I'm not going to lie, I didn't have high hopes for a steak place in a food court type venue. But this place was amazing I even thought to myself, how old is this meat and how long has it been sitting here. But omg it was so fresh and tender It's conveniently located inside rodeo 39. They have plenty of free private parking. Plus you can explore tons of other places after you eat here We went up and asked the girl behind the counter for some recommendations. We went with the ribeye cut and then you get one butter / sauce and two sides. (42 dollars) We also ordered a butcher burger, fries and two drinks. The total came to around 60 dollars. Which to be honest the steak was just as good as any steakhouse. And worth the price alone. When our food was ready we got a text and went back up to the counter to get it. One of the workers helped carry the food out to our table. I like how I can pick the meat and see it in the case, the service was great, i like that I can see the people cooking it as well, I think the price for steak is extremely reasonable especially when it comes with two sides, it literally took about 10 minutes for our food which was great and it's a great location for food lovers. I'll definitely be back again
1. The burgers were delicious and made well! 2. The spot has fun casual vibes since it is located inside a public market! 3. The staff were friendly and informative about the wait time! It took less than 10 mins! 4. There are shared indoor and outdoor seatings in the market! 5. The shared parking lot can get crowded after noon on the weekends! Note: They will ask you for your phone number to text you when the order is ready! Therefore, you can just explore the market until pickup! Photo: 2x Garlic Smashburgers
On our way to the airport we stopped in this complex that had a plethora of eats and Bearded Tang Brewery. We decided on primal cuts. We ordered the smash burger fries as well as the Korean wings. The guy behind the counter was very spacey not really paying attention to his surroundings, but it was quick service so I wasn't really worried about it. The smash burger fries were simply but full of flavor. Both my wife and I could have had a couple orders of them. The wings on the other hand were a bit squishy and very very saucy. They had a decent flavor, but I tend to look for a good crunch and a thin flavorful layer of sauce. We were craving wings so they served their purpose. If we're ever in the area again we would love to try more things. But there is also so many more places in this little area!
PREMIUM PATTY. Craving the taste of umami burger but unfortunately the chain no longer exists. I sought primal cuts truffle butter burger and it satisfied the craving. The truffle burger was buttered up with truffle butter. Had a few mushrooms and raw onions that made the flavor pop. The patty was a decent size and not dry at all. If I had any impulse control this would be a complete meal, but I had to get the fries. The fries were drenched in truffle oil but not in a good way. The flavor was there but there was about a cup of oil sitting in the box of fries. I had to squeeze the oil out of each fry. I didn't know whether it was truffle butter or frying oil. It was a bowl of cereal. I didn't get a drink since their selection consisted of canned soda and a few premium bottled sodas. Something about canned drinks just doesn't taste the same. Despite the fries, overall it was worth the try for 24 dollars.
Staff is friendly and down to earth. Ordered the OG, but lettuce wrapped, no bun. You get charged extra for lettuce wrap....and it is NOT worth it! They used the inner leaves, so it's like thin strips of lettuce versus (in and out) other styles that literally WRAP your burger. I like that you can specify how your meat is cooked, but unfortunately they don't know how to cook the meat. It was warmer than blue, but def not medium rare. No seasoning on the meat. Probably won't be back for another $15 burger (no fries, no drink)
I'm impressed how good the butchers burger and shoe string fries were. Did no sun dried tomatoes and killed it without the bottom bun. Shoe string fries are in my opinion the best type of fries and primal cuts delivered. Customer service is pretty great. Forget in n out and come here you will not be disappointed.
Tried the garlic smash and regular burger. It was okay... would say in n out is better in every metric (not even factoring in price). I will say that the burger meat portion was solid. I would go somewhere else if eating at rodeo39
Credit Cards: They're accepted Restrooms: Restrooms found inside Rodeo 39 food hall. Visitation Rights: 1 time, but I can see myself coming here more often if i'm in the area. Location: Located inside the Rodeo 39 Food Hall next to the restrooms. Parking can be found in shared lot, but might take a while to find a spot depending on the time you go. Ambiance/Decor: Modern looking food stall with minimal seating. You can find available tables and chairs through out the food hall though. Entertainment: Sit at the bar and have a peak at the meat masters at work while they make your food. Service: Service was good. Food came out at a decent time. Food Of Choice: Shared the Butcher's Burger (comes with fries) which consisted of aged angus beef, swiss, garlic aioli, arugula, caramelized onion, and sun dried tomatoes on white bun. The butcher was very good. The meat patty was moist and tender and the fresh ingredients meshed well. Primal Cuts For Thought: Would love to come back to patronize the shop when I'm in the area.
This steak sandwich was yummy but felt like it was missing something, maybe some more meat or arugula/onions. The bread is pretty thick but it's not too dense. The aioli was yummy tho, and the steak was nicely medium rare. The truffle fries were good but the truffle flavor was very mild and missing parmesan cheese.
Located inside Rodeo 39, Primal Cuts is a must try! Came with a bunch of family and friends and they all raves about this place. My husband and I got the Ribeye Steak with truffle butter and got fries and mashed potatoes as the sides. For $30-something dollars, the quality is phenomenal! Honestly, it was better than some of the pricier ribeyes we've gotten at some restaurants. It was SO juicy and flavorful (the truffle butter is a must if you like truffle). We're from out of town, but if we're ever back in the area, we will definitely be back here!
