savory dish. The crab cakes were large, but not my favorite. They were fine, just not quite as good as the rest of the items we ordered. We weren't there during happy hour (2-4 and 9-close), but the daily special was sangria ($7 for red or white; I ordered the white) and it was quite good. I'd recommend it, for sure. A nice crisp option for summer. Service was consistent and friendly. I arrived early (before my dinner companion) and was immediately brought water (and it was consistently refilled). It wasn't busy when I arrived, but even as it got busier throughout the evening, the service didn't waver. *Full disclosure: I wrote a very negative review after my visit in May. The owner contacted me privately to let me know 1) the old management team was gone, and 2) he had left a GC for me at the register if I would give them a second chance. I was clear that I wouldn't be changing my review if I still had complaints. --I DID NOT ASK FOR THE CG UNTIL AFTER WE'D EATEN B/C I DIDN'T WANT TO RECEIVE ANY SPECIAL SERVICE.-- I wanted to see how the visit would go w/o knowing I was there to reconsider my original review.
