Food I ordered the three roll special. I had the shrimp, pork sausage, and bulgogi beef. The shrimp roll was as expected, light, fresh, and tasty. The sausage was the best. It had the best flavor and really stood out. The beef was dry, okay flavor-wise, but oh so dry. Each roll had lettuce, shredded carrot, cilantro, cucumbers, mint, and garlic chives. I had to get something for lunch that was seafood since it was a Friday and during lent we don't eat meat. It was located in the brea mall second level in the food court. I never seen this type of restaurant in vegas. Their menu was super simple you build your own Vietnamese spring roll or bowl. Their protein choices were beef, pork, shrimp, and tofu. We ordered a shrimp bowl with noodles all veggies with the OG sauce which was the typical fish sauce and sugar. We also tried two shrimp spring rolls and tofu with all the veggies and paired it with the peanut sauce. In the spring rolls what makes them different is they add a crispy egg roll wrapper which makes it crunchy. This was a smart idea and really different. Obvi not Brodard quality, but it's actually pretty decent to be a mall food court option. The ingredients were fresh and prices were reasonable. We got (3) Pork Sausage spring rolls & (2) egg rolls. Located at the Brea Mall, Roll & Co has five different types of spring rolls to get, beef bulgogi, pork sausage, lemongrass chicken, shrimp and tofu for a vegan option. They also have vermicelli bowls, egg rolls and wings! I got their Lemongrass, Beef Bulgogi, and shrimp. Ranked in my favorite was their 1) Bulgogi 2) Shrimp 3) Lemongrass. They are pretty filling and it's 3 for $13. The best part to top it off is their sauces, they have five popular sauces to choose from but we got their Peanut Hoisin and Green Goddess. When my girlfriend caught up to me, she started explaining it to me. We ended up ordering the Spring Roll Sampler....one each of Chicken, Pork Sausage and Shrimp. We also tried three sauces. Hard to pick a favorite (all 3 were great), but my favorite sauce hands down was the Sweet & Kinda Spicy Gochujang Sauce. Do yourself a favor and try that sauce first. We have ordered here many times before. We usually show the menu or photos, and it is easy for the staff to understand. Everything was always fine until today, when we had a very bad experience. My girlfriend and I are deaf, but we are friendly and always try our best to communicate. The employee who looked like a manager asked us to type on the phone, but we tried to communicate using gestures, the menu, and photos of the food we wanted. It was very simple. However, he was very impatient and rude while quickly showing us the menu. My girlfriend even told him to calm down and show better manners. I felt he was very disrespectful toward us. It's nice to see a restaurant focus on spring rolls that are customizable for those that want to be creative and pick their own toppings while also being able to choose from the 4 they already have available. Came on a Monday around 7pm and there was only one group in front of me so I only waited a few minutes which I took the time to look at the menu. I ordered three of their signature rolls: beef bulgogi, shrimp, and lemongrass chicken. I chose the peanut hoisin as my sauce. The staff member who helped me was friendly and efficient, it was cool seeing him make them in front of me. As for the spring rolls I chose, they were all really good! The peanut hoisin sauce is a classic, it was slightly sweet, nutty, and creamy. You can't go wrong with any of them, but my personal favorite was the shrimp, followed by the lemongrass chicken and bulgogi. All the ingredients were fresh and paired well together. I would say the protein amount was generous and I always had a bite of everything. I also especially like how every bite I got an extra crunch from the crispy egg roll, I've never really had that in a spring roll before but I really enjoyed that aspect. Brea honestly feels like a bit of a food desert when it comes to exciting, modern concepts, so this is such a welcome addition. It's customizable, quick, and far better than what you would expect from typical mall food. The last time I was this excited for a new place to open was Bon Me in Boston and Pinkberry back in the mid-2000s. That's the level of "finally, something different" energy this gives. Roll & Co is a build your own spring roll. I decided to order the three custom spring rolls. I like that you can have different type of protein on each roll. I decided on two rolls with lemongrass chicken and one roll with pork sausage. You can also choose between shrimp, tofu, or bulgogi. Next, you get to add a base such as lettuce, rice noodles, or half and half. From there, you add up to 5 toppings and a sauce. I went with their orange sauce. It was good. I thought this choice was good and it gear toward something more healthy. I wish for the price it would come with more protein. I felt there was more veggie than protein ratio. I was getting more bites with just veggies but the bites with the protein were really good. Both of my pick of protein were flavorful. The service was great. Almost 4 months later, I tried Roll & Co once again after my initial visit from when they first opened up. I'm here to update my experience from a 4-star experience to a well deserved 5-star experience. I arrived today, Sunday (6/8) afternoon around 2:30 PM and was greeted promptly as the person that helped me was taking some time refilling their items. I went with their 3 Signature Rolls with Beef Bulgogi, Pork Sausage, and Shrimp. The pork sausage was good last time but I had a small issue with their shrimp due to lack of flavor. The shrimp this time around was amazing and I'm glad they figured it out to make it better for the customers. The pork sausage was good like last time and the beef bulgogi was delicious! I will say that my experience last time was good but this time around, all the flavors were spectacular! I went with their peanut hoisin once again and it tasted the same as last time which showed great quality control. I have a minor complaint about the Vietnamese coffee being a little light and very sweet but still very refreshing. I was able to redeem my 20% off discount card they provided from my last visit which was great. I 100% recommend Roll & Co if you're in the area. They provide great customer service along with fresh, healthy options for build-your-own spring