Eh. It's ok. I was craving a burger and Primal Cuts is the only spot that sells burgers in Rodeo 39. I ordered the OG Burger which comes out to $15 with tax. At that price I was expecting an above average, decently sized burger. Instead, the burger was quite small (very thin patty -- see pic), and quite frankly, mostly bread! The patty itself was cooked well and the complimentary ingredients (pickles, onions, cheese) were solid, but there was nothing "wow" about it. I wish the serving was bigger and the patty thicker (or give two thin patties with cheese in middle). The bun was fine. For $15, you can get something better at Rodeo 39, where there are so many options. Honestly I would have been just as happy with In-n-Out across the street.
After several return visits, it's safe to say that I won't eat here again. The food is truly a joke. One of those meals that you force yourself to finish just because you paid a good amount for it. I've tried the ribeye and picanha cuts that have been overcooked, bland, and almost inedible. The steak looks great on their social media posts but when you account for rest time and it will continue to steam when packaged, no matter what temperature you request, it will come out well done. No part of the steak was medium rare and when you're paying $40+, that's not acceptable. The quality of steak they use is not great either. The ribeye is so thin, that it's almost impossible for them not to overcook it. Quality reminds me of what I used to get from Albertsons meat section. If you can't cook steak to the right doneness, I'd recommend using a thicker cut or just taking it off the menu. I ordered the Butcher Burger again this time and it was not good. I couldn't even finish it because it was dry, bland, and stale. Fries again, not special. The last time I ordered side of broccolini and asparagus which is an additional price to upgrade. Inedible. Basically served raw broccolini because could not even chew it and they didn't trim the stem that's woody. If you can't even cook simple vegetables correctly, I don't think you should be in business in my opinion. If you're thinking about trying this one out, I'd save your money and try another stall. I felt like I was being robbed paying $60+ for a meal that was not a good experience eating.
Ordered a garlic smash burger and made it a combo, adding fries and a can of soda. The best part of this place was that the associate was really sweet! However, the food itself was below par. I was supposed to be texted when my order was ready, but apparently their system wasn't properly working. When I walked back around toward this place, the person who took my order hand-delivered my bag to me. I'm not sure how long the order actually took to make, but I walked around the food hall, then returned to Primal Cuts about 15 min after placing my order. I was surprised to see that the cheese on the burger was not melted at all. I suppose that means my burger was not very hot when it was made (by the time I got my food, it was mildly warmer than room temp). The patty itself didn't look very smashed... it was comparable to a McDonald's beef patty in appearance. The bun didn't seem toasted, so it kinda felt like they barely microwaved a patty, then slathered a bun with the garlic sauce and put it all together with a piece of totally unmelted cheese on top before packaging the food. The portion of fries was generous, though. I think that was the most filling part of the meal. It was nice that they left the box open so it wouldn't get soggy. The ketchup was a bit lacking for me, though. I know they make their own ketchup, but it needed a more acidic punch for my tastes. Anywho, the total came to a little over $14 (with tip), which wasn't worth it at all.
I've been wanting to try Primal Cuts for awhile ever since I moved away. They have different kinds of meats such as picanha, ribeye, steak, and fillet mignon. The meats come with two sides. I got their popular picanha with a side of heirloom carrots and button mushrooms. I got my picanha medium rare and it turned out juicy and delicious. They seasoned it well. The heirloom carrots were a little still undercooked for my liking and the button mushrooms were really good. My complaint was that they gave me a pretty horrible plastic knife to cut my steak. It simply did not work and it took me forever to cut up my meat. So it was really difficult eating. My friends had all finished their food and I was still trying to cut. Pricing for cuts run from about $20. It's just a walk-up and order type of place. But Rodeo has plenty of places to sit in the area. My food took awhile to come out. My friends ordering from other places got their food first. The girl at the counter was also unfriendly. I do want to come back though and try their other cuts. But i'll probably bring it home to eat next time since their ultinsels are useless. read more
Located in one of OC's most popular food halls, Primal Cuts is a food stand that specializes in meat. They are most popular for their steaks, but also serve great quality burgers as well. When ordering, you can see their meats inside the fridge and see how many days it has aged. I've had great experiences with this before and wanted to try something new, so I got the 8oz medium rare filet mignon. Every steaks come with your choice of butter and two sides. I chose the truffle butter and carrots for my sides. Filet mignon (4/5): Definitely not as good as the rib eye or New York steak, but still made me satisfied. I loved how chewy it was and how the butter just melts in your mouth. I did not like how small the portion was. Carrot (2/5): It was hard and kind of made my mouth sore. This place is more expensive compared to the other food stands, but I recommend this place if you're on a protein diet or want meat and have some money. I definitely did not like the cost, but good quality steak is not cheap, but I would probably come here again if I feel like splurging read more
4.5/5: I think this is a decent place, though wait was a little long. We got the "sliders" and they were a solid size. My party and I didn't think it was anything special - just a good, solid burger. But, this is a great place if you are into thinner patties! read more

