Decided to pop in for a quick lunch and glad we did. The place was bright and inviting and we were quickly seated. Once seated, the server came over and took our order. Drinks and water were delivered quickly. The place wasn't too crowded as we could actually have a conversation. The pizzas came out quickly. They looked great. I am not normally a fan of thin crust but this one worked - I am the one who ordered pineapple on pizza. The personal size, the small, was just enough. It was good as we both had zero leftovers. The server checked on us enough to not have empty water. When I have time and am in the area this is a place I'd recommend to stop at. I am curious what it looks like when the weather is warmer and the crowds are larger. I'll just have to go back and see for myself. read more

Spent $43 dollars on a large Protos's pie which includes mozzarella, sausage, and I added red onions, black olives, artichoke. Horrible and inedible pizza. The whole pie, bread, little sauce, cheese, and the difficult to find toppings that were added were all dry and bad tasting. The onions were raw. I am not a complainer, but I am not happy, I just wasted over $40 in a pizza that I will discard. read more

Awful terrible service. I arrived a little before 9 PM on a Friday evening. There were people that were seated and had just ordered. As soon as I walked in, they told me they were closed. The sign clearly states that it closes at 10 pm on Fridays so I don't understand why they lied to me about something clearly stated on their door. Their open sign was fully lit as well. I don't know if it was because I was wearing a crop top or because they don't like how I look or anything. I just know that they had seated people literally thirty seconds before I walked in. One of my family's favorite local pizza places. We usually go to the downtown Denver location so this was our first time checking out the Boulder one and it did not disappoint. First off, Kristy was our server and she was fantastic. She was friendly and was really knowledgeable about the menu. We love the tomato and mozzarella salad (caprese), but my mom really wanted greens as well so Kristy added a small bed of greens which was nice of her. I always get the Proto Pie and it is so delicious. I love the usage of basil in this restaurant since it's one of my favorite flavors. It's in a cute corner spot up in North Boulder and parking really isn't that bad which is rare for Boulder. Definitely worth checking out for some really top notch pizza! read more

We came in with family and were seated promptly in a small table in the back. Loved it! it was relatively quiet compared to the rest of the restaurant. The corner was darker, and I loved that there were no blaring lights or speakers anywhere near us. We were not rushed, but given time to review menus, chat and visit with family. The server was kind, cheerful, helpful, and amazing! As a Celiac I did not feel I could order with safety, but my party had, by all reported accounts, wonderful-tasting pies; and it did smell good. Horrible. Very thin crust like a saltine cracker with no flavor. If you want thicker crust you have to pay for a large while they "fold" it over. Here they just worry about making money not quality of the pizza itself. If I recall, this same place was in denver along the platte river. It didn't last long. read more

If you are looking for a fast super fresh lunch find a Protos. The one in Boulder had seated service and I watched them make my pie I think it was faster than Mc Donalds and obviously better. It is a thin crust style pizza. The ingredients are very fresh and the taste proves that. Highly recommend this locally owned business. In addition the staff is amazing John the manager is available and very nice. I am so had a dessert which was gone before I could get the picture but defiantly ask about the cannolis it was the perfect mix of sweet. read more

Called them up, do you have a table, we don't book tables but if you come in the next 20 mins should be ok the lady on the other end replied. So we rock up with two hungry small kids 15 mins later and we're informed there is a 20mins wait. Ok we're a little miffed but decide to wait it out. 5 mins in we decide to sit at the bar and owner hands us menus. We can order now and by the time we get to the table we'll have our food we think. Bar woman finally interacts with us 7-10mins later - you know how some members of this profession are. Oh, you have to be seated to order she informs us. We walked out - either a big misunderstanding or totally bloody incompetence ??? Shite service, remember people just want to be acknowledged, make eye contact with them as soon as you can. Shit we've of waited half an hour if we'd of got some kind of acknowledgement/ apology or a simple hi as soon as we sat down. Back to the drawing board mate. This reminded me of the shite service we get in Germany. read more

Proto's used to be one of my favorite spots. It was super reliable, fast, and great pizza. For some reason in the past two years I haven't been as impressed with the pizza as I used to be. I can't exactly put my finger on it but the pizza doesn't seem to have as much flavor as it used to. I've tried a lot of different pies here and it seems to be the same unfortunate story nowadays. I keep trying it though so hopefully it'll regain some of its older luster. The staff is always incredibly kind and sitting at the bar is a fun atmosphere. read more

By far the best pizza we have ever had. The sauce is the perfect amount where you get the flavor but it doesn't overtake the toppings. The toppings you can tell are fresh and quality. The salad was perfectly dressed. I usually have to have ranch with pizza but was pleasantly surprised with how delicious the pizza was that I didn't miss the ranch. This a regular lunch spot for us at the office. We get the lunch special that's a perfect portion and always comes out quickly. I always get soft, flavorful feta on my salad and choose the pizza with sausage (and I immediately devour the sausage chunks and then eat the pizza). I got the Pizza Margherita, which was good but not great, and they had Pepsi (I'm all over that!). 90% of the time the conversation goes like: - Waiter: Would you like anything to drink? - Me: I'll have a Pepsi - Waiter: We don't have Pepsi, I'll bring you a Coke. - Me: No thanks, I'll have water. *Waiter stares at me with an odd look and walks away.* So, I'm always a bit surprised when a sit down restaurant has Pepsi, and most of times I think they'll just give me Coke thinking I won't know the difference. I haven't given this low of a star rating in a long time but unfortunately this pizza was truly terrible. The dough was poorly made, had no flavor whatsoever and the texture was not what you expect from Neapolitan pizza. It was reminiscent of what I would end up with if I bought store-bought thin crust dough in a can at Safeway and cooked it in my oven at home at the wrong temperature. The tomatoes on top had no brightness or flavor or acidity, and the cheese did not have that lovely creaminess of high quality mozzarella. It really was just the most bland pizza I've ever had, and didn't even have a pleasant texture to redeem it slightly. I flip flopped between one and two stars here but will settle on two because it was edible and I didn't get sick from eating it. read more

Proto's is my favorite place to eat in North Boulder. The pizzas are great, especially the Atomica. And don't miss clams and garlic with either red or white sauce every Friday. Add the mixed greens with Feta and fresh cracked pepper to make it a true dinner. Their desserts are great as well. The bar is where I like to sit and enjoy one of their mostly local brews on tap. Was hoping for something on par with Crosscut in Ned but not even close. Granted it's a pizza restaurant but the margaritas were very disappointing: devoid of flavor and alcohol which at $9 a go is not cool. If I have two margs at the Rio, Centro, Efrains or Rincon I know about it. Not so here it seems. read more
