I LOVE bread and this small bread shop has some of the best tasting bread I have ever had!! Hubby and I stopped here to get some bread for the road before heading home from Phoenix. The prices here are higher than average but so worth it!! I ordered a country sourdough loaf of bread and some pastries for the road. Everything we tried was oh so good!! For pastries (about $5 each) we tried the chocolate peanut butter and rosemary twist which were amazing!!! Both were on another level!! The crispiness and flavors of each were just so addicting!! If this place was closer, I would be here all the time. I was also looking forward to tasting the sourdough croissant... and had ordered it... and then got on the road oh so excited to try it as both my husband and I are bigtime sourdough fans... and realized I was given the wrong pastry!! I was given the pain au chocolate instead... which is basically a chocolate type croissant pastry. It did taste good but it was not special as those can be found at many places. I even checked my receipt which I did not pay attention to at the time I paid... but I guess the guy misunderstood which pastry I pointed to as I pointed to a bunch. Guess we will just have to come back and make sure we get the sourdough croissant to try next time! I also wanted to try the morning glory bun but was not given that either (nor charged for it). We also tried their pizza breads which was filling and so good also!! We saved that for our dinner when we got home. We heated it up quicky and it was some of the most delicious pizza bread ($7 a slice) we have tasted!! The country sourdough ($9) was also good! It was crispy on the outside and soft on the inside. When you heat it up and slather it with butter, it is just heavenly to eat it just like that!! You can bet that whenever I'm in the Phoenix area, I will be doing my best to hit up this pastry!!! I didn't like how the top of my bread was burned. There must be some way to get the messaging on top without the whole top getting so dark or burned. If this is the only way to get the messaging on the top then that's too bad. I would like to have known in advance about this so I could decide if I should just get out without a message on top. Otherwise the rest of the bread was fine. My family and I don't like bread that is burned out even overcooked too much. I think bread is best when it is just cooked and is toasted in the oven. read more

Don't place a delivery order, I placed a large order and didn't get 1/2 my order. When I called the location I was told to come in and tell them what was missing and they would replace I said that was the whole point of delivery I couldn't get into the location. She then said they could refund and it would take 3+ days for the refund. Very disappointed they have great products now I'm without what I needed and now have to track that I in fact get the refund or have to continue to follow up. Very very disappointed. read more

Let's just start with the simple fact that this is no joke, the best bakery I have ever got bread products from. They have somehow managed to mix sourdough into a flakey croissant. Starting with the texture and appearance, this would be an amazingly well baked croissant. It is light crispy and flakey on the outside and soft and airy on the inside. Then you add to it the amazing meadily of the buttery savory of a traditional croissant with the tang of a sourdough, and you have the most wonderfully flavored croissant of all time. The man behind the counter was very friendly and knowledgeable of the bread. He was very helpful in picking out the best things to try to get a broad understanding of what they offer. My friend and I each walked away with over $30 in baked goods and found it to be overwhelmingly worth every penny. Nothing I got was simply good, it was all amazing. The ambiance was great. We did not stay to eat there as they were closing soon, but the place is a simple bakery shop with a long bar facing into the baking area. Next time I am in downtown Mesa, it will be a treat to sit and enjoy my wonderful bread at the counter, emercing myself in the simple bakery ambiance. The only thing I am sad about is that I am have now eaten all of my baked goods from there. read more