This has got to be the worst truffle burger I've ever had in my life. The cheese is a sliced block of cheese that wasn't even melted! The burger is dry. The sauce they include is also COLD. Why would you include sauce that's cold? The fries I got were also very stale and soggy as if it's been sitting there and was reheated. Very disappointed. From the pictures on yelp it looked delicious so decided to go with this place, but will get something else next time. Not worth the $20.50 (before taxes) for this burger. I would avoid this place and choose something else. read more

Primal cuts is located in the Rodeo 39 Marketplace at the very back left-hand corner, next to Kra Z Kai's BBQ and Shootz. I noticed that there was a little bit of a line, but I am very much of the mindset that where there's smoke, there's fire. So needless to say, I waited in line to see what the hype was about. After ordering, I was not given any sort of paging system that some of the other booths gave their customers. The employee instructed me to come back after 15 minutes, by which time I found that my food had already gone slightly cold. I ordered the 6oz. Picanha, cooked with garlic butter, with sides of heirloom carrots and mashed potatoes. Each component was delicious, but there were various aspects about my meal that I did not particularly enjoy. Although I specified for it to be cooked rare, it came out a little more "done" than I would have hoped -- more on the medium side. There was not much of a garlic flavor in the butter, which was sort of disappointing, considering the fact that I had had trouble deciding between the garlic butter and truffle butter earlier. Additionally, the cut of meat that I chose turned out to be quite sinewy, and I had to resort to tearing with my teeth when I couldn't cut it with my knife. Aside from my tiny complaints, I did enjoy my meal overall. But I'll probably order a different cut of meat and wait around until my food is done so it doesn't run cold. read more

