My boyfriend and I both ordered the Shoyu ramen (although I got mine without bamboo and leeks), and I was pleasantly surprised by how generous the portions was. The pork was also delicious, and practically melted in my mouth. However, I did think the broth was too salty for my taste and the service was very slow. This place is amazing on a cold winter night. It's the highest and most rated in town, according to Google. I ordered the Katada miso, Asahi, Sapporo and hot sake. Pros: you can see the kitchen! It looks clean and they make their own ramen. Food looks authentic. Drinks are cheap, everything is approx 5 euros. Cons: Asahi and Sapporo seems a bit water down. Sake is supposed to be room temp. They can heat it up, but it's still just warm. My miso ramen is thick, but it doesn't feel like the traditional way from slow cooking the pork. It doesn't separate when the soup are done like miso normally does. The thickness feels more like from corn starch. The chiasu seems like thick cut bacon, not the melt in your mouth sort of meat. Maybe if I upgraded to "special chiasu" it'll be different, make sure to ask! read more

We started with the chicken dumplings as a starter. They we're really good. Only minutes later our ramen arrived. In total service is amazing. We had almost no waiting time for food. Chicken tasted very good. The pork in the ramen was not the best, cold and not flavorful. The broth was good. The kimchi was very mild, not as spicy as usual. Too bad. My family and I were desperately craving Asian food after having been in Europe for 2.5 weeks and stumbled upon this ramen joint, boarder-lining the red light district. They should not claim it as a Ramen. The soup is not hot when they serve. It is just warm and they say that that's how they do it. The Bao were so dry - you will choke if you don't follow with water. The gyoza was ok. Nothing special. Also, if you want spicy, it's probably just a 4 out of 10. They don't know what spicy means. The restaurant ambience is okay. Nothing fancy. 0 star for the service. The Ramen bowls came first before our drinks and appetizers. And they would not apologize. They said that the kitchen is busy, they serve what comes out first. We got there at 9pm and the restaurant was more than half empty and they close at 10 pm. They will rush you to get your order but it took them 15 minutes to get us our drink orders - Non-alcoholic - I'm talking about green tea and water. So I've eaten here three times and every time it was simply subpar. Disclaimer: I love Japanese food and I'm a bit fussy when it comes to proper Japanese food. Raamen is fast food in Japan. The broth takes a few hours to make (sometimes a couple of days) but after that, you just quickly cook some noodles "al dente" (because noodles should never be soggy) and slap together some other ingredients into the broth. After gobbling all your noodles and munching on your roast pork, seafood or grilled beef (to my knowledge, they do not offer the latter two proteins with the raamen here), comes the best part! Drinking the soup directly from the bowl. It should be hot, savory, well seasoned and traditionally without MSG or anything like that. Here's where everything goes wrong at Ramen-Ya. The miso broth is creamy! WHUT?!?! Yes! CREAMY! You heard me right! It's almost as if they used half double cream and half sour cream in the broth. I know they didn't. I can taste that they didn't, but it just feels and tastes like they almost did! No matter how much salt and shichimi (Japanese blend of 7 spices) you add, it's still kind of bland, lukewarm and CREAMY! BLAGH! Have I mentioned that the broth tastes creamy? It tastes creamy. I do not like it. Every time I went there, my company felt the same way about the broth. Raamen should make you want to drink the broth, ardently!! This broth just makes me wanna leave and never come back, ardently! The last time I went here I tried the vegetarian raamen and it came with a huge slice of tomato on top... a m*therf*cking raw TOMATO.... on raamen!!! .... WTF... This place looks very trendy, but also kept their Asian/Japanese look. On the table they have also gadget things like: handy tooth piece can, spicy oil where you need to push it to prevent any waste etc. The chef/boss of this place took training in Japan for a month how to make the perfect ramen. It is a very difficult process to do this and you need to know the technique to create such a good ramen and great soup base. I tried the Hakata with miso soup flavor. The ramen was really perfect and soup was soooo delicious! The egg was melting on my tongue and the pork was also tasty! Please also try the Mint lemonade which is super good! My first time eating original tonkotsu ramen my cousins I don't know how many hundreds of times he has tonkotsu all over the world. To me it was a great first impression for eating ramen. The restaurant was a pretty small spot in the red light district or at least the entrance