I have worked in restaurants after culinary school and the front of the house (wait staff and bartenders) never had to share their tips with the back of the house (cooks and dishwashers). Everyone except wait staff and bartenders usually gets paid minimum wage. Wait staff and bartenders rely on tips because their hourly wages are lower than minimum wage! From now on I will ask every restaurant if they are going to charge me extra to help pay the cooks and dishwashers, if so I'll walk out. If a restaurant can't paid their cooks and dishwashers minimum wage and have to charge customers an extra 3.80% something is very wrong!