Late post for my birthday earlier this month I ordered the New York, mash potatoes, broccolini, sautéed mushrooms garlic butter! OMG THIS MEAL WAS COOKED TO PERFECTION! I was so satisfied I went back to personal thank the cooks and staff this meal was spot on and highly recommend it. Thanks again for the great service look forward to another meal soon! read more
A little while back, I had an opportunity to check out this place for lunch during the Good Smile Fest event. I definitely enjoyed my first visit here (and their burgers pairs really with the Bearded Tang's Blue Raspberry Seltzer). What gives their burgers a nice bit of meaty flavor and tenderness is that they dry age their angus beef for a little bit. It does take them a little time to prepare your order (20 min or so), which gives it a great opportunity to peruse around Rodeo 39 as you wait. Decor - 4.5/5 - I really like the glass counter that beautifully displays some gorgeous, marbled cuts of beef that are dry aging. Otherwise, it's a simple countertop with some glass windows that allow you to sort of peer into the chefs cooking in the back kitchen. Food - 4.5/5 - Ordered the Butcher's Burger for $14.50. This burger comes with a dry aged angus beef patty, melted swiss, garlic aioli, arugula, and caramelized onions sandwiches between two toasted buns. The angus beef patty is grilled nicely, so it keeps its meaty flavors and juiciness. With it, the Swiss adds a wonderful bit of gooey cheese, the caramelized onions give it a touch of sweetness, and the garlic aioli comes in to add a savory layer on top (though I wish that garlic aioli had a little more prominence in flavor). The side of fries have a good crunch on them. I really like their house ketchup which was almost like a sweet, tangy tomato sauce. Really pleasant lunch overall! read more
I cannot get enough! Thank you JT and your team for providing the best customer service and top notch food. You are mesmerized by the meat case up front. Showcasing the prettiest cuts of steak you can ever find in a food hall. The menu is kept small. Which is key to providing the highest quality of food. Items I have Inhaled: 1. Rib eye, cooked medium rare plus, topped with micro greens and truffle butter. We chose the mashed potatoes and button mushrooms as our sides. THE HOUSE MADE STEAK SAUCE IS TO DIE FOR. Props to JT for that delish sauce to go with an already perfect steak. 2. The Truffle Burger. My goodness gracious, it was glorious. I wanted to cry. Not to mention the crispiest fries, ever! 3. 6oz picanha, medium rare plus, truffle butter. And the same ol sides ya girl got last time. Went with the smallest option this time since we stuffed our faces at four other establishments and we needed to support the homie. Still good! But I do prefer the ribeye. Please treat yourself to a steak dinner without the need for business casual attire. They offer online ordering for pick up and curb side. There is also ample space for outdoor dining. You will not be disappointed. read more

Located inside the Rodeo 39 food court, this eatery is all about the beef. The various cuts of steak are on display at their main counter and you can often see a butcher cutting them to size through the window. But they also serve burgers and that's what I came for at lunchtime. I ordered the O.G. Burger. Their menu states this consists of "Aged Angus beef, cheddar, caramelized onion, mustard, pickles and white bun." I was told by the pleasant woman at the counter it would take ten minutes and it was ready in less time than that. This was a phenomenal burger, as good a gourmet burger I've had anywhere. The thick beef patty was juicy and full of flavor. The fresh beefy taste was evident in every bite. The cheese and onions complemented it well as did the tangy pickle slices. The toasted bun was small but sturdy, holding up until my final bite. I appreciated that the bun on this burger didn't make it too "bready" and also appreciated the whole thing wasn't very messy as gourmet burgers often are. It came with fries. Plenty of fries. They were good. Standard and done perfectly. Not anything special but nothing to complain about either. I don't know about their steaks but I loved my burger and can confidently recommend it but be prepared to pay a gourmet burger price. read more
My boyfriend and I stumbled upon Primal Cuts when we were exploring Rodeo 39. We loved how you could pick your cut and they prepare it ON THE SPOT for you! Flavors were great, portions were perfect for the price, and we liked the wide selection of sides you could pick. We also got the butcher's burger. It was a good burger but nothing much to write home about. We want to come back again to try the other cuts! read more
Who doesn't love a good steak, and this place does it well. I have tried the New York, ribeye and the burger. My favorites are the ribeye and burger. The burger was juicy and the patty was thick and has the perfect amount of seasoning with caramelized onions. I also enjoy the bun that it comes with. For the steak I got it medium rare and have had it with the mash potatoes, mushrooms and broccoli, all are very good. I have also have the steak with garlic butter and truffle butter which is delicious with either butter sauce. And the nice thing is the truffle isn't too overpowering. Between the ribeye and New York, I felt like the New York was a little fatter but chewy which I didn't like too much and would much rather go for the ribeye which was easier to chew in my opinion. read more
My date and I decided to check out Rodeo 39 for the free drive-in movie night. Prior to the movie, we ended up getting food inside Rodeo 39. Our first stop was Primal Cuts for our entrée of the night. We stood there staring at the display case thinking we could pick out our steaks. Apparently, the steaks were only displayed for dry aging. I kind of wish the girl behind the counter let us know that or maybe if they had a sign stating that, customers wouldn't be looking at the case longingly for no reason. Despite that, we settled on splitting the NY strip, medium rare, with garlic butter. The two sides were broccolini and carrots. The steaks are sous vide first and then finished in a pan with butter and then torched with a flame. The end result is actually pretty good. The steak is pre-sliced in the to-go container and flanked by the sides. We walked away to buy drinks at nearby Bestea and walked back to collect our food when it was ready. We lucked out that we didn't have a line when we ordered but found a long line quickly formed as the dinner rush came in. The staff wore masks and there was hand sanitizer readily available for customers. The only other thing we didn't enjoy was the flimsy cutlery they provided which isn't the best thing to cut through a nice piece of steak. Thankfully, it was precut but the slices were still too big to fit in my mouth. The struggle was real! The steak and sides were really good. I'd come back to check out their burgers and other cuts in the future. read more

