I love supporting local, so not going to give less than 4 stars for someone that pours their heart and soul into something. However, $7 for a danish is absolutely absurd. A danish at most should be $5, no matter how good the ingredients. Yummy! I've picked up proof bread before from farmers markets but decided to have it delivered this week. I had seen the pretzel croissant on Instagram and knew I had to order one. This place is my heaven. Much like the product they create, The staff is kind, warm, and inviting. I love that you can see the process and how they loving talking about "Harriet". Even on a stressful day like today where things didn't quite go right (a delivery truck was late). They seemed so calm (on the outside), they were kind and talkative. So, I am a almond croissant junkie. Their almond croissants were right out of the oven. They were warm flaky on the outside, gooey (though fully baked) on the inside. The almond paste, though I did not verify, totally seemed fresh made in house. I get an almond croissant every city I go to. I have heard of Proof so many times now from other people I had to make a stop. It took a couple tries since each time I happened to be in the area they were closed. However I had a workshop coming up where I was going to be teaching people about sourdough and part of that was going to be teaching people how to find the real deal & comparing the taste between a true sourdough & the fakes you find at the grocery store (spoiler alert; the class could spot the difference right away & I didn't have a crumb left to bring home). I've been getting Proof bread since they moved out of the garage and into their Mesa flagship bakery. The bread and pastries are always delicious, and I keep a sliced loaf (usually the country sourdough) in my freezer at all times. I wanted to shout out their Mesa bakery manager, Ian, today though. Proof just restarted their local home delivery. I've used a previous iteration of their delivery service and was sad when they discontinued it. I prefer to go to the bakery, but sometimes delivery works better. I made my order online (very easy!) and 15-20 minutes later I got a phone call from my courier saying that he'd arrived at the bakery and they were out of the loaf I ordered, but that someone from Proof would deliver a freshly baked loaf to me later today when it got out of the oven, if I was okay with that. The first part of my order arrived on time and about 2 hours later I got a call from Ian to thank me for my patience and to let me know he'd dropped off my other loaf. He threw in some extra croissants too. TL;DR - Proof provides outstanding customer service to go along with their outstanding breads and pastries! read more

Proof is amazing! I was buying from markets for awhile and they were very kind to me, so they kinda made a fan for life. I absolutely love the rosemary twists, very balanced flavor, I always enjoy the croissants and I will try most the specialty things they come out with. I really love bread, sourdough is my favorite so this was a natural fit for me, there are plenty of bakeries that make traditional breads so it's nice to have one that specializes in sourdough. The owners also own Main St Harvest next door, which is also a magical place that accepts EBT you can buy Proof products there as well as many other local vendors. The fact they accept EBT says alot about how much the value the WHOLE community. read more

I don't know why the hype about this place is.....the pastries and bread are soo dry and inconsistent, the last time I gave them a try again and had the fruit danish (I believe it was peach) it's been the most hard , driest, gummy danish I've ever had in my life, you can tell they only focus in production and there's no knowledge about pastry at all! It was completely sour toobecause They have no idea about how long the starter levain is ready...I cloud tell their country or sourdough bread was as flat as a ciabatta which is ridiculous!! You can tell Phoenix has no bread culture at all when this kind of bakery make this production and think they know about baking So disappointed. A model small business, not just bakery. Of course, this is a phenomenal bakery, and the pastries they are able to produce with a healthy sourdough approach is nothing short of amazing. And to that note, the pastries I got from there, pain au chocolate, almond croissant, rosemary twists, and croissant, were all one of the best, if not the best, I've had. The pain au chocolate has a substantial chocolate bar in the middle that is pronounced rather than a wimpy one that is barley there when eating - A+. The croissants and lamination process they use in general is obviously fantastic and produces pastries that are special. Customer service is superb. Everyone working there is putting in hard work so that consumers like myself can enjoy perfection in their products. I was greeted with a smile and a warm welcome coming in the door. Such a well ran small business that it gives other small business owners like myself a goal to strive for. And one last thing: I have been baking sourdough bread for about a year now which was completely inspired by the owner of this business. Most of the time I purchase has custom blend of flour from Hayden flour mills to help support the business. Healthy alternatives aren't a staple in MS where I'm from, so I'm thankful for people like John who teach others through various platforms how to make healthy alternatives to mass produced products. read more

I absolutely love this bakery I've passed it a couple times and have been dying to get in. Anytime anyone opens the door that magnificent smells just come pouring out. Once inside, you are tempted with a delicious display of flaky desserts, or some of their fresh made bread loaves. I fell in and got a rosemary twist from the croissants and my mouth is still watering for it as I'm typing this. When I say so good, I mean so fresh and so amazing. I also grabbed a fresh loaf of sourdough bread right off the baking rack made sandwiches and accompanied it with some vinegar and oil literally so yummy. It was gone within two days! I also love that they have a little fridge with drinks, as we know, some of the flakey deserts could make your mouth dry. I highly recommend a strawberry lemonade Simply Soda as it is the best strawberry lemonade I've ever had! The employees are nothing but beyond helpful and patient when trying to decide between all these yummy baked goods! And they do take Apple Pay! read more

I rarely find a perfect croissant - and not for lack of trying, trust me, but this was truly perfection. I had the Pain Au Chocolat made with the local DNA organic chocolate - which in itself is the stuff of Chocoholic dreams. But the flaky crispness of the exterior combined with the moist buttery, warm chocolate center were exactly what I was hoping for, but didn't really expect. Addition of downtown Mesa bakery was a great addition to the community and enhances the customer experience and helps you better understand the product and process. Awesome food. The morning buns were similar to a cinnamon roll but lighter so you don't feel bad afterwards. The plain croissant and sourdough loaf were among the best I've ever had. The only thing that was kind of disappointing was the rosemary twist. It was good but I couldn't taste the rosemary so it just tasted like the plain croissant. Now the almond croissant. We came in a bit later in the day and we're lucky to score a baguette. My husband loved it, but it tasted like sour dough to me and not a typical baguette. It also was very chewy and the crust wasn't crisp. I also bought 2 croissants one almond and a pain au chocolate. The fillings were good, but they were over baked to a very very dark brown, almost charred. I don't think we'll be back. It's such a shame because I've been wanting to try their baked goods for some time and never could manage to get here when they're open... Oh well. *Sigh* read more
