Excellent spicy miso ramen. The spicier you ask for the more expensive it is but like by a quarter per level which is something I'd never seen. Level 2 of 4 was perfect for me. It was worth adding the egg which was super runny. Yum. Noodles tasted super fresh and I loved that there was both ground chicken and char siu. We found this spot on yelp and it definitely did not disappoint. The kid size ramen comes with a toy which I thought was pretty cute. Little kids were getting excited to pick a toy at another table. I've been meaning to visit this eatery after meeting a couple in Japan who resides in the south bay and how this ramen eatery uses fish power in the broth. This is similar to a ramen eatery in Ginza I dined at, but they use real fish to make their broth. I was greeted asap and seated since we arrived in the early evening on a weekend. The decor is casual and comfy. I made my Josui ramen a combo which included a side salad and karaage chicken. The chicken was light in batter and non-greasy. My ramen had a nice flavor to the broth and the chashu had a nice ratio of fat to protein. The ramen was simple yet very satisfying. Got here around 7 pm on a weeknight and the wait was about 15 minutes. Me and my friend were seated at the bar. All the servers are pretty helpful and knowledgeable about the menu! Now the food. It is almost like a Pavlovian response whenever someone mentions a new ramen place to me: I must try it asap. So, I stopped by Josui the day after a friend told me about the restaurant. It is in a small plaza on the boarder of Torrance and Gardena. Inside it is quite cozy with table and counter seating for 30 guests max. I arrived 10 minutes after opening and the place was already almost full. The very attentive server got me seated and brought water right away. I browsed through the menu on the table and ordered Josui Ramen with Side Order of Small Salad and Gyoza Combo. The broth made of pork, chicken and fish was quite flavorful and rich without being excessively oily. The thin style noodles were cooked perfectly and al dente. We met at a volunteer event, & bonded over our philanthropic passions for community services & love food. She offered to travel to my neck of the woods for a weekday lunch so here we are. Ramen Josui is located on the northwest side of The Plaza business center. It's the sister restaurant to Josui Ramen, the award-winning, Michelin Bib Gourmand in Nagoya, Japan; their other sister is located in Honolulu, HI under a different moniker: Taiga Ramen. With plentiful ramen shops in the South Bay, Ramen Josui stands out with their spicy ramen options: Mazesoba, Spicy Miso Ramen, & Spicy Ramen. The entrance is unassuming with a couple of 2-seaters, should you prefer to dining outside. Once inside, there's a large bar on the left, mostly with individual patrons, with a couple of booths & tables running along the wall; simple decor with some scattered wall art like Osaka Castle. After placing our order, we spent the next hour or so chillin' & catching up. The Karaage appetizer arrived quickly, & noshed on these hot, crisp, juicy, & flavorful chicken... it tasted great with or without the splash of lemon juice! The lemon added some bright sour citrusy flavor that enhances the chicken's savoriness. Our ramen bowls followed shortly... I can smell the spiciness of the broth, but don't breathe in too close, or you'll start sneezing when the chilis tickle your olfactory bulb. The pork & beef blend was flavorful with that spicy kick... true to their word this combo will make your taste buds tingle! The spicy broth was tasty, almost creamy, & had good depth of flavor, but it doesn't have that luscious umami flavor of SSG's tonkotsu broth. And yes, I know it's a different type of broth for the Taiwanese style ramen, but I love unctuous ramen broths. If a bowl of ramen isn't enough, turn it into a combo set for $3.50: small salad & karaage (3 pcs.), or small salad & gyoza (3 pcs.). I came back a couple of months later with my brother & we split bowls: Abura Soba & Josui Ramen. Abura Soba is a soupless ramen with tender chashu pork, shredded nori, moyashi, menma, negi, & garlic oil sauce... imagine chewy noodles (it was a bit too al dente, needed another 30-secs.) with a savory, umami garlicky sauce offset by tender pieces of pork, with contrast of crunchy bamboo shoots & moyashi, & sharp crunch of fresh green onions to the rich, oily bowl of noods. I threw in a heavy hand of togarashi for some chili heat. Next time I need to throw in a soft-boiled egg for some added richness, & creamy elements; a Jidori egg would be even better. The moniker ramen is made with their signature stock that's a balance of pork & chicken with a fish finish, so it's a lighter & flavorful broth (yep!)... throw in a couple of slices of pork chashu with nori sheet for some salty oceanic flavor, contrasted by bamboo shoot crunch & crisp, mild sweetness from radish slices (only on a couple of bites) with gentle aromatics of wilted, yet springy onions. Compact menu that consists of ramen bowls with options to upgrade to a combo set or customize with toppings, appetizers, couple of salad, rice bowl, & dessert options; moderate prices & serving sizes. The menu was rather simple, I was not overwhelmed by variety. The price was medium, not expensive nor cheap. The ramen could be served with add-on combos. Which i had their house special ramen with fried chicken and salad. Food was served within timely manner. The broth was hot and scrumptious as you can taste its freshness. Not some other ramen shops use pre packaged broth. The portion was ok, I recommend combo unless you got a small stomach. The fried chicken was definitely delicious as the seasoning could be tasted. Visited right after the place opened up on a Sunday. The place was already pretty packed and had only 1 or 2 tables left. It's a dimly lit place with no music on. Hardly any elbow rooms between tables and you can hear everyone's conversations and watch them eating. I was afraid I'm going to brush against someone's meals somehow or get elbow punched in my arse going in and out of my seats. It's also a family friendly establishment as I saw many who came in with babies in their prams. Toys are also offered to children as well. However, they don't offer high chairs or anything. The passageways are also narrow so it's one small stumble away from getting dumped with hot soup right on your head. Nobody's safe in the restaurant from that. If you need a seat for 5 people or more, the rude Japanese lady will tell you to just squeeze yourself into the booth seat where someone will have to sit side by side with 3 people. Got a baby and need more space but came with just 2 adults? Tough shit too bad. I got to watch a poor mom hold the baby and having no room to enjoy eating her food as the pram had to be put away. Her companion got to eat the piping hot food while hers just sat there at the table to switch turns holding the baby. This place will also not let you adjoin two tables together or anything for diner's comfort or safety. A very very typical Japanese hospitality-- more like hostility towards any sort of reasonable accommodation requests. It's no wonder why people in Japan prefers not to have children. I wouldn't either. This restaurant is in the middle of LA County of all places and one of the ugliest aspects of Japan was also on full display there. As I got bored people watching because I got to wait for my food to arrive after everyone else who got seated after me and ordered, I couldn't help but to wonder how and why the treatment of people so saliently differs by this woman. I guess it was all contingent upon whether the xenophobic ethnocentric Japanese lady thought who or what you were. It really seemed to have been dependent upon the perceived age, language abilities, ethnic background, or the socioeconomic level of the customers. Given how accustomed I became with other ramen shops providing less racially or ethically motivated treatment of customers, it just made me have a bad taste in my mouth before I even ate a bite of their food. Anyhow, I ordered the gyoza and the spicy tantan that day. Both items were nothing to write home about. I have had both items better elsewhere including from my own kitchen. The tan tan broth was extremely bitter and smoky. It had raw diced onions in it also. The noodles tasted undercooked. The gyoza was pretty empty inside and gummy. Both items were very underwhelming. At no point anybody came by at my table to ask how everything tasted. I really don't think they cared either. Unless someone I know insists on eating at Josui in the future, I would not return again at this establishment.