I am obsessed with truffle and knew I had to try their Truffle Butter Burger the second I came across it, especially with smoked gouda being my favorite cheese. It was over $20 and I thought it would be worth the price, but I was so heartbroken once I took the first bite. There was no truffle aroma in the slightest bit. Aside from the lack of truffle, the meat itself had no taste either. The fries tasted better than the burger. read more

[DURING COVID REVIEW] Delicious burgers! My GF and I came to Rodeo39 on a weekday during lunchtime so there weren't many people there. We decided on trying an entree at a few different spots there and Primal Cuts was one of them. We decided on the Butcher's Burger with friends and we definitely made the right choice. The highlight of the show was definitely the tender and delicious patty. But when you add on the amazing garlic aioli, swiss, and more you get a beautiful combination that I highly recommend. The fries were decent but the ketchup they had was delicious. It wasn't too sweet and had more of a jam-like consistency but it went well with the fries. Overall it was a great experience and great food. The price seemed fair and I definitely want to return to try their steaks that I've seen others rave about. read more

After seeing a few pictures on Instagram, I knew I had to visit! Although it may seem weird that there would be a steakhouse in the middle of a food court, but you will not regret giving them a try! They have a lot of side choices and all their cuts are on display so that you can see how fresh their meat is. We ended up asking for recommendations and went with the most popular cut of the day: filet mignon. We also chose their mashed potatoes and grilled mushrooms as our two sides. Here are our thought: Filet mignon ($24.69): Ordered to be medium-rare and it was exactly that. It was extremely soft and perfectly seasoned. Mashed potatoes: They give you a large portion and it was very creamy. I am more of a chunky mashed potato gal, but these did no disappoint. Also no gravy needed! This was a mix of buttery goodness. Grilled mushrooms: These could have used a but more char on them but nevertheless, also great. They were not too salty and paired perfectly with the meal. Although there are a lot of other options in Rodeo 39, I would not skip out on this gem. I will definitely be returning! Even in a togo container, the presentation still looks amazing! Shoutout to awesome customer service! read more
My first time there I got the 6oz New York steak. The steak was good, but too salty. My favorite was the mushrooms! They were flavorful and juicy! Everything together was delicious! The portions are pretty good too. Only down side was a longer wait around 25 min for this. My second time there they didn't have the 6oz New York steak so I tried the 6oz Picanha steak which I didn't enjoy as much as the New York steak cause it was way too fatty for me. The steak was also way too salty again. The mushroom and mashed potatoes were great! If I were to go back I would definitely ask for less salt! read more

