Rootstalk was a truly transcendental experience! I went with three of my girlfriends and we were all absolutely blown away the first night that we had to return the second night (just for cocktails, but we wish we could have stayed for dinner too). First of all, the service is second to none. Teddy, who we assume was the manager, was so kind and friendly. He even recognized us the second night that we came in, which was so nice. The bartender, Jacob, was so knowledgeable and patient with us and helping choose our drinks. They were absolutely amazing and top quality! The vibes of the place were also 10 out of 10. We sat at the lively bar for our second night, but our first night was in the downstairs intimate, warm basement. Finally, what everybody's been waiting for... The food! We started off with a flight of bites. You wouldn't believe that all four of us shared each bite, but we were able to, and every next bite was better than the last. They were alllll top-tier. Two of us got the ribeye steak, one of us got the cabbage dish, and one of us got the scallops. Each dish was so flavorful and cooked to perfection. We literally cannot wait to come back the next time we are in town!

My mouth had been watering for another chance to try Rootstalk. Everything was perfect -- superb food, exceptional service and a cozy atmosphere. Food was over the top delicious. Everything was farm fresh, cooked perfectly, presented beautifully and bursting with flavors. The Dungeness Crab bite was delicious, although overpriced and tiny - hardly a real bite. The special swordfish perfect -tender, juicy and flaky. umami. Our server Colleen, is the best. She knew the menu, was efficient, and available whenever needed. The whole front of house staff worked as a superb team. Rootstalk, as you might expect, has a lengthy wine list by the bottle and some good selections by the glass. Chef Vawter continues to impress with his passion for excellence and ability to deliver exceptional dishes.

I can easily say this is one of the best food experiences I've ever had. To be fair, I have not had many tastings in my life, but the flavors I experienced were top-notch. My wife and I sat at the bar and had excellent service from all that interacted with us. The interior is a harmonious mix of historic charm and modern convenience inside a house that was built in late 1800s. The wine and cocktail offerings are extensive and interesting; beer is not as much of a focus here. I look forward to my next visit already!

Wow. Finally had the Apres burger and it did not disappoint. Beyond that, it's a definite contender for best burger ever...let alone for $12! And I used to wait in line in Madison Square Park for the original Shake Shack to open. I have had some great burgers. Where to start. The burger was cooked perfectly--juicy and somewhere around medium rare. While it looked a little large, the roll compressed nicely for eating and the bottom didnt disappear. It held the juices well. It literally melted in my mouth and I could probably eat it every day. The cheese had the perfect amount of salt for me and the onions gave it a patty melt feel in a burger. The spicy sauce that came with the fries was also excellent--just enough heat to make you want more. Really cant recommend this enough. Well done!

To start this place was beautiful. The restaurant setup was very nice. Service was amazing, a little extra with the refilling of water to be honest, but overall very good. Nice timing of dishes being served. The food was delicious. We ordered two orders of each "bite" and the tuna small plate with the tartare small plate. Everything was incredible. We would definitely come back here. We celebrated a birthday and it was made very special. Highly recommend rootstalk.

Tomato Thomato cocktail

Holyyyyyy. This place is unreal. One of my favorite things about high-end restaurants is how they can take seemingly everyday ingredients and completely transform them -- and this spot nailed it. The heirloom tomato dishes were the perfect example of this (yes, there were two!). The first featured heirloom tomatoes with sheep's milk feta and a pine nut shruq sauce -- absolutely divine. The flavors were so intentional, each component lifting the tomatoes to a whole new level. The second was the heirloom tomato toast: crispy bread, a punchy aioli, and fresh, juicy tomatoes -- simple but elevated to perfection. The fried oysters were spot-on -- a perfectly crisp coating giving way to briny, tender oysters inside. The eggplant paillard was another standout, with thoughtful touches of hummus and vinaigrette that gave the dish real depth. The halibut and beef tartare weren't quite as much of a standout for me (though my husband loved the halibut), but they were still excellent. Overall, this spot is an absolute gem in Breckenridge. It makes me so happy to see this level of culinary talent here in Colorado. Huge thanks to the chefs and the team for a 10/10 experience -- from food to service, it was flawless. As far as pricing: not bad at all tbh, we didn't do the set menu, we each got two cocktails and left VERY full and it came out to about $250 total with tax & tip. For one of the best meals of my life / easily best meal in Colorado - this was more than worth it

