    Pain au chocolate

My little guy loves bread, so we went in over the weekend to get him guaranteed GOOD BREAD. We greeted immediately, and my son was given a cute sticker. I had been here before, but that was so long ago when Main Street Harvest was still open next door. We ordered an almond croissant for my husband, sourdough croissant for my son, and a chocolate croissant for me! Everything was so good! I am happy this bakery is such a main staple here in Downtown Mesa. It's an absolute MUST visit. Because - why not treat yourself to a pastry? lol!

This place is so cozy and cute for those who want to get some bread for the house. Or munch on the go. The service was quick and easy. I loved the sourdough croissant, it was so soft and just pure perfection. Definitely a must visit!

    Cute fresh bakery

Super cute bakery located in Downtown Mesa. A limited amount of 3 hour parking is located in front of the store. There was plenty of parking available on a weekday morning. As soon as you walk I. The store you see fresh bread being made and the smell of the bread pulls you to the counter! I got a dirty iced Chai, it was good but I wish the chai spices stood out a little more. I also got their green olive loaf and it was heavenly, it smelled so good I had to try a bite before I even drove away. I also received great and quick service. The cashier was super friendly.

    Morning Buns

Got here right as they opened and ordered 4 morning buns, 3 chocolate chip cookies, and 1 chocolate. It was wonderful and now I am upset that proof is it in my neighborhood in Missouri. It is a cute spot. The majority of the space is dedicated to baking with probably a 6x4 walk space to look at some of their pastry options behind the glass, two registers, and front window shelving space for sliced breads. Service was quick and friendly. I say quick because we got there right as they opened so I wouldn't be surprised if there was a line out the door a little later in the morning.

Q: How does the bread court his sweetheart? A: With lots of flours. A friend had brought some goodies from Proof Bread for a holiday get-together and wow am I impressed! Peppermint croissants, pain au chocolat, lemon danishes, salted rosemary twists, and some chocolate sea salt cookies were shared. I had grabbed one of each to have at home with some coffee and oooooh! I'm a fan! The peppermint croissants had me making heart eyes and let me tell ya, my skirt flipped. SO GOOD! I'm pretty sure it's a seasonal item though so a part of me is misty eyed that I will have to wait for the next holiday season to get my hands on the peppermint croissant. Santa surely would have enjoyed a plate of peppermint croissants. I need to pop into this DT Mesa spot. So many delicious pastries and bread!

It's the most wonderful time of the year! Holiday treats from Proof Bread are just what we needed for a beautiful Thanksgiving dinner! I was prompted to place my Thanksgiving order in advance so I could pick up my order with stress free ease. Today was pickup day and I lucked out with a street parking space right out front. There was a short line at the bakery door but then I saw the order pickup tent outside and was absolutely thrilled with how convenient and oh so easy peasy breezy it was! They were absolutely organized and ready for preorder pickups and so friendly too! They even had some items available to order right there if I needed a few other things. Note to self: if I want to try the brioche rolls next time I need to get there earlier or if it's available order those too! They packed my order so neatly and it was all perfectly and neatly packed! I can't wait to see how much our guests enjoy the centerpiece sourdough and rosemary twists as I know they are as tasty as they are beautiful!

Anyone looking to come here, there is 3-hour parking in front of the place, if you go early in the AM I'm sure there's a spot to park. I parked in the back and walked around. A lot of the pastries looked really well done, or crunchy from the looks. I got quite a few pastries! I also ordered a cappuccino, it was ok. When I checked out I seen some pastries refrigerated. They said they have Boston crème in them, so I got 2. Shared them with my coworkers and the Boston crème one was bomb! Pretty nice place, and open fresh and early!

Farmer's market haul, featuring Proof Bread & pastries

Proof Bread makes the best bread in Phoenix. My favorites are the Khorasan loaf, which stays fresh for so long; the olive loaf, which includes olives from Queen Creek Olive Mill; and the fruit & nut loaf. The croissants also include the Proof starter (named Harriet) and they are truly the best - all other croissants fall short in comparison. I love their plain croissant for chicken salad sandwiches, and can't resist the rosemary twist, DNA chocolate croissant, and the almond croissant. The english muffins are phenomenal for breakfast sandwiches. If you are looking for naturally leavened sourdough bread in Phoenix, come to Proof (or pick up from the farmer's market) - you'll love it.

I love this bakery. The smells of fresh baked bread are mouth watering. It's the best sourdough bread we have had. Perfectly crusty on the outside and soft on the inside. Im not a dessert girl but I have to get a sweet treat when here, they are so flaky and crusty my mouth is watering thinking about it. The cashiers are always very polite and helpful each visit and good service is consistent. You have to get there earlier because the goods sell out quickly!

What a special place. My husband and I walked in here for the first time recently and picked up a few different goodies. But besides the bread and pastries, the ambiance and atmosphere here is just so special. Rhythmic music was bumping (kinda wish I Shazam'ed the song lol) and you're able to see employees making bread. When I looked at the lineup of workers in the back, there were people nodding their heads to the bass, kneading dough, tasting bread, chatting, and everyone was smiling. I honestly don't think I've ever seen a workplace filled with people who genuinely seem to like what they do. Thanks, Proof Bread, for letting me witness such a magical moment--and for the bag of homemade goodies!

And what is a banoffee pie? Good question. Banoffee pie is an English dessert pie made from bananas, whipped cream, and a thick caramel sauce, combined either on a crust made of crumbled biscuits and butter. Some versions include chocolate, coffee, or both. The name is a portmanteau combining the words banana and toffee. TL;DR Come here and get the banoffee pie!