I had high hopes. I gave 2 stars just for the 1 item I liked. We bought a loaf of sour dough, loaf of jalapeno cheddar, a croissant, a rosemary twist croissant, and a pumpkin croissant. We spent $40 which is pricey but again I want to support small businesses. I got a side eye and a nasty Thank You from the lady after I put no tip. I mean I grabbed the 2 loaf of already packaged bread off the shelf and all she did was put our 3 single items in a bag. I don't expect to have to tip for the bare minimum. She wasn't friendly from the get go, didn't seem to want to talk. I liked the jalapeno cheddar loaf, it was delicious. Rosemary twist was ok. The plain croissant was basic nothing special. Can get better ones at Costco and cheaper. The sourdough loaf was flavorless and very tuff. The pumpkin croissant tasted bad. Have been ordering from this gifted team for months now and tried nearly all their offerings to date. In case you were wondering what something was like, here are my thoughts: Cranberry pecan sourdough - subtle sweetness and they didn't go stingy on the nuts, love cutting this thin and toasting heavily for almost a cracker like consistency (serve with cheese!). Green olive sourdough - if you don't love olives don't get this one, alternatively if you do this is going to be amazing for you. I can't wait for this one to come back. Salted rosemary twist - so good I can eat these on their own. Flakey and buttery with a mild rosemary undertone. White chocolate raspberry croissant - I had no idea these were going to be this good or I would have bought way more. Perfect sweetness. Would have loved a touch of cinnamon with this. *There is a twice baked version which is a more caramel/chewy texture. Good, but the original is my favorite. Cinnamon raisin sandwich loaf - great taste, just wish the raisins would stay in. Most of them are in the swirl and like to fall out when you slice. This loaf does not come pre-sliced. Classic sandwich loaf - perfect light crust and texture to hold your sandwich together. I love that this comes sliced at the perfect thickness as well. Pumpkin sourdough - tastes exactly as you would expect it, a little more "moist" than their other breads due to the pumpkin Green olive sticks - one of my least favorite not because they aren't amazing tasting, just so small. I didn't feel they were good value for money. Apple hand pie - good but I could have used more filling to dough ratio. Blueberry hand pie - could have used cinnamon or something to bring out the flavors better. Classic croissant - solid but a little messy to eat. Great for those of us who want to pair with cheese and ham for a savory treat. Pretzel croissant - I don't know how they did it, but it tastes exactly as you would expect. Would love this to be in a more bun (maybe closer to a classic croissant or pain au chocolate) like shape to use for sandwiches. Currently I just devour this one whole! Plum ginger tart - currently my favorite fruity one along with the white chocolate raspberry. Flavors came through, not too sweet or tart. I really hope this one comes back. Sourdough english muffins - decent, but I find them a little dense for my liking. Would like a lighter airy texture. Za'tar sourdough - why didn't I buy more? Amazing flavor combo. Bring this back please. Pain au chocolate - after trying the white chocolate raspberry this one doesn't stand a chance. They make these the classic way, I just wish the chocolate was more.. spread out (not the classic way)? Baguette - can't go wrong with this rustic baguette. Perfect for a touch of olive oil or butter. Whole local loaf - as classic as it gets, perfect for thick slices or tearing off. Thinking we need some mini boule versions for soup season. **can order this sliced, just a good. Rarely have I been disappointed and the team has always managed to make it right with me (the customer). Service is amazing, the breads look beautiful. They deliver in a majority of the greater Phoenix area (which is quite impressive for such a small company). I'm always excited to check my e-mail for their latest and greatest offerings. I rarely buy bread anywhere else, because once you try this amazing real bread you just can't go back to store-bought. And supporting a local business is truly awesome as well (did you know they source most of their ingredients locally?). It's true, their bread doesn't last as long on the counter as commercial bread and it's because this is the real thing. I just walked out of Proof in a daze. I had the za'atar croissant with labna and the apple cinnamon pastry. Both were absolutely delicious. The service was incredible. I used to live in Ramallah many years ago and so I constantly miss the food so when I saw the za'atar pastry I dove for it. I savored every bite. Also the counter where I sat is across from a glass partition where you can see the bakers at work and it was nice to chat with them. I especially love their chocolate croissants. We have been a fan of proof bread from the very inception of the company, and we hope it continues to expand because we love it. I really wish we could do a monthly subscription to just get Brad dropped off to our place each week or each month. I hope they'll do something like that soon. I just want a loaf of bread, probably sourdough every two weeks and 4 to 8 croissants. Dropped off at my house. My life would be made whole. Their YouTube videos alone are amazing and 5 Star worthy, showing the process of making their bread and pastries, tours of their facilities, and overall just spreading a good message. Was in downtown Mesa picking up a lunch for my grandson and I and I wanted a dessert so while waiting for my order I pulled up my Yelp app and looked around and found Proof Bread that was less than 1/2 mile from where I was at. Got my order and off I went. It was a Friday afternoon and Proof was busy but had everything in stock, I didn't know what to get so went with a box of assorted goods. It had a raspberry lemon Danish, almond croissant, morning bun, dna chocolatine, salted rosemary twist and I threw in a pain au chocolat. Everything in that box was delish! The pain au chocolat remind me of the ones I would get when visiting Europe and the morning buns are my favorite, they are what happens if a cinnamon roll and a croissant have a baby, so delsih! I had tried proof bread at uptown farmers market and had been wanting to come to Mesa to check their store for a while. I was in town this weekend and decided to stop by. I was greeted by a really nice lady who encouraged me to try some samples including olive oil and cinnamon bread. Both were delicious. The owner John was given a bread making class on Saturday and it looked fantastic! I was told this was the second one ever given and to check their website for future classes. The class was $200 I was told. I left with a sourdough and a few other items. I think the place was super cool with the exposed brick and I definitely recommend checking them out or supporting them at the farmers market. read more

We ordered 3 items from Proof, an Olive Boule, Sourdough English muffins and a cranberry tart. For those expecting a strong sourdough taste, that is not in the cards. The boule was tasty but was not laced with green olives, perhaps I got sucked in to the instagram effect. The Cranberry tart was the highlight of the show and the layering was excellent, had a great red color but was not as tart as I hoped, full disclosure perhaps I am craving too much sourness of late. The English muffins are not English muffins in the classic sense, in fact closer to ciabatta rolls. A true English muffin should be made on a flat top and have a profuse amount of bubbles and crannies inside. Note we have made it ourself at home so we know the real deal.