We came to Rootstalk while on a family vacation with my husband's entire extended family. It was our anniversary, and my husband knows that I like very creative and high-end food and so set up this reservation. From the moment we walked in to the moment that we left, the experience was extraordinary. We did the chef's tasting, and every single item that came out was wonderful. We received our own personalized menus for our anniversary, and an anniversary card as well as a fun little dessert. Rootstalk is simply the very freshest food. I can imagine you can get in the mountains.. The greens of all types, the ramp butter, the lightness but extreme flavor of their foams. Our spring pea amuse bouche as well our tomato amuse bouche were a very impressive start. Then the in house bread, having both a fresh ramp butter and a chermoula-like spread was excellent. The egg chawanmushi was unreal. The texture, the touch of chili - best dish of an unparalleled meal. English pea tortellini tasted like spring in Wales. The chicken mousseline was very good but my husband struggled with the mousseline texture. If an airy pate texture isn't for you this might have been the one that wasn't complete top notch but even he said the mushroom sauce and roasted mushrooms made it delicious. The perfectly done ribeye was again amazing. The rhubarb dessert was fabulous as rhubarb or strawberry rhubarb is my very favorite sweet flavor in the world. So pretty much the only words I have are amazing and perfection. The ever more impressive dishes just flowed out flawlessly. It is simply unparalleled in the area. This is a very high-end dining experience, but it's worth every single dollar if you're a foodie.

I loved the ambiance of this charming 1800s house. The staff was so kind and was on the spot all night. The food... oh man, the food. We had a Blue Crab small plate (bite), the Ricotta Cavatelli (dish with house made rabbit sausage), the Alaskan Halibut, and the Duck Breast. Everything was wonderful. My favorite was the Halibut, and that says a lot as duck is usually it for me. We topped off the meal with their Rhubarb Shortcake. This is a place where you get what you pay for. I'd love to come back the next time I find my way to Breckenridge!

Went on a December winter date night and were blown away! Bites were inventive and bursting with flavors, tuna crudo was amazing and our entrees of filet and scallop "chowder" were exceptional. We loved the attentive service, drinks and laid back atmosphere as well. Such a wonderful spot for Breckenridge!!

We were greeted and seated by Megan. Her knowledge of wines is readily apparent as she walks you through the wine list. We selected the '23 Petrussa Sauvignon Blanc and the '23 Tyler Pinot Noir, both were very delicious. For dinner we selected the Nee Zealand Sea Bass ad the Hayden Fresh Farm Pork Collar. As you see in the pictures both entrees were plated perfectly. They tasted beyond delicious. On a scale of 1 to 10 I would give them both a 15. Through the course of our meal Megan would check in and see if everything was ok and to be sure our experience was way beyond ok. Rootstalk is housed in a building from the 1800s and when you walk in you will feel the Classiness that is there from the ambience through the meal and even in the desert offerings. Speaking of desert we selected the Chocolate Date Cake, mmmmm goood. The entire experience was over the top. Next time you find yourself in Breckenridge I highly recommend you try Rootstalk, you'll be glad you did.

Food: overall it was very good. A few dishes were on the lukewarm side vs hot or cold but it didn't change too much of the experience for us. (1) HEIRLOOM TOMATO SALAD: really tasting. Fresh. The fried eggplant "croutons" were a nice touch (2) PRIME BEEF TARTARE: this was one I expected to be colder than it was. But the flavors were wonderful and that onion dip was crucial! (3) CAPPELLETTI: fresh pasta with gooey cheese in the middle and all around mushroom flavor? Yes please! My favorite dish of the night (4) FLIGHT OF BITES: 1 EGGS IN THE EGG, 1 BUTTERMILK FRIED CHICKEN, 1 EVERYTHING GOUGÈRE, and 1 GOAT CHEESE TART. Overall this was my least favorite. Everything had balance flavors but nothing stood out to me. (5) CAPE COD DIVER SCALLOPS: I really didn't prefer the sauce that came with this. I almost tasted like olive puree. Oddly I didn't see any shrimp and corn fritters like the menu says which was a bummer. The scallops were cooked well. The pork belly was luke warm which I would have like to be hot. Not my favorite dish but still good. Service was great. Nothing to complain about. Ambience is beautiful. Can't beat the vibe!

Did the tasting menu here during a boys' trip to Breck on a friend's strong recommendation. Happy to say this lived up to the recommendation. The service was amazing, no water glass remained empty for more than a minute and the servers were friendly and knowledgeable. None of the dishes were mindblowingly inventive or anything, but the flavors were all balanced and delicious throughout a wide tasting menu. Shout out to the course with the duck liver mousse and house made bread, that was an unexpected highlight of the evening. Definitely recommend checking this place out if your group wants a break from pizza and beer.

They offered a kids pasta bolognese when we dined there. I'm sure they could make accommodations for littles.

What is the dress code? We are casual dressers?

Mountain causal is the norm but if you were dressed up it would fit the ambiance too. We have gone in both looks and felt appropriate.

The butter complimented the bread beautifully. I started off the night with the blackberry smash with tequila and it was delicious. Just the right combo of sweetness. For entree we went with their Pasta Rotante which for the night was a crazy flavor combo of tomato, pumpkin seeds, crunchy carrot strings, sage and chicken sausage. I'm probably missing other ingredients, but it was a dance of flavors on the tongue. Our waiter recommended pairing this with a glass of Pinot Noir and it was the perfect compliment.