rolls and many more that I have yet to try. Kudos to the management team at Roll & Co to listen to customer feedback by keeping the ingredients fresh and changing around their recipes to make the experience better. The peanut sauce was good but wasn't very strong in peanut flavor like other places I've tried. It had a very faint peanut flavor. I liked that the food bar was clean and organized; and of course fast because there wasn't a line. I would still consider getting food here again if I wanted a clean, healthy option at the mall. This is located inside the Brea Mall Food Court area. What a nice addition to the food court. Went here on their grand opening day. Line was long due to their grand opening day special offers. The first 50 customers get a free set of 3 rolls. Then for the rest of the customers, you get a free set of 3 rolls when you purchase a set of 3 rolls. Staffs were very friendly and answered our questions regarding how to order, etc. This being our first time trying out Vietnamese spring rolls, chipotle style, didn't know what to expect. But the staffs were so helpful explaining how it works. This is similar to how you order at Chipotle, but with spring rolls instead. They also have their bowls, but we didn't get to try. Ordering was easy and simple, just pick the rolls you want, and watch the magic happens right in front of you. I ordered the set of 3 spring rolls (Beef Bulgogi, Lemongrass Chicken, and the Pork Sausage). Also purchased the Green Thai Tea. I normally don't drink green tea, but this Green Thai Tea combinations was so refreshing and tasty. The Beef Bulgogi roll was not bad, I like the Lemongrass Chicken and Pork Sausage rolls better. I must say, this is light and healthy. I prefer eating this over some of the other foods they have here in the food court. Dining area is bright and clean. I had heard about the grand opening of Roll & Co So was excited to check them out. I decided to get their "Trio Vermicelli Bowl" ($14) which came with a combination of lemongrass chicken, pork sausage, and shrimp. I also decided to make it a combo for an additional $5.50 more in which I was able to choose between an eggroll or a Vietnamese chicken wing, as well as my drink of choice. I enjoyed the flavor of the lemongrass chicken and sausage however, I felt the portion size was a bit on the smaller side. The vermicelli noodles were also served cold, which is not something I have been accustomed to when I've ordered other vermicelli noodle dishes from elsewhere. As a note, if you decide to upgrade your meal to a combo, you only get one eggroll for the appetizer which is a bit misleading as the picture shows two pieces. The gentleman in line behind me, also upgraded his order to a combo and inquired why he only got one eggroll as he thought he would be receiving two pieces as well. When I walked up to Roll & Co, I was the only customer in line, however service was very slow. For a restaurant where the food is already cooked and laid out, it still took about 15 minutes for them to put together my vermicelli bowl and provide me with my drink and eggroll which felt way too long given that this was a fast casual type of restaurant. I understand the restaurant recently just opened up so they could just be working through the kinks. Overall, 3.5 STARS as service wasn't ideal, but rounding up to 4 as I did enjoy the flavor of the meat despite the smaller potion sizes. read more

It's a very interesting concept, and as someone with Vietnamese roots, I was excited to try it. Nice to see some Vietnamese influence in the Brea Mall food court! The rolls themselves were on the thicker side. For protein, they had lemongrass chicken, grilled pork sausage, shrimp, and bulgogi. My favorite was the bulgogi--it reminded me of KBBQ. However, I did notice that the rolls had way too much lettuce for my liking and very little noodles, which I wasn't a fan of. I tried all the sauces, and my favorite was the OG sauce (nuoc mam). They really nailed that one! The other sauces tasted a bit out of place, especially the orange sauce. I thought it would be similar to the one at Brodard, but it actually had a noticeable orange essence to it. The star of the show for me was their Vietnamese lime soda. Man, this was packed with zesty lime flavor, perfectly sweetened, and super refreshing. I'd definitely come back just for this. Roll and Co is located in the food court at Brea Mall, and is probably the healthiest option to boot. They offer Make your own bowls and spring rolls (think a Vietnamese chipotle). There is also a combo that includes a single piece of appetizer and a drink for $5.50. That's a good deal for certain selections. For the proteins I think the beef was the best option. The bulgogi beef has some sauce while cooking and so it has a more robust flavor (wasn't too salty either). In contrast the shrimp had no seasoning at all, so it needs to be paired with some sauce. I could not detect any lemongrass on the chicken, rather it was the char from cooking the chicken breast. Tofu typically has little innate flavor and the tofu here was nondescript. The Trio Vermicelli Signature Bowl comes with chicken, shrimp, and tofu. Portions size was appropriate as an entree, with lots of veggies (lettuce, carrots, mint, cilantro, cucumber). The bowl comes with one sauce. The OG sauce is just fish sauce, the Green Goddess is like a thick salad dressing, and the Orange Sauce is a medium thickness with some tang to it. For a bowl I think the OG sauce is the best pair, allowing for easy mixing to coat all items. The other sauces are good to pair with the rolls, where you can dip or pour on top. The 3 custom rolls are a bit small for a large adult, but might be acceptable with a combo. Appetizers available depending the day and time. On this Sunday at lunch only eggrolls and chicken wings were available (and no desserts on the menu were available). The egg roll is solid, a mix of protein and starch and veggies inside, easy to dip and add more flavor. The chicken wing has a nice crunch with well seasoned meat. For drinks the Green Thai Tea was delicious and the Limeade was underwhelming. The Green Thai tea is enjoyable and refreshing. I was able to reduce the sweetness, though I suspect they did this through condensed milk and so it was not as creamy as I prefer. Limeade seemed artificial, they told us it used a syrup made in house, which was likely mixed with sparkling water. read more