Ordered thur Grub-hub at 5:45 pm on a Saturday night. I ordered a 8 oz. medium Filet Mignon Cut, Mash potatoes, Broccolini, & Garlic butter. My order came at 6:45 pm. Came in a bio-degradable container. Mashed potato's were delicious. The Broccolini were undercooked. My Filet Mignon was medium rare. I ordered a medium 8 oz. filet mignon. I was disappointed because it also had 1/2 fat instead of meat. The only positive I had was the mashed potato's which were very creamy. Hopefully they get it right next time for $26.69. read more

Primal Cuts has the meats in Stanton Located inside @rodeo39pm , Primal Cuts is cooking up solid steaks and burgers that are both super flavorful and filling! The Tipsy Plate comes with 6oz steak cubes that's served with mashed potatoes, while the OG Burger comes with black angus beef and the most perfect bun! There wasn't a line when I got there so I was helped right away. The staff was super friendly and helped me with all the questions I had. Definitely worth a try! read more

This place looks amazing but the food wasn't quite as great as it looked. I got the Butchers Burger. The meat was spot on but the burger as a whe just wasn't very good. Probably the additional things in the sandwich for the Butchers was just too much. I ate half the burger then pulled out the patty and just ate that by itself for the second half of the burger. The fries needed salt at a minimum but the ketchup was spiced and good. Overall wasn't that impressed. Next time.maybe I'll try the OG burger which has less stuff in it and see his that goes. read more

I got the prime rib with mushrooms and fries and it reminds me of steak frites! Really delicious flavor and mushrooms were left whole which had a nice texture to them! They forgot my ketchup but I sent my fiancé to ask for it and luckily they didn't charge him extra to get one! Looking forward to trying their burger next time I'm there. read more

Food used to be way tastier when we ate here 4-5 times prior to today. I will probably try again once more and if it's like today I will have to reevaluate my star review. Service is okay and basically self serve. We took to go and ate in one of the tables in the middle of the food court and ambience is very casual. We might try the burgers next! read more

It was so good to say the least but the Picanha Cut was just so chewy from the fat. Had I known, I would've chose a different cut but the price was already so much for its portion with what I ordered I don't know if I would return just for steak lol. I was just craving some while walking past though but maybe I'll give the burgers a try next time. The workers were so nice though! read more

My friend was raving out this specific place, so I decided to meet her at the shopping center. She said they had the best burgers ever. Honestly, it was sub par. The meat was decent, and cooked well. But for a 19 dollar burger, it wasn't what I thought it would be. It definitely isn't the best burger I've had. I ordered the truffle burger. For 19 dollars plus tax, you get a burger and fries. They had quite of few items on the menu Id like to try. Not sure when id come back. But being that my friend lives next to here, maybe soon. I'd say overrated. But people might think otherwise. The flavor was interesting, and the service was pretty quick. read more
The reason why I wanted to visit Primal Cuts at Rodeo 39 was because I've heard so many good reviews and good things. The meat at the counter looks fresh and impressive. However, the dish was underwhelming. :( I order a 12oz rib eye (medium rare) plus broccoli and mashed potato for my two sides. The meat was cooked just right and is medium rare, but the texture was quite disappointing. There's way too much gristle/connective tissues(?) in the steak so it was very hard to break it into small pieces to eat. It was almost "tiring" to try to finish the meal. Not sure if the broccolini was overcooked or the veggies are too old/no longer fresh it was very chewy. The mashed potato is the best part among the three items - very buttery and soft. read more

This place is quite pricy for the food to be honest. However, I do think that the meat is something that is quite amazing. The seasoning for my meal was fantastic, however it was slightly overcooked than what I wanted it. The carrots were seasoned well, but has a bit too much crunch for my liking as well as not having enough. The mash potatoes had an amazing mouth feel and texture, but lacked seasoning to really make it shine. Overall, the meal was great, but was held back by small details, and price. Would still go though, burger looked fire. read more

I've walked by this place a few times, as it's tucked away. However, I finally decided to stop and run their Butcher Burger. It was great. The lady at the register recommended it and it was pretty darn good. With the slew of burger places, I have to say it has a different taste...in a good way. I would definitely try it again. read more