was. The restaurant itself is located in the basement of a building so it's easy to miss and walk passed it. My opinion? You shouldn't be walking passed it if you really want to taste a great ramen. There are a lot of options for Japanese food in Amsterdam as well as a lot of places to go to. We tried a couple but out of all of them Ramen-Ya was the best. I can only give five stars. The food was superior. So pleasantly surprised with Ramen-Ya in Amsterdam! Off the bat, the atmosphere is really welcoming and relaxing. Great for a quick bite or for a group looking for a casual but aesthetically upscale meal after a long day of sightseeing. Located just down the way from Dam Square and easy to find. Service was great, immediately we were seated and greeted by really friendly wait staff. Unlike most traditional Dutch service, they were polite and attentive and always nearby to answer questions or refill waters, etc. The food was perfect for a cold day in Amsterdam. As a fairly avid fan of ramen (and hello, don't I get kudos simply because I'm Asian?), this is definitely a bowl that doesn't disappoint. I tried the Sesame with regular salt flavoring and my boyfriend tried the Hakata with both soy sauce and miso. Don't be afraid to add/order additional toppings! For the Hakata, it definitely is a bowl made well but designed for your own addings as well, as my boyfriend found he could have used some more veggies or meats. Coming from Brazil (which has the largest Japanese community outside of Japan) and having grown eating homemade oriental cooking, I'm pretty picky about Japanese food. That said, I'm really glad I've found Ramen-ya; it was the last missing piece to make me feel at home in Amsterdam. Some have complained about the heavy, creamy broth, but that's exactly what's expected from a Hakata-style ramen: a broth with an almost milky texture. And here, Ramen-ya excels: the tonkotsu is a punch of heartwarming flavours, and the tasty homemade noodles pair beautifully with it. Choose the "Hakata Deluxe" with the miso-charred pork, and you're in for a treat. If you want a little bit of heat, ask for extra kimchi. I've ordered only two side dishes so far: the pork buns and the gyoza. They're both good--not amazingly unforgettable, just plain good. They have some good non-alcoholic drinks as well, props for the Cassis Calpis, and the mandatory homemade mint lemonade (why is it so difficult to find a decent lemonade in other places around Amsterdam?). The staff is really polite and helpful, and the location is an underground gem in the middle of the busy city centre (the entrance is a glass door leading to stairs--don't be afraid to walk them down :D). A perfect break from all the walking and shopping around Dam Square. The only thing that made me give four stars instead of five is the price. I know Amsterdam is not the cheapest city in Western Europe, but every time I have to pay €40 for two people (two ramens, one gyoza, two lemonades). In Japan, ramen is supposed to be a cheap, fast meal, but here it seems it has a "gourmet" badge or something. Crispy, incredible sauced chicken on a cloud-like bun with just the right amount of Japanese mayo, scallions and a piece of lettuce.. So so good. The noodle to broth ratio on the Mount Fuji wasn't my favorite. I kid you not when I say there must have literally been a full pound of noodles. My pork was also not super tender (in fact, I'd say it was dry)... But: The flavor in this broth, and the silky, unctuous texture of it was supremely satisfying. This is probably the best miso based broth I've ever had. My husband got the Hakata, same broth, but with way less noodles, and fall-apart tender pork. He ended up taking half of my noodles... we probably should have inverted our orders, that man loves his noodles! Sadly, both of our eggs were stone cold in the middle and slightly overcooked (mine less than his). Service was incredibly slow, but super friendly. I later asked a staff member if the noodles were made in house and she later reported that the noodles are made fresh somewhere else (in town?) and brought over to the restaurant. That all being said, I'm being a ramen snob and I think this ramen place is decent. It's just a bit expensive for what you are getting. 