Absolutely top-notch vegan ramen, amongst the best I've ever had. It's well worth planning in advance and booking this place for lunch or dinner.
You usually have to book at least a day or so in advance to eat here due to the demand. We booked a lunch reservation (€10 deposit per person -- deducted from the meal charge). The way it works is you pick from 1 of 5 "sauce ramens" or 1 of 2 more soup ramens. (They have complementary water and hot tea.) The sauce ramens are not soups but creative Japanese noodle bowls. My wife got the Red Hot Chili Pepper (€15) sauce ramen, and I got the Taso ramen black (€18) and added extra spicy sauce (€1) to it that they bring out on the side. We also got 4 pieces of takoyaki (€4) -- traditionally an octopus dish but obviously this one was vegan.
The takoyaki came out first and was tasty, though nothing all that special. Nicely fried, doughy and tasty. My wife's sauce ramen came with what looked like fettuccini-style noodles, served with a very rich, nutty sauce, chili oil, corn, green onions, and a few other toppings. The bit I tried was pretty incredible, and my wife was extremely happy with it.
My ramen was simply phenomenal. Coming from Vancouver, we are spoiled with amazing ramen places, so I'm often disappointed when travelling (as I had been by 2-3 other Amsterdam ramen places). Well, this ramen was incredible. The broth was miso-based, rich, complexly spiced and amped up nicely by the chili oil. The noodles were thin and perfectly cooked, plentiful and filling. The toppings were a bit lacking, but still tasty, with some sort of crisp cabbage, corn, cilantro, and pickled onion, served with a side of two big pieces of katsu, which were delicious. Top-notch stuff.