14€ could get me a really good bowl of ramen somewhere else but I think this ramen is fine considering where it's located. I also ordered the mint lemonade which was refreshing and yummy, but like other reviewers have mentioned, a tad bit on the sweet side. I loved this place! The front consists of a narrow glass display and door, and you can't see people sitting on table for anything, because first you must go down stairs! ;) Once you go down, it's another world hidden from the rushed life of the city, and although there's no view to the outside, the decor is amazing, the seating is comfortable and it's great for either groups or couples. It's also very quiet. The staff is very nice and polite. If you pass by the kitchen you can see the Japanese chefs doing their jobs and cooking ramen and other delicious dishes. They have good ramen, with a light delicious flavor. I do wish they put some more veggies though, and a bit more salty. Also, they cook their own broth for the ramen. My friends really wanted to eat here so I gave in and went together with them. The entrance was cute and fancy. Sadly enough I didn't really like the ramen, I am not sure if its because it just didn't fit my taste but I just don't get the hype about this restaurant. At the other side the kimchi was good and delicious. I took that as a sidedish. I was also very dissapointed that they didn't have torikatsu or teriyaki ramen. A great place to eat ramen! I really enjoyed the hakata ramen, it was by far the best ramen I have ever experienced in my life. This restaurant truly opened my eyes to the magic of ramen. The bathrooms were clean and the staff was friendly/useful when asked about the different types of ramen. When you are there be sure to try the mountain Ramen challenge! It involves getting a huge bowl of ramen and you need to eat it "till the very last drop". My friend tried to tackle this challenge yet failed about 75% done. Sweaty and tired from traveling, we were in the mood for comfort food which for us is ramen. After getting over the disappoint of this place not having AC, I was finally able to enjoy the meal. The noodles didn't appear to be made in house, but I guess they rarely are. Still the fact is some places do and this one doesn't. That said the ramen was still good. I got the tonkatsu ramen (Hakata) and it was very flavorful. It had a slight taste/after taste that I wasn't used to and took some getting used to, but the egg was cooked nicely. Went on a Saturday evening after reading yelp reviews on the store. I had the hakata ramen. The taste was mediocre, unlike what other reviews have presented. The noodles were stringy; the broth was overly thick. There were other thick ramen broth that i have tasted and enjoyed, but not this one. I guess i shouldn't have expect too much from a ramen place in Amsterdam. Service was so-so (or below average). The experience could have been better if the wait staff handled the billing incident better. The credit card machine was not working for some reason and i was demanded to withdraw money from the atm. I did not carry cash as I am only in town for the day to transit to my next flight. The staff did not ask nicely or applogize for the inconvenience that was caused. As you can imagine, the experience with the store wasn't positive at this point. The cashier further demanded that I leave an item behind thinking that i would run off, not paying. This request felt weird to me, since it is not that I don't want to pay but their faulty equipment did not allow folks to pay. From their end, it was clear that they didnt trust their customers. For me, I don't feel comfortable leaving something valuable behind (credit card, ID, or cellphone), since I do not know what might happen to it when I am not watching over these. The least that I would want happen is for any of these items to be lost or be stolen when I am traveling overseas. I acknowledge that I might be feeling overly cautious, but hey, I am traveling alone in a foreign place and I am in Amsterdam. Better to be cautious than to be sorry. Further, the atmosphere in the restaurant didn't make me feel safe to leave important things with the restaurant. This finally worked out when I requested the staff to escort me to the atm. Got the money and paid for the meal. In sum, I would not recommend going to this restaurant if you want a hassle free experience during your stay in Amsterdam during your meal time. The food quality is average and the attitude of the staff could have been better. This is perhaps an over-generalization, as I only had the negative experience with the cashier staff. I had high hopes for Ramen-Ya, sadly they were not delivered upon. The service at noon on a Friday (when there were only 2 other tables) and us, a party of two, was lacking. The pork itself was absolutely tasteless, if you where blindfolded and someone put it in your mouth without telling you what it was you would probably think something along the lines of the chicken out of the Campbell's chicken noodle soup in a can that you had in your school lunch. The one positive was the noodles. I don't like thin noodles as much as thick but they only have thin there and their thin noodles where good. Also, they let you pick how soft or firm you would like them cooked. The topping: egg was really cold, not the worst thing but the bamboo shoots where also really cold which I didn't like. The nori was fine and they serve leeks instead of green onions no issue here since I am not a fan of onion of any kind anyway. Oh and p.s. - my fiancé was did not enjoy the pork buns, they put a type of mayonnaise on the pork buns and it's difficult to scrap off.